GARLIC PARMESAN GREEN BEAN CASSEROLE
Garlic Parmesan Green Bean Casserole is the most wonderfully flavorful holiday side dish! This homemade version is garlic, parmesan, and walnuts for crunch. It is not only delicious, but naturally gluten free and low carb as well.

Steps:
- Chop green beans in half and remove any hard ends.
- In a large bowl, combine cream cheese, garlic, salt, pepper sour cream, heavy cream, 1/2 cup parmesan cheese, and chopped mushrooms and mix until combined.
- Stir in the green beans and toss until coated with the mixture, then transfer to a large casserole dish.
- Sprinkle remaining 1/4 cup parmesan cheese over the top of the casserole and then top with walnuts.
- Bake covered with foil at 425˚F for 40 minutes. Remove the foil and cook for an additional 10-15 minutes, or until the nuts are toasted and the green beans are tender.
- Let rest 10-15 minutes before serving for sauce to thicken.

- Trim off the tough end of the beans and arrange the beans on a nonstick cookie sheet. Drizzle with olive oil season with salt and pepper, to taste. Sprinkle the cheese evenly over the top and bake until the cheese melts and forms a crisp shell over the beans, about 10 minutes. Let the beans sit a few minutes for the cheese to cool slightly. Lift the beans out onto a platter and serve.

- In a 12- inch skillet, cook the onion and garlic in butter over medium heat for 3 minutes or until softened. Stir in the green beans and thyme. - Start by prepping the vegetables. Peel and dice the onion.
- Wash the beans thoroughly in water. Trim the ends of the beans by lining them up and cutting off both ends. Then cut the beans in half.
- Fill a large pot with water. Add the beans and bring to boil over high heat. Cook for about 10 minutes or until the beans are almost cooked through over medium heat. Remove the beans to an iced water to stop the cooking process, then drain about 5 minutes later. Do not leave the beans in the water for longer, otherwise, they will absorb too much water and taste watery.
- Add couple tablespoons of oil to a frying pan. Heat through and add diced onions. Cook the onion over medium heat until golden in color, stirring often.
- Add green beans and heavy cream. Cook the green beans in the heavy cream for about 10 minutes over medium heat or until the cream is reduced and thickened, stirring from time to time. Add garlic and grated Parmesan. Stir & cook for additional 2-3 minutes. Add salt & black pepper. Stir. Taste and adjust the seasoning. Keep in mind that Parmesan cheese is very salty, so if you, to add more Parmesan before serving, you will need to under season at this point.
- Transfer to a serving bowl and serve right away, sprinkling a little more grated Parmesan on top. Stir once more to incorporate the cheese.
