1 pound pork sausage
1 medium onion, diced
2 large carrots, diced
2 celery stalks, diced
4 cloves garlic, minced
1/4 cup flour
1 1/2 tsp Italian seasoning
1 tsp salt
1/2 tsp pepper
5 cups chicken broth
5 oz fresh spinach, chopped
1 14 oz pkg fresh cheese tortellini
2 cups half & half cream

Steps:

  • Brown sausage in a large soup pot. Drain off most of the fat. Add onion, carrots, and celery and saute for about 5 minutes.
  • Stir in the garlic and flour. Cook and stir for 1 minute.
  • Add Italian seasoning, salt, pepper, and broth. Bring to a boil, reduce heat and simmer for 5-6 minutes.
  • Add the spinach, tortellini, and half & half. Simmer for about 5 minutes or till tortellini is tender. Serve hot.

1 -2 lb Italian sausage
1 onion
3 stalks celery
2 large carrots
4 minced garlic cloves
1/4 cup flour
6 cups chicken stock
10 ounces cheese tortellini
10 ounces frozen spinach
2 cups milk or 2 cups heavy cream

Steps:

  • 1. Brown sausage on medium-high heat. Drain and set aside.
  • 2. Saute diced vegetables: onions, carrots, celery for 4-5 minutes. Add minced garlic and saute for an additional 1-2 minutes.
  • 3. Stir in flour to coat and cook 1 additional minute.
  • 4. Slowly add in stock and then get to a simmer.
  • 5. Once simmering, reduce heat to medium-low and simmer for 5 minutes.
  • 6. Stir in sausage, tortellini, spinach and milk. Simmer 4-5 minutes or until tortellini is cooked.
  • 7. Season to taste and serve.

1 pound sweet Italian sausage, casings removed
1 cup chopped onion
2 cloves garlic, minced
5 cups beef broth
½ cup water
½ cup red wine
4 large tomatoes - peeled, seeded and chopped
1 cup thinly sliced carrots
½ tablespoon packed fresh basil leaves
½ teaspoon dried oregano
1 (8 ounce) can tomato sauce
1 ½ cups sliced zucchini
8 ounces fresh tortellini pasta
3 tablespoons chopped fresh parsley

Steps:

  • In a 5 quart Dutch oven, brown sausage. Remove sausage and drain, reserving 1 tablespoon of the drippings.
  • Saute onions and garlic in drippings. Stir in beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes.
  • Skim fat from the soup. Stir in zucchini and parsley. Simmer covered for 30 minutes. Add tortellini during the last 10 minutes. Sprinkle with Parmesan cheese on top of each serving.

1 tablespoon olive oil
1 lb Italian sausage, casing removed
3 garlic cloves, minced
1 medium sweet onion, diced
2 teaspoons italian seasoning
kosher salt, to taste
fresh ground black pepper, to taste
2 tablespoons all-purpose flour
4 cups chicken stock
8 ounces tomato sauce
9 ounces cheese tortellini
1/2 bunch kale
1/3 cup heavy cream
3 tablespoons chopped fresh basil

Steps:

  • Heat olive oil in a large stockpot or Dutch oven over medium heat.
  • Add Italian sausage and cook until browned, about 3 to 5 minutes, making sure to crumble the sausage as it cooks. Drain excess fat.
  • Stir in garlic, onion, and Italian seasoning. Cook , stirring frequently until onions have become translucent, about 2 to 3 minutes. Season with salt and pepper to taste.
  • Whisk in flour until lightly browned, about 1 minute.
  • Gradually whisk in chicken stock and tomato sauce. Bring to a boil and reduce heat and simmer, stirring occasionally, until reduced and slightly thickened (about 10 minutes).
  • Stir in tortellini. Cover and cook until tender, about 5 to 7 minutes.
  • Stir in kale until wilted, about 1 to 2 minutes. Stir in heavy cream and basil until heated through, about 1 minute. Season with salt and pepper to taste.
