CREAMY HAM WILD RICE SOUP

3/4 cup uncooked wild rice (, (yields 2 to 2 1/2 cups cooked))
1 medium yellow onion (, diced)
1 cup diced celery (, (2 stalks))
1 cup diced carrot (, ( 3 medium))
1/2 cup butter
1/2 cup all purpose flour
6 cups chicken broth
1 cup diced ham (, (10 to 12 oz.))
1/2 tsp kosher salt
1/2 tsp ground white pepper
1 cup half and half
1/4 cup dry sherry

Steps:

  • Rinse rice under running water in a strainer.
  • Cook the rice in 2 1/2 to 3 quarts boiling water, 12 to 13 minutes, until softened, drain and set aside, (cook according to package directions for cultivated rice)
  • Melt butter in a 5 quart pan or dutch oven and add onion, celery and carrots.
  • Cook for 5 to 6 minutes on medium heat.
  • Add the flour and stir in well and cook while stirring 1 minute
  • Gradually add the broth while whisking and bring to a boil and whisk until thickened, 4 to 5 minutes
  • Stir in wild rice, half and half, salt and pepper and simmer for 10 minutes
  • Remove from heat and stir in dry sherry
  • Serve this delicious soup hot

1/4 teaspoon pepper
3 cups water
1 cup half-and-half
1/4 cup sliced almonds
2 tablespoons dry sherry, if desired
1/4 cup chopped fresh parsley

Steps:

  • Spray 3- to 4-quart slow cooker with cooking spray. In cooker, mix all ingredients except half-and-half, almonds, sherry and parsley.
  • Cover; cook on Low heat setting 7 to 8 hours.
  • Stir in remaining ingredients. Increase heat setting to High. Cover; cook 10 to 15 minutes longer or until hot.

3/4 cup crushed corn flakes

Steps:

  • Combine all ingredients except butter and corn flakes.

1/2 cup uncooked wild rice
3 tablespoons chopped green onions

1/2 cup cubed fully cooked ham

1/4 cup fresh sage leaf, chopped
