Creamy, tangy with a touch of sweet. A true crowd pleaser, use for leafy greens and roasted vegetables. It goes fantastic with my Roasted Sweet Potato Salad!

1/4 cup Dijon mustard
1/4 cup honey
1/4 cup cider vinegar
1/4 cup vegetable or olive oil
1 tsp salt
Black pepper
1 1/2 tbsp Dijon mustard
1 1/2 tbsp honey
1 1/2 tbsp cider vinegar
1 1/2 tbsp vegetable or olive oil
1/4 tsp salt
Black pepper

Steps:

  • Place ingredients in a jar and shake well until you can't see any honey on the base of the jar. Adjust sweet (honey), sour (vinegar) and salt to taste.
  • Keep for 3 weeks in the fridge in an airtight jar. (As long as the shelf life of your ingredients is greater than 3 weeks).
  • Single side salad: Drizzle over 4 big handfuls of leafy greens and other salad of choice.

This lightened-up homemade honey mustard dressing is easy to make, calls for real ingredients, and lasts up to three weeks in the fridge. Use for salads and as a dipping sauce.

1/4 cup (65 grams) Dijon mustard
3 to 4 tablespoons (65 to 85 grams) honey, to taste
3 to 4 tablespoons (45 to 60 ml) apple cider vinegar
1/4 cup (60 ml) extra virgin olive oil
1 tablespoon fresh lemon juice, optional
1/4 to 1/2 teaspoon fine sea salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Combine the mustard, honey, apple cider vinegar, lemon juice, 1/4 teaspoon salt, and the black pepper and whisk until well blended and creamy. Whisk in the oil, and then taste the dressing. Adjust with additional salt, vinegar, or honey. I enjoy my dressing to taste more tart, so I typically add an extra tablespoon of vinegar.
  • Alternatively, add all ingredients to a medium mason jar, secure the lid, and shake until blended.
  • Keep tightly covered in the refrigerator for up to three weeks.

I grow this wonderful old fashioned herb in my herb garden, it's one of my favourites - I love it's warm celery-lemon flavour. Lovage was used extensively during the Middle ages - right up to Victorian times - then it somehow fell out of fashion, which is such a shame as it is such a versatile and interesting herb. This is a wonderful creamy salad dressing, which perks up any mundane leaves - I like to serve it with Mache or Lamb's Lettuce and Tomatoes for a simple and yet elegant starter. It also works well with cooked spring vegetables such as peas, baby carrots, new potatoes and young broad beans.

3 tablespoons yogurt
1 teaspoon lemon juice
1 teaspoon Dijon mustard

  • Check seasoning and adjust to taste.
  • Serve with mixed salad leaves and tomatoes.

1/4 cup vinegar
1 cup heavy cream

  • Combine the mustard, salt and pepper, and vinegar. Whisk in the cream. Gently stir in the olive oil. Stir in the chervil. Unlike standard vinaigrette, creamy vinaigrette is relatively stable and will keep in the refrigerator for up to 5 days or so.

The dressing is too strong to work with baby salad greens or mesclun. It's also great with cooked vegetables like beets or broccoli and with grain salads.
