PASTA WITH HAM AND PEAS
Great use for leftover ham! Quick and easy, ham and peas with pasta, cream, and Parmesan.

Steps:
- Cook the pasta: Heat 4 quarts of water and 2 Tbsp salt in a large pot for the pasta. Once the water starts to boil, add the pasta and cook at a rolling boil, uncovered, until al dente, cooked through, but still a little firm to the bite (the low end of the cooking times given on the package). Drain, reserving 1 cup of the pasta cooking water.
- Heat butter, add garlic, add ham and peas: While you are cooking the pasta, heat the butter in a medium skillet on medium heat until melted. Add the minced garlic and cook for 1 to 2 minutes. Stir in the ham and the frozen peas.
- Add pasta water, cream, Parm, zest, salt, pepper to make sauce: Stir in 1 cup of the pasta cooking water which will help thaw the peas. Stir in 1/2 cup of cream, Parmesan cheese, salt, pepper, and lemon zest.

Steps:
- Put some salted water to boil and cook the pasta according to the packet instruction.
- Slice the onion and brown in a saucepan with olive oil and hot pepper. Then add chopped tomato and stir fry on a medium heat for a couple of minutes. Add sliced ham and mix. Pour the drained peas, cook for one minute and turn off the heat. Add the cream and the parmesan cheese.
- When the pasta is cooked, before draining, keep a cup of cooking water.
- Add the pasta to the pan, stirring over a medium heat until everything is tossing well (helping with some cooking water in case of need).

FOUR-CHEESE PASTA WITH PEAS AND HAM

- Bring a large pot of salted water to a boil. Add the pasta and cook until very al dente, about 8 minutes, adding the peas in the last 2 minutes of cooking.
- Meanwhile, whisk the eggs, egg white, evaporated milk and 1/2 teaspoon salt in a bowl.
- Drain the pasta and peas; wipe the pot dry and return the pasta and peas to the pot. Add the butter and stir to coat. Add the cheddar, mozzarella, fontina and the egg mixture. Place the pot over medium-low heat and cook, stirring constantly, until thickened, 8 to 10 minutes, adding the ham halfway through cooking (don't let the mixture boil or the eggs will scramble). Remove the pot from the heat and stir in the parmesan.
PASTA WITH HAM, PEAS AND CREAM
When my children were younger, this was always one of their favourite teas and is now one of their favourite suppers. It serves 2 or 3 children - double quantities for teenagers and above. For US cup measures, use the toggle at the top of the ingredients list.

- Cook the pasta according to packet instructions in plenty of salted boiling water, and then after 5 minutes add the peas to the pasta water. When the pasta is cooked, drain with the peas. Put the dry pan back on the heat with the cream, ham and Parmesan and warm it through. Add the pasta and peas back to the pan, tossing everything together well.
PASTA WITH HAM, PEAS, AND CREAM
A pasta dish kids love and one that became traditional with mine whenever we left them with a sitter for the evening. It's best if the ham is prosciutto, the cream thick and fresh, and the peas just shelled, but it's pretty good with supermarket ham and cream and frozen peas, and I've made it that way plenty of times. For variety, add about a cup of sliced button mushrooms to the ham mixture.

- Bring both a large and a small pot of water to a boil; salt them both. In the small pot, cook the peas until tender, 3 or 4 minutes. Drain and set aside. Put the butter in a medium skillet over medium heat; when it melts, add the ham and cook for about a minute. Stir in the peas, the cream, a pinch of salt, and a fair amount of black pepper. Turn the heat to low; keep warm, stirring occasionally, while you cook the pasta.
- Cook the pasta until tender but not mushy; drain, reserving about a cup of the cooking liquid. Toss the pasta with the cream mixture; if it seems too thick, add a little of the reserved cooking water. Stir in the Parmesan, taste and adjust the seasoning, and serve.
ORECCHIETTE PASTA WITH PEAS, HAM, AND CREAM

- 1. Cook pasta according to package directions.
- 2. Meanwhile, warm 1 tablespoon of the butter in a medium saucepan over medium-low heat. When the butter starts to bubble, add onion and cook for 3 to 4 minutes, until translucent, stirring often.
- 3. Add the peas and water to the pan and cook 3 minutes, stirring. Stir in the ham and cook 2 minutes. Add the cream; bring to a low simmer and cook 5 minutes.
- 4. Drain pasta; place in large serving bowl. Stir remaining 2 tablespoons butter into the cream mixture over low heat until melted. Stir in the cheese. Pour sauce over pasta and toss to coat. Season with salt and pepper to taste.
LIGHT AND CREAMY PASTA WITH HAM, PEAS, AND MUSHROOM
I ate a dish at The Olive Garden Restaurant several years ago that I loved. They have since removed it from their menu, so this is my "light" re-creation of it!

- Put 3 tbsp. of light butter in a large saute pan over medium-high heat. After a minute, put in minced garlic cloves
- Add 1 cup of white wine then add all of the mushrooms and saute for 3-4 minutes
- Start to boil the water for the pasta. Add cubed ham and peas to the saute pan then add the remaining 1 cup of white wine and saute for 3-4 minutes
- Put your pasta in the boiling water. To the saute pan, add 3/4 pint of half & half, then lower the temperature to low-medium heat (so that it doesn't bubble)
- After 2-3 minutes, add corn starch one tbsp. at a time and stir-the sauce will slowly thicken over 3 to 4 minutes
- Salt and pepper to taste, serve over the pasta, sprinkle with parmesan cheese, enjoy!
