CREAMY TAPIOCA PUDDING
This is in response to a post on the boards. It is our favorite Tapioca Pudding. It is time consuming, so DH doesn't get it very often...and when he does, it doesn't last long at all. In fact, if it's been a really long time, he'll eat it himself in one sitting...thank goodness the Chef has the opportunity to "taste test"! ;-)) Prep time does not include soaking pearls overnight.

Steps:
- In a bowl, soak tapioca in 2 cups of room temperature water overnight.
- Drain water.
- In double boiler, heat milk just until no longer cold.
- Add salt and tapioca.
- Continue heating until small bubbles appear at sides of pan.
- Cover, turn heat to very low and cook for one hour.
- Make sure that milk mixture does not simmer or boil.
- Separate egg whites from yolks.
- Beat egg yolks and sugar toether until light yellow in color.
- Add a little of the hot mixture to the egg yolks and blend thoroughly.
- Then add the egg yolk mixture to the hot milk mixture, stirring constantly.
- Place the double boiler over medium heat and cook until tapioca mixture is very thick, about 15 minutes.
- Beat egg whites until stiff.
- Slowly fold the hot tapioca mixture into the egg whites.
- Stir in vanilla.
- Serve warm or chilled.
CLASSIC TAPIOCA PUDDING
A classic tapioca pudding recipe that requires a lot of attention, but it's worth it. Tapioca pudding is a great comfort food and can be served warm or cold.

- Stir together the milk, tapioca, sugar, and salt in a medium saucepan. Bring the mixture to a boil over medium heat, stirring constantly. Reduce heat to low; cook and stir 5 minutes longer.
- Whisk 1 cup of the hot milk mixture into the beaten eggs, 2 tablespoons at a time until incorporated. Stir the egg mixture back into the tapioca until well mixed. Bring the pudding to a gentle simmer over medium-low heat; cook and stir 2 minutes longer until the pudding becomes thick enough to evenly coat the back of a metal spoon. Remove from the heat and stir in the vanilla. The pudding may be served hot or poured into serving dishes and refrigerated several hours until cold.

I have always loved tapioca pudding and coconut, so this dish is perfect for me! One time, for a 'Southeast Asian Cuisine Night,' I served this as dessert alongside pho, spring rolls, and steamed dumplings. For a Southeast Asian touch, top the pudding with chopped mango or chopped peanuts.

- Bring the tapioca, coconut milk, and salt to a boil in a saucepan over medium-high heat, stirring constantly. Reduce heat to medium-low, and simmer for 5 minutes. Stir in the sugar until dissolved.
- Beat the egg in a bowl until smooth. Whisk in about 1/2 cup of the hot tapioca mixture, 1 tablespoon at a time, then scrape the egg mixture into the simmering pudding, and stir. Simmer gently until thickened, 3 to 5 minutes , then remove from the heat and allow to cool for 10 minutes before stirring in the vanilla extract. Serve either warm or chilled.

TAPIOCA PUDDING
Steps:
- Pour 3/4 cup of the milk into a medium-sized, thick-bottomed pot. Add the tapioca and soak for 60 minutes. Whisk in the egg yolks, salt, sugar, and the remaining milk. Scrape the vanilla bean along its length with a knife and add that bean "paste" along with the bean itself to the pot (if you are using vanilla extract in place of the vanilla bean stir it in at the very end, after the pudding is completely cooked).
- Over medium heat slowly bring the mixture just barely to a boil, stirring all along - this should take about 15 minutes. Reduce the heat and let the mixture fall to a simmer - you keep it here until the tapioca is fully cooked, another 20 minutes or so. Keep in mind this time can be significantly longer (or shorter). The tapioca will tell you when it is ready if you watch carefully. The tapioca beads will swell up and become almost entirely translucent. The custardy part of pudding will thicken dramatically as well - keep tasting and assessing at this stage. It is even more critical to keep stirring at this point avoid dreaded scorching.
- Remove from heat and let cool a bit. This tapioca tastes its best when served warm, but is still delicious cold as well.

- Add pearl tapioca to a medium saucepan. Add almond milk. Let soak, off burner, for 30 minutes.
- Add coconut milk, 2 tablespoons maple syrup or honey, salt, and vanilla if using paste (if using extract, add after cooking).
- Place pan over medium heat and bring to a boil. Reduce heat to a simmer and cook, stirring occasionally, until thickened. Stir in vanilla extract if using. Taste and add additional honey if you desire a sweeter tapioca.
- Pour into heat-proof individual containers. Transfer to refrigerator and chill for at least 1 hour.

- Add milk, cream, sugar and salt to a saucepan over medium heat. Bring to a simmer, then stir in tapioca and reduce heat to low. Cook, stirring often, until mixture has slightly thickened, and the tapioca pearls have plumped and softened, about 45 minutes.
- Add the eggs to a bowl and whisk to combine.
- Add a spoonful of hot tapioca mixture to the beaten eggs, stirring well as you pour it in. Repeat with another few spoonfuls of hot tapioca, stirring after each. (This helps temper the eggs and bring them to a warm temperature without "scrambling" them.)
- Add tempered egg mixture to the saucepan with tapioca and stir well to combine. Cook for 2-5 more minutes, just until thickened (keep in mind it will continue to thicken as it cools). Remove from heat and stir in vanilla.
- Transfer to a serving bowl and place a piece of plastic wrap directly on the surface of the pudding (to keep it from forming a rubbery skin on the surface). Allow it to cool before serving. Serve either warm or chilled.

I have been making this back of the box recipe for many years. My secret is to use evaporated milk. I love the flavor and it makes the pudding super creamy!

I got this recipe off the back of a Minute Tapioca Box but changed it up a little to suit the taste of my step dad. (who loves tapioca and cinnamon and sugar)

- 1. In a medium sized bowl, beat egg white on high until it becomes foamy.
- 2. Slowly add in 3 of your tablespoons of sugar and continue to beat until it forms soft peaks
- 3. In a saucepan off of the stove mix tapioca, your other 3 tablespoons of sugar, the milk and the egg yolk. Let this stand for 5 minutes.
- 4. Now cook this over medium heat until it comes to a full boil and does not stop bubbling when stirred. (stir constantly)
- 5. Take off of heat and quickly stir the egg white mixture into this. Stir until blended well.
- 6. Now add a teaspoon of cinnamon and sugar and the vanilla and stir.
- 7. Allow pudding to cool for at least 20 minutes.
- 8. You can serve this warm or chilled in frig. Dad likes his topped off with more cinnamon and sugar and a few dollops of cool whip

- 1) Check the cooking instructions on the bag of tapioca that you are using: some have to be soaked (overnight) first, other types of tapioca can be boiled right away.
- 2) Pour the milk in a large saucepan and add the caster sugar and a pinch of salt. Slice the vanilla bean in half and remove the black seeds inside with the tip of a sharp knife. Add both the vanilla seeds and the vanilla bean to the milk as well.
- 3) Bring the milk to a good boil over high heat and then add the tapioca pearls. Turn the heat lower to medium-low and bring the milk and tapioca to a light simmer. Don’t cover the pan. Let the tapioca thicken until cooked through. Mine took about 30 minutes to become tender. Taste the tapioca regularly to check on the tenderness.
- 4) Once the tapioca is tender, take the pan off the heat and let it cool down for 10 minutes. Remove the cooked vanilla bean. Then add the egg yolks to the tapioca milk and stir vigorously to keep the yolks from curdling.

- Combine cornstarch, sugar, cocoa powder, kosher salt, and instant coffee granules (if using) in a dry, heavy-bottomed 2-quart saucepan. Try to smash any clumps of cornstarch or cocoa powder in the pan to prevent lumps in the final product.
- Drizzle about 1/2 cup of the milk into the pan while whisking. Whisk until you have a smooth thick mixture. Continue slowly adding the milk to the pan, whisking constantly, until all the milk has been incorporated and the mixture is smooth. Turn the heat to medium and bring to a boil, whisking constantly to prevent scorching or clumping. Boil for 2 minutes, still whisking constantly. Remove the pan from the heat and add the chopped chocolate and extracts. Whisk slowly but constantly until the chocolate has melted and fully incorporated into the hot pudding. You will be able to tell it done when the colour darkens and it becomes glossier looking. Pour immediately into dessert cups or jelly jars. You can serve the pudding hot, as is, or lay a piece of plastic directly on the surface of the pudding and transfer the cups carefully to the refrigerator (they will be hot!). Chill for at least 2 hours.
