Steps:
- In a skillet, over medium high heat, season lean ground beef with salt, pepper, garlic salt and dried minced onion and cook until done, about 7 to 10 minutes.
- Add butter into ground beef and melt. Sprinkle the flour over the top of the ground beef and stir. Cooking the flour in for 1 to 2 minutes.
- Slowly pour in the milk and whisk or stir to incorporate into the flour and beef. Stir occasionally let cook until it thickens. About 5 or so minutes.
- Serve immediately over mashed potatoes, toast, buttered noodles or rice.

- In a medium sauce pan over medium high heat, brown the ground beef. Season with a little salt and pepper. Drain excess grease and set aside.
- Melt butter in the same sauce pan. Add flour and whisk until butter/flour mixture is bubbly.
- Add milk, salt, and pepper. Whisk continuously until thick and bubbly.
- Add cooked ground beef back in and stir.
- Taste and adjust seasoning as needed (I usually like a bit more pepper). If necessary, add a little more milk until it reaches your desired consistency.
- Serve over toast.

CREAMY HAMBURGER GRAVY WITH NOODLES
This is easy, quick and delicious, I most always add in a can of undiluted cream of mushroom soup to the ground beef mixture before adding in the flour/cream mixture --- because of the already high sodium content in the dry soup mix and Worcestershire sauce I don't add in any extra salt, if needed you can always add in at the end of cooking, for more beef flavor add in a tablespoon of beef bouillon powder, for a large family double the amounts

- In a large skillet or medium pot cook the ground beef and bulk sausage (if using) over medium heat until browned; drain fat.
- Add in garlic, chili flakes, 1/2 pagage dry onion soup mix, Worcestershire sauce and mushrooms; cook stirring for 3 minutes.
- Pour 2 cups half and half cream or milk into the pan and stir scraping up any browned bits on the bottom of the pan; bring to a simmer over medium heat.
- Reduce heat to medium-low and simmer for about 4-5 minutes.
- In a bowl whisk the flour with remaining 1/2 cup of cream until smooth; slowly add to the beef mixture stirring with a spoon.
- Simmer stirring with a wooden spoon for about 3-4 minutes until thickened.
- Mix in about 1/3 cup grated parmesan cheese.
- Season with black pepper.
- Divide the cooked noodles onto plates.
- Spoon the hamburger gravy over, then sprinkle the top with Parmesan cheese.

HAMBURGER STEAKS WITH ONION AND MUSHROOM GRAVY
This recipe is an update of the classic Salisbury steak. With additions like smoked paprika in the beef mix and lightly caramelized onions in the gravy, this version will be a new family favorite to enjoy with a side of mashed potatoes.

- For the hamburger steaks: Whisk together the mustard, smoked paprika, egg, garlic, 1 teaspoon salt and 1/4 teaspoon pepper in a medium mixing bowl. Mix in the ground beef and breadcrumbs by hand, then form into 4 oval patties, about 1/2 inch thick.
- Set a large nonstick pan over medium-high heat and add the oil. Add the patties and brown on both sides, about 3 minutes per side. Transfer the patties to a plate; set aside.
- For the onion and mushroom gravy: Turn the heat down to medium and add the mushrooms and thyme. Cook until the mushrooms release their liquid and are browned, about 8 minutes. (The mushrooms might seem dry at first, but will eventually release liquid and add moisture to the pan.) Transfer the mushrooms to a plate; set aside.
- Melt the butter in the pan, add the onions and garlic and cook until translucent and lightly golden, about 10 minutes. Sprinkle in the flour and cook, stirring, until the butter and liquid are absorbed, about 1 minute. Pour the broth and Worcestershire into the pan and stir until the flour is dissolved.
- Turn the heat to high and bring to a boil. Stir the mushrooms back into the pan and nestle in the beef patties. Cover with a lid and reduce the heat to medium low. Let simmer until the sauce has thickened and a thermometer inserted into the patties registers 165 degrees F, about 10 minutes.
- Turn the patties over a few times to coat in the sauce. Season with salt and pepper and top with the parsley.
CREAMED HAMBURGER
This might as well be titled, "Mom's Hodge-podge Home-made Hamburger Helper." Although I seldom cook with hamburger, this is a wonderful example of how mom taught us how to improvise, adapt, and experiment to the nth! This one's being added for posterity! The next time I pour in a cup of salsa because I'm out of tomatoes, I'll think of mom and blow her a kiss. MUAH!

- Salt skillet. Brown desired amont of hamburger. Push meat aside and add 1 to 2 tablespoon flour to remaining grease. When it forms a paste, add desired amount of milk to make a gravy. Season with salt and pepper. At this point, it can be served on toast, mashed potatoes, noodles, rice, etc.
- HOWEVER, this can be a take off point to several directions. Other ingredients an be added along the way. Celery, onion, mushrooms, left-overs of various kinds (vegetables, soups, even other meats, etc.) Also, sometimes I simply add half a package of dry onion soup mix after the hamburger fries; doesn't need any other seasoning. One time I found a cup of cooked rice to add. Another time I found a half can of cream of mushroom soup, another time a cup of left-over cream of potato soup.

Feel free to add your favorite seasonings such as Lawry's. This isn't the exact recipe but way back when I was a kid my mother who made a lovely tuna casserole [right.. 3 bottles of ketchup spaghetti queen] and my Grandfather had one heck of a fight over the Tuna Casserole or the Hamburger Gravy. Grandfather ate his Hamburger Gravy over saltines that night and Mom MADE me eat the tuna. Didn't help her mood I cried and wanted the Gravy too.

Steps:
- Heat bacon drippings or oil in a large skillet over medium-hi heat; add ground beef and onion and cook and stir, breaking meat into small crumbs, until meat and onions have browned, about 7 minutes.
- Push meat to side of pan and drain off all but 1 1/2 tablespoons pan drippings; return to low heat and whisk flour into pan drippings until smooth.
- Slowly add milk and stir until smooth.
- Move meat back into center of pan and stir to coat with gravy; cook until thickened, season with salt and pepper to taste and serve over split baking powder biscuits, toast or corn bread or over mashed potatoes.

EASY AND TASTY HAMBURGER GRAVY
This is similar to Hamburger Stroganoff. I was at the grocery store yesterday and was going through their 3 marked down items carts. I found some cans of "Campbell's Beefy Mushroom Soup" in one of them. I have never seen that kind of soup before. I grabbed a couple of cans of it, figuring that I could come up with a recipe to use one of them them in. Even though there is some beef in the soup, I still used it with hamburger. This is very easy to make. It's more like a Stroganoff without added mushrooms. I am allergic to black pepper, so I don't add it to my recipes. Use however much you want to. You can use more onion and garlic if you want to. Prep time and cook time are appx.

- Brown the ground beef in a medium sized skillet on med-hi heat.
- Drain fat if necessary.
- Add the chopped onion and garlic to the hamburger.
- Cook on medium heat until the onion and garlic are tender and the hamburger is done.
- Add the can of soup.
- If desired, add 1/2 can of water, using the soup can.
- Bring to a boil.
- Lower heat to medium to med-lo and simmer for about 10 or 15 minutes, stirring occasionally.
- Add the sour cream and stir.
- Heat until it just barely starts to boil.
- Thicken if necessary, using your own method.
- Keep hot until ready to serve.
- Serve over noodles, mashed potatoes or rice.
