This creamy keto broccoli cheese soup recipe is a must for your weekly menu!

1 cup Broccoli
5 oz Cheddar Cheese
2 tbsp Butter
1/2 tsp xanthan Gum
1/4 cup Onion
1/4 cup celery
1 1/2 cup chicken broth
1/2 cup Heavy Whipping Cream
salt/pepper

Steps:

  • Cut up broccoli into pieces, as small or as big as you'd like and set aside.
  • Add butter, onion, celery, salt and pepper to a sauce pan and cook until onions and celery are translucent.
  • Add broccoli and cook for additional 2-3 minutes or until broccoli turn bright green.
  • Add chicken broth and heavy whipping cream and bring to a boil.
  • Turn down to simmer and slowly add the cheese mixing as you add.
  • Once fully incorporated add anthem gum and stir until soup thickens.
  • Serve warm and enjoy!

2 cups broccoli (frozen, thawed, and roughly chopped)
1 medium carrot (finely chopped)
1 small onion (finely chopped)
2 tablespoons olive oil
1 teaspoon garlic powder
3/4 teaspoons salt
1/2 teaspoon pepper
1/8 teaspoon nutmeg
2 cups chicken or beef bone broth
1 handful spinach
1/2 cup heavy cream
4oz cheddar cheese
4oz gouda cheese

Steps:

  • Add olive oil to a large pot and turn on heat to medium. Add chopped carrots and onion. Stir for 1-2 minutes. Add garlic, broccoli, seasoning, and spices. Mix and let cook for an additional 1 minute.
  • Add bone broth, stir, and cook for 8-10 minutes until veggies are softened. Turn off heat. Stir in heavy cream.
  • Add 1/2 of soup mixture to a high speed blender, add spinach. Blend on high until smooth. You can blend all of the soup if you prefer a completely smooth consistency.
  • Return contents in blender to large pot, stir in cheddar and gouda cheese until completely melted. Adjust seasoning to taste. Add additional broccoli and cheese if desired to top of soup.

1/2 teaspoon garlic powder
1 teaspoon paprika
2 tablespoons butter
8 ounces cream cheese
4 1/2 cups chicken broth
1 cup heavy whipping cream
16 ounces frozen chopped broccoli
1 cup sharp cheddar cheese, shredded

Steps:

  • 1. Add butter, cream cheese, garlic powder, onion powder & paprika to a large pot over medium heat. Stir frequently until melted and blended together.
  • 2. Add heavy cream and chicken broth, stir to combine. Bring to a boil over medium high heat, stirring occasionally. Once boiling allow to boil 5-8 minutes.
  • 3. Add broccoli, stir and return to a boil. Once boiling reduce to simmer and cover. Cook for an additional 20 minutes.
  • 4. Remove from heat, add cheddar, salt and pepper to taste. Stir and Serve.
  • This makes 6 - 1 cup servings at 4.1 net carbs.

Heavy cream has no carbs which is why this works so well for folks on low-carb diets. Also fat is more filling, leading you to eat less and feel more full. Leftovers can be stored in the refrigerator. It's even better the second day. However, I've found if it sits longer than that the broccoli can become too strong.

1 (8 ounce) package cream cheese
1 cup shredded Cheddar cheese
¼ cup butter
1 tablespoon minced onion flakes
1 pint heavy whipping cream
1 (10 ounce) can chicken chunks, or more to taste
3 heads broccoli, broken into florets

Steps:

  • Combine chicken broth, cream cheese, Cheddar cheese, butter, and onion flakes in a large pot over medium heat; cook and stir until smooth, 3 to 5 minutes. Add heavy cream and chicken; bring to a gentle simmer.

1 1/2 cups heavy cream

3 1/2 cups cheddar cheese

Steps:

  • In a deep pot, add the butter and place it over medium heat. Once hot, add the onions and garlic and stir fry for 1-2 minutes, until fragrant.
  • Add the chicken broth and heavy cream and finely chopped broccoli, smoked paprika, pepper, and salt and bring it to a boil. Once it begins to boil, reduce to low and simmer for 20 minutes until the broccoli is tender.
