After a mad search on the net for a recipe for this sauce I had to create my own. This can be reheated in the microwave without the usual cream sauce defects. I just love the light green color and how well it displays over tri color or regular pasta, salmon and grilled chicken. I have been putting this on everything.

2 cups fresh basil leaves
4 cloves garlic, minced
¼ cup olive oil
2 ounces pine nuts
½ cup grated Parmesan cheese
salt and pepper to taste
1 pint light cream

Steps:

  • In a food processor, combine basil and garlic. Begin processing, and pour in olive oil in a thin stream. Process for about 40 seconds, or until mixture begins to emulsify. Add pine nuts and Parmesan, then blend for 1 minute.
  • Heat cream in a saucepan over low heat until simmering. Pour 1/2 of the hot cream into the processor with basil pesto, and pulse for 20 seconds to incorporate. Pour mixture back into cream, and simmer for 5 minutes, or until thickened.

12 oz pasta
2 lemons
1 cup heavy cream
1 cup fresh basil leaves (a large handfull)
Salt and pepper
Basil (- for garnish)
Parmesan (- for garnish)

Steps:

  • Bring a large pan of water to the boil and then add a generous amount of salt.
  • Add the pasta and cook until al dente.
  • Reserve a cup of the pasta cooking water and then drain the pasta.
  • Zest the lemons into a small bowl and then squeeze the juice into a measuring cup.
  • When your pasta is about 3 minutes from being cooked pour the heavy cream into a pan. Add the lemon zest and season with salt and pepper.
  • Heat the cream over medium heat for about 2 minutes until it comes to a simmer.
  • Pour the cream mixture over the drained pasta, stir well then add the lemon juice. Stir to ensure the pasta is evenly coated and then cook over medium-low heat for a minute until everything is glossy and coated in the sauce.
  • Add a splash of the pasta cooking water to thin the sauce as needed.
  • Stir the basil through the pasta and serve.
  • Parmesan is optional but good!

1 tbsp butter
1 onion (finely chopped)
2-3 garlic cloves (minced )
1 cup fresh basil (roughly chopped )
1 tsp dried herbs of your choice ((basil, rosemary, sage, thyme or Herbs de Provence all work well))
1 cup whipping or heavy cream
1-2 tsp lemon juice
salt and pepper (to taste )
500 g pasta (cooked )

Steps:

  • Melt the butter in a pan then add the onion. Cook until soft and translucent.
  • Add the garlic, basil and dried herbs (if using) and cook for another 30 seconds.
  • Pour in the cream and allow to come to a simmer. Simmer for 5-7 minutes until the sauce covers the back of a spoon easily.
  • Transfer sauce to a food processor or blender (or use an immersion blender) and blend until smooth.
  • Pour the sauce back into the pan and add lemon juice, salt and pepper to taste. Bring to a simmer and add cooked pasta or serve over cooked chicken.

Here's an easy 30 minute dinner idea for you! Pan-seared Chicken in Lemon Basil Cream Sauce is super easy to throw together, and uses up some of that fresh garden basil. Chicken tenderloins are quick to cook on the stovetop, and the sauce has such bright lemony flavor!

2 pounds chicken tenderloins (thawed)
1/4 cup flour
1 teaspoon dried basil
1 teaspoon salt
3/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder
1 tablespoon butter
1 tablespoon oil
1 & 1/4 cups chicken broth*
1/3 cup fresh lemon juice (2 lemons-zest them first!)
1/2 cup cream
1-2 tablespoons lemon zest (to taste**)
1/4 cup fresh basil (chiffonade)
fresh basil (more to garnish)

Steps:

  • Dry the chicken tenderloins with a paper towel.
  • On a plate or shallow dish, mix together the flour and spices: basil, salt, pepper, cayenne, garlic, and onion.
  • Dredge the chicken in the flour mixture to coat both sides.
  • Heat a large skillet to medium high heat. When it is hot, add 1 tablespoon butter and 1 tablespoon oil, and swirl to coat.
  • Add about half the chicken tenderloins. Don't add them all at once or they will steam, not sear, and that won't get you those nice crispy brown edges. Leave about an inch in between each piece of chicken.
  • Sear for about 4 minutes. Keep an eye on it and make sure it's not cooking too quickly. Turn the heat down to medium if necessary.
  • Flip the chicken and cook for another 2 minutes or so, until brown.
  • Remove the chicken to a plate and sear the other batch, adding more oil if the pan gets dry.
  • When the chicken is done and out of the pan, add the chicken broth and lemon juice. Keep the heat on medium high. Scrape up the browned bits with a wooden spoon.
  • Bring to a boil and simmer for about 3 minutes.
  • Add the cream. Bring to a simmer again and continue simmering for 5-8 minutes until the sauce has thickened some.
  • Remove from heat and add fresh basil and lemon zest. Return the chicken to the pan.
  • Serve with pasta, rice, mashed potatoes, cauliflower rice, etc.

This is a sauce recipe that was a frequent complement to chicken and fish during my study abroad residence experience with a french family in the Loire Valley region. Cream sauces are very popular paired with white and rosé wines in this geography, and this goes well over a thinly sliced breast of chicken, or a flaky whitefish. Although the sauce itself is somewhat fattening, if used conservatively it's actually a light and refreshing compliment to poultry and fish in the summer. If you absolutely feel the need to tone down the fat, be careful as you don't want the sauce to become too thin as it won't coat as nicely. Enjoy!

1 chicken bouillon cube

  • For preparation, juice the lemon into a ramekin or small mug, removing the seeds. Mince fresh basil leaves until really finely chopped.

1 teaspoon sea salt
1 teaspoon freshly cracked black pepper
1/4 cup Land O Lakes® Butter with Olive Oil & Sea Salt
2 cloves garlic, grated
1/2 teaspoon freshly cracked black pepper
1/2 cup dry white wine
3 tablespoons freshly squeezed lemon juice
1/4 cup heavy cream
3 tablespoons chopped fresh basil

Steps:

  • Set oven control to broil. Spray cookie sheet with cooking spray. Place fish fillets on cookie sheet. Sprinkle both sides of fillets evenly with salt and 1 teaspoon of the pepper.
  • Broil about 10 to 15 minutes until fish flakes easily with fork.
  • Meanwhile, in large skillet, melt butter over low heat. Add garlic and remaining 1/2 teaspoon pepper. Cook and stir until garlic is fragrant. Add wine; heat to boiling over medium-low heat. Boil until sauce is reduced by half. Stir in whipping cream and basil. Simmer until thickened.
  • To serve, place broiled grouper on individual plates. Top with cream sauce.

1 tbsp lemon juice

1/2 avocado
1/2 cup fresh basil (packed)
Juice and zest of 1/2 lemon
1 tbsp extra virgin olive oil

3 tbsp of water (plus more, if necessary)

Steps:

  • Pat the swordfish dry with a paper towel, and season them liberally with salt and pepper on both sides. Pour lemon juice over the swordfish and refrigerate for 15 minutes.
  • While the swordfish is marinating, place all ingredients of the lemon basil sauce in a blender and blend until smooth. If the sauce is too thick, add more water until it becomes the right consistency. Set aside.
  • Heat a coconut oil in a skillet over medium high heat.
  • Place the steaks in the pan and cook for 6 minutes, flipping halfway through.
  • Drizzle lemon basil sauce over the steaks and serve with delicious veggies!

1 cup chicken broth
1/4 cup lemon juice

2 large chicken breasts cut in half lengthwise
3 Tbsp olive oil
2 cloves garlic minced
1 tsp dried basil or one tablespoon fresh chopped
1/4 tsp onion powder
1/2 c low sodium chicken broth
3/4 c heavy cream
2 Tbsp fresh lemon juice
salt and pepper to taste
2 Tbsp fresh chopped parsley
1 lemon thinly sliced

Steps:

  • 1. In large skillet over medium heat add 1 tablespoon olive oil and brown chicken breasts on both sides. If necessary work in batches so the skillet is not crowded. Plate chicken, cover and keep warm.
  • 2. If needed add 1 tablespoon of olive oil to same skillet over LOW heat. Add garlic, basil and onion powder and cook for 30 seconds. Add chicken broth and stir to scrap brown bits off the bottom of the pan. Add cream and simmer until slightly thickened; approximately 10-15 minutes. Add lemon juice and salt & pepper to taste. Return chicken to skillet and cook for an additional 5 minutes. Top with parsley and fresh lemon slices serve.
  • 3. NOTES Cooking time on the chicken in the final step will depend on how much it cooked while browning and how thick it is. You can always slice a small piece and check. If the sauce gets too thick will cooking add 1-2 tablespoons chicken broth. If it is too thin add 1-2 tablespoons cream.
