Provided by Tessa Arias

Categories     Dessert

Time 4h35m

Number Of Ingredients 14

20 (226 grams) mint Oreo cookies ((keep feeling intact))
4 tablespoons (57 grams) unsalted butter, (melted and cooled)
2 cups heavy cream, (chilled)
2 cups whole milk, (chilled)
3/4 cup (150 grams) granulated sugar
1 tablespoon corn syrup
1/4 teaspoon fine salt
1/2 teaspoon vanilla extract

4 ounces (113 grams) semisweet chocolate, (chopped)
1/2 cup heavy cream
1 tablespoon unsalted butter

Steps:

  • In the bowl of a food processor, pulse the cookies until finely ground. Add the melted butter and pulse until moistened. Press the crumb mixture into the prepared pan, using the bottom of a measuring cup to press firmly into the bottom and up the sides of the pan. Bake for 10 minutes then cool completely. Cover and freeze the crust until ready to use.
  • In a large mixing bowl, whisk together all of the ice cream ingredients except the chocolate chips until the sugar is dissolved. Pour into an ice cream maker and freeze according to the manufacturer's directions. About 5 minutes before the ice cream is done churning, add the chocolate chips.

  • Place the chocolate in a medium heatproof bowl. Place the cream in a small saucepan over medium heat and bring to a gentle simmer. Pour the cream over the chocolate and add the butter. Let stand for 3 minutes before stirring until smooth and shiny. Let cool slightly before pouring over the ice cream. Freeze until firmed, about 3 hours or overnight.
  • The pie can be stored wrapped in plastic in the freezer for up to 1 week. The colder the pie is, the easier to will be to cut nice clean pieces of pie.

CHOCOLATE LAYER PIE

Chocolate Layer Pie image

This is a yummy Chocolate Layer Pie. Its a recipe I came up with through a recipe for a French Silk pie I make. :-) If you use oreos...PLEASE MAKE SURE THAT YOU SCRAPE OUT ALL OF THE FILLING! Dont leave any filling on the cookie, because this will cause your crust to get funky and it will burn. :-) I do not suggest using oreos...rather just use plain chocolate cookie crumbs. :-)

  • Put the Oreos in a food processor and pulse into a crumble. If you don't have a food processor, you can place the cookies in a plastic bag and crush them with something heavy). Place the crumbled Oreos in a bowl.
  • Remove the ice cream from the freezer for 15-20 minutes to allow it to soften. Place the ice cream in a bowl and stir with a spoon to get it to be like a soft-serve consistency. This will make it easier to pack into the crust. Remove the crust from the freezer and add the ice cream. Smooth it to the edges but make sure you still have room at the top for the whipped cream layer.
  • Place the heavy whipping cream into a bowl and begin to whip on medium speed with a hand mixer. Add the powdered sugar, vanilla, and peppermint and continue to beat on high speed until the cream is nice and stiff. This will take about 4-5 minutes.
  • When you are ready to serve the pie, take a dark chocolate bar and shave off the side with a vegetable peeler to create chocolate shavings. Sprinkle on top of the pie and allow the pie to sit for a minute or two before slicing. TIP: use a warm knife to cut through the pie!
