ONE POT CREAMY SAUSAGE PASTA



One Pot Creamy Sausage Pasta image

An irresistible and super simple one-pot pasta dish filled with spicy sausage and a silky tomato cream sauce. It's a perfect family-friendly meal for busy weeknights!

2 tbsp olive oil
1 red pepper, chopped (about 1 ½ cups)
1 medium onion, chopped (about 1 cup)
4 cloves garlic, minced
Kosher salt and freshly ground black pepper
½ tsp ground fennel or 1 tsp fennel seeds (optional - see note below)
¼ tsp red pepper flakes
1 lb ground hot or sweet sausage (or a mix of both)
¼ cup dry white wine
16 oz marinara sauce
6 tbsp heavy cream
8 oz short pasta shapes, like penne
4 cups water
¼ cup grated Parmesan cheese
¼ cup chopped fresh basil

Steps:

  • Heat the oil in a large skillet over medium-high heat and saute the peppers and onions until they start to soften, about 8 minutes. Stir in the garlic, fennel, red pepper flakes, and a good pinch of salt and a few cranks of black pepper. Crumble the sausage into the skillet and cook with the peppers and onions until browned. Pour the wine into the skillet and scrape up the bits on the bottom of the pan. Pour the sauce and 3 cups of water into the skillet and then stir the pasta into the mixture until well-combined.
  • Bring the liquid to a boil, reduce the heat to medium-low, and cover. Allow the liquid to simmer, stirring occasionally at first and more frequently towards the end to prevent the pasta from sticking, for about 15 to 17 minutes. Every 5 minutes or so, stir in a little of the remaining cup of water. If the liquid starts boiling over, reduce the heat to low.
  • When the pasta is cooked through, stir in the cream, Parmesan cheese, and most of the basil (reserving a little for garnish). Allow the cream to heat through for 2 minutes. Season with salt and pepper to taste. Allow the dish to cool for 5 minutes, sprinkle the remaining basil over the top, and serve.

Steps:

  • In a large skillet over medium-high heat, brown sausage with garlic and red pepper flakes. Drain and return to skillet.
  • Turn heat down to medium.

  • Add Alfredo and stir to combine.

1 teaspoon salt (more to taste)
1 teaspoon olive oil
1 pound ground Italian sausage (spicy or mild, your preference)
2 tablespoons butter
3 teaspoons minced garlic
½-1 cup sliced mushrooms (see note)
1 cup reduced sodium chicken broth
1 cup heavy cream
cracked black pepper (to taste)
¼ cup grated parmesan cheese (optional)
fresh parsley or thyme for garnish (optional)

Steps:

  • In a deep skillet, or pot, bring 4 cups water to a boil. Stir in penne noodles along with 1 teaspoon salt. Boil 6-9 minutes until fork-tender. Drain, toss with 1 teaspoon oil, and set aside.
  • In the same skillet you used for the pasta (or a new one if you used a pot) cook sausage over medium-high heat, breaking up with a spoon or spatula as it cooks, for 6-8 minutes or until completely browned. Use a slotted spoon to transfer to a bowl and cover to keep warm.
  • Reduce heat to medium and add butter to the pan. Once melted, stir in garlic 1-2 minutes til fragrant. Add mushrooms and saute 3-4 minutes until very tender.
  • Stir in chicken broth and heavy cream and simmer over medium-low heat until reduced (about 5-10 minutes).
  • Stir in cooked sausage and noodles. Season with salt and pepper to taste. Top with parmesan and parsley or thyme if desired and serve.

4 cloves garlic, thinly sliced
Pinch of crushed red pepper flakes
One 28-ounce can whole plum tomatoes, crushed by hand

Steps:

  • Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
  • Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the oregano and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard the oregano and stir in the ricotta. Season with salt and pepper.
  • Meanwhile, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until browned, about 5 minutes. Transfer the sausage to a large bowl using a slotted spoon. Add the escarole and a pinch of salt to the sausage drippings in the skillet and cook, stirring occasionally and reducing the heat slightly if necessary, until wilted, about 4 minutes. Transfer the escarole to the bowl with the sausage.
  • Cook the farfalle in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the mixing bowl.

Steps:

  • Cook pasta: In a large pot of boiling salted water, cook pasta according to al dente package instructions. Drain well and set aside.
  • While pasta cooks, sauté vegetables: In a large, deep skillet heat 1 tablespoon of oil over medium heat. When oil shimmers, add the onion and bell pepper. Cook, stirring occasionally until vegetables are almost softened, about 3-4 minutes.
  • Add sausage and season: Increase heat to medium-high. Add the sausage to the pan along with the Italian seasoning. Season with ½ teaspoon salt and ¼ teaspoon pepper. 1/2 lb pork sausage link, mild (I remove the casings and crumble)
2 tablespoons olive oil
1 teaspoon garlic, chopped
2/3 cup canned tomato sauce
1/2 cup heavy cream
salt and pepper
2 tablespoons parsley, chopped
1 lb pasta
parmesan cheese, freshly grated

Steps:

  • Take sausage out of casings and crumble.
  • Put olive oil and chopped garlic in a skillet and turn the heat to medium.
  • When the garlic becomes pale gold, add the sausage.
  • Turn from time to time, until nicely browned all over, about 15 minutes.
  • Add the tomato and cook, uncovered, stirring occasionally, adjusting the heat if necessary so it will cook at a gentle simmer.
  • After about 20 minutes, when the fat separates from the other juices and floats free, add the cream and turn up the heat.
  • Cook for 1 to 2 minutes, stirring frequently, until the cream is reduced.
  • Add salt and a liberal grinding of pepper.
  • Turn off the heat and stir in the chopped parsley.
  • Cook pasta in pot of boiling salted water.

  • Heat the olive oil in a large, deep skillet over medium heat. When the oil is hot, add the sausage and cook until it starts to brown, about 5 minutes. Add the onions and cook until softened and translucent and the sausage is well browned, another 5 to 7 minutes. Add the oregano, fennel seeds, red pepper flakes, garlic and some salt and black pepper and stir again.

2 large peppers, red and yellow, seeds removed, cut into 4cm/1½in chunks
2 medium courgettes, trimmed, halved lengthways and thickly sliced
1 tbsp olive oil
6 sausages (around 400g/14oz), each cut into 3 pieces
200g/7oz penne
300ml/10fl oz single cream
50g/1¾ oz Parmesan, finely grated, or 75g/2½oz mature Cheddar cheese

  • Preheat the oven to 220C/200C Fan/Gas 7.
  • Put the vegetables in a large roasting tin (roughly 30x25cm/12x10in), season with salt and freshly ground black pepper, toss with the oil and roast for 10 minutes. Add the sausage pieces and toss. Roast for 20 minutes.
  • Half fill a large saucepan with water and bring to the boil. Add the pasta and cook for 10-12 minutes, or according to the pack instructions, until tender, stirring occasionally. Drain the cooked pasta in a colander.
