CREAMY LATIN PASTA SALAD

Steps:
- Bring a large pot of salted water to a boil. Add the pasta, stir with a wooden spoon, and cook until tender but not mushy, about 10 minutes. Drain, place in a large bowl and set aside.
- While the pasta cooks, combine the evaporated milk, oil, feta, cilantro, lime juice and some salt and pepper in a blender. Puree until the dressing is smooth and creamy.
- Place the drained pasta in a large bowl. Add the ham, bell peppers, peas, onions, jicama and olives. Pour the dressing over the pasta and gently mix it into the salad. Cover the bowl with plastic wrap and chill for at least 30 minutes or up to 2 hours before serving.
SIMPLY DELICIOUS PASTA SALAD
This pasta salad is so easy, and so delicious! This recipe came from my husband's, brother in law's mother... this recipe is wonderful any time, but especially on warm summer nights!

Steps:
- Cook pasta according to directions, set aside and cool.
- Combine vinegar, sugar, evoo and salt in a separate bowl - whisk until finely blended and set in fridge until ready to dress.
- Peel and chunk cucumber, set in separate mixing bowl.
- Dice tomato and set in mixing bowl with cucumber.
- Chop or slice up the red onion, set in mixing bowl with tomato and cucumber.
- Cube up the cheese and set aside, do not add the cheese just yet.
- Add cooled pasta to the mixing bowl with veggies and toss.
- Dress the salad with the liquid ingredients and toss until all the pasta and veggies are evenly coated.
- Toss in cheese.
