175g linguine
2 tsp olive oil
1 garlic clove, finely sliced
100ml white wine
2 tbsp reduced-fat crème fraîche
juice ½ lemon (or to taste)
2 handfuls (150g) raw peeled prawns
small bunch chives, finely chopped

Steps:

  • Cook the pasta. Meanwhile, heat the oil in a pan and gently fry the garlic for 2 mins. Tip in the wine and bubble over a high heat for 1 min, then lower the heat and stir in the crème fraîche and lemon juice. Season to taste with salt and plenty of black pepper. Simmer for 1 min to reduce a little, then add the prawns and simmer in the sauce until just pink.
  • Drain the pasta and tip into the sauce with half the chives. Use tongs to mix everything together. Divide between 2 shallow bowls and sprinkle with the remaining chives.

1 package (9 oz) refrigerated linguine
1 lb uncooked large shrimp, peeled (tail shells removed), deveined
1/4 cup dry white wine or Progresso™ reduced-sodium chicken broth
1/3 cup reduced-fat garlic-and-herbs spreadable cheese (from 4-oz container)
1/2 cup fat-free (skim) milk
3 cloves garlic, finely chopped
1/2 teaspoon salt
4 1/2 teaspoons chopped fresh or 1 1/2 teaspoons dried oregano leaves
Fresh oregano sprigs, if desired

Steps:

  • In 5- to 6-quart Dutch oven, heat 3 quarts water to boiling; add linguine and shrimp. Cook 3 to 4 minutes or until linguine is tender and shrimp are pink. Drain and return to Dutch oven; cover to keep warm.
  • Meanwhile, in large nonstick skillet, heat wine, cheese, milk, garlic and salt to boiling over medium-high heat. Reduce heat; simmer 2 minutes, stirring constantly, or until slightly thickened.
  • Add linguine and shrimp to sauce in skillet; toss to coat. Stir in chopped oregano just before serving. Garnish with oregano sprigs.

CREAMY PRAWN LINGUINE



Creamy Prawn Linguine image

This recipe gives you a delicious creamy garlic prawn pasta dish. Made with linguine or spaghetti you are likely to make this over and over again!

2 tbsp butter
Olive oil
300g linguine, (or other pasta type if you prefer)
325g peeled frozen prawns
4 garlic cloves, crushed
100ml white wine
125ml cream
30g parmesan cheese
150ml chicken stock
30g cheddar cheese, grated
A handful of finely chopped parsley
Black Pepper to suit
1 tbsp lemon juice

Steps:

  • I like to use a wok to make this dish, just because you can use it easily to serve up by bringing it to the table. Then everybody can help themselves to however much they want. You will also need a sieve for this recipe.
  • First, defrost the prawns. I put the frozen prawns in a bowl and cover with luke warm water to defrost them.
  • Then boil a pan of water and cook the pasta for 10 minutes. I always add a few drops of olive oil to the pasta when I am boiling it. When the pasta is ready, remove and drain in the sieve. Keep some pasta water in a cup in case you need to water down the sauce later.
  • In the meantime prepare the garlic and other ingredients.
  • Sieve the prawns until all the water has dripped off. Squeeze them by hand to remove any excess water.
  • Then cover them with lemon juice. Then fry the prawns in 1 tbsp of butter in the wok, turning until they are cooked on both sides. Remove the prawns to a plate (including any liquid that may be present).
  • Then fry the garlic in another tablespoon of butter in the wok for about 1 minute. Then add the wine, bring to the boil and simmer until the wine is reduced.
  • Add the cream, stock and cheddar cheese. Stir until the cheese has melted and then add the parmesan and continue stirring. The sauce should start to thicken now.
  • Then add the prawns (and liquid) back to the pan, followed by the linguine. Now stir well so that the pasta gets well covered by the sauce. The longer you keep stirring it the thicker the sauce will get.
  • Now add the parsley and black pepper and stir until the consistency is as you want it. If you need more juice then add some of the pasta water you kept earlier.
  • When it is all well mixed and the sauce is as you like it, it is ready to serve up.

8 oz / 250g fettuccine (, or other long strand pasta of choice)
30 g / 2 tbsp butter (, separated)
300 g / 10 oz small peeled prawns / shrimp, raw ((Note 1))
3 garlic cloves (, minced)
1/4 cup / 65 ml dry white wine ((Note 2 for sub))
1 cup / 250 ml heavy / thickened cream ((Note 3))
1/2 cup / 125 ml chicken broth ((or fish or vegetable broth), preferably low sodium)
3/4 cup / 50 g finely grated parmesan cheese (1.5 oz) ((freshly grated) (Note 4))
2 tbsp finely chopped parsley
Black pepper
Parmesan (, for serving)

Steps:

  • Bring to boil a large pot of water. Add pasta and cook per packet MINUS 1 minute. (Note 5).
  • Just before draining, scoop out 1 cup of pasta cooking water and set aside. Drain pasta.
  • Meanwhile, melt 1 tbsp of butter in a large non stick skillet over medium high heat. Add prawns and cook for 1 1/2 minutes on each side until just cooked through. Remove prawns.
  • In the same skillet, add 1 tbsp butter. Once melted, add garlic. Stir for 20 seconds until fragrant.
  • Add wine and stir. Simmer for 2 minutes until wine mostly reduces (see video).
  • Add cream, broth and parmesan. Stir until the parmesan is melted, then leave to simmer for 1 1/2 minutes until it thickens slightly (will thicken more in next step).
  • Add prawns, stir, then add pasta plus about 1/4 cup of reserved pasta water. Toss pasta (still on stove) and the sauce will thicken in about 30 - 45 seconds and start clinging to the pasta.
  • Take it off the stove before the sauce is as thick as you want - it will thicken more.
  • Sprinkle with most of the parsley and black pepper, check salt (I don't need more). Toss again until the sauce consistency is to your taste. Add a tiny splash of pasta water if it gets too gluggy.
  • Serve immediately, garnished with remaining parsley and parmesan if desired.

3 tbsp butter
500 g/1lb shrimp/prawns (deveined and shelled)
4 garlic cloves (crushed)
1 cup/250ml cream
2-3 tbsp fresh lemon juice
handful fresh parsley (finely chopped)
salt (to taste)
pepper (to taste)

Steps:

  • Cook the pasta in a large pot of salted boiling water until al dente. Drain and reserve 1 cup of cooking water.
  • In the meantime, melt 2 tablespoons of butter in a large skillet/frying pan and cook the prawns in batches until golden brown and opaque. Season the prawns to taste.
  • Remove from the pan and set aside.
  • Add the remaining butter and garlic and cook for a few seconds, until the garlic is fragrant then pour in the cream, lemon juice (start with 2 tablespoons and add more if you wish), parsley and season to taste.
  • Allow to simmer over gentle heat until the sauce coats the back of a spoon. Add the shrimp back in and adjust seasoning.
  • Add the pasta and a little of the cooking water and toss until the pasta is coated in the sauce.
  • Serve with lemon wedges and chopped parsley.

3 tablespoons unsalted butter
3 cloves garlic, thinly sliced
One 12-ounce jar roasted red peppers, drained and sliced in 1/2-inch-thick strips
1 teaspoon sweet or smoked paprika
2 cups heavy cream
1 pound medium peeled and deveined shrimp, tails removed
1 1/2 cups grated Parmesan
1 tablespoon fresh flat-leaf parsley, chopped

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions for al dente. Drain and set aside.
  • Meanwhile, melt the butter in a large skillet over medium heat. Stir in the garlic, red peppers and paprika and cook, stirring occasionally, until the peppers are heated through and the butter is fragrant and vibrant red, about 2 minutes. Add the cream and bring to a boil. Reduce the heat to medium low and simmer, stirring occasionally, until slightly thickened, 3 to 4 minutes.
  • Add the shrimp and cook until they are firm and cooked through, about 5 minutes. Add the cooked pasta, Parmesan and 1 teaspoon salt and toss until well coated (see Cook's Note). Sprinkle with parsley.

500g / 1lb peeled prawns/shrimp (, large/jumbo best (Note 1))
1 garlic cloves (, finely minced)
1 tbsp olive oil
1/2 tsp black pepper
1/2 tsp salt
15g / 1 tbsp unsalted butter
2 garlic clove (, finely minced)
15g / 1 tbsp unsalted butter
1/4 cup dry white wine ((or more chicken stock) (Note 2))
1/2 cup chicken or vegetable stock/broth (, low sodium)
1 cup heavy/thickened cream
1/2 cup parmesan (, finely grated (grate your own, Note 3))
2 tbsp parsley (, finely chopped)

Steps:

  • Place prawns, garlic, oil and pepper in a bowl. Toss to coat, set aside 20 minutes if time permits (no longer).
  • Stir through salt just prior to cooking.
  • Melt 15g / 1 tbsp butter in a large skillet over medium high heat. Add half the prawns and cook for 1 minute on each side, then remove.
  • Repeat with remaining prawns (you shouldn't need more butter), then remove. Scrape out excess remaining garlic from pan and add to cooked prawns.
  • Add butter into skillet and let it melt. Add garlic and stir for 30 seconds or until light golden.
  • Add white wine, turn up heat to high. Bring to simmer while stirring base of the pan to dissolve all the golden bits into the sauce. Cook 1 minute or until it most evaporates and the winey smell is gone.
  • Add chicken stock and reduce until mostly gone and just a thin layer remains on base of skillet.
  • Add cream, then simmer on medium heat for 2 minutes until reduced and slightly thickened.
  • Stir through parmesan, then add the prawns back in. Taste sauce and see if more salt and pepper is needed.
  • Serve sprinkled with parsley, over mashed potato or something to soak up that fabulous sauce!

1 tablespoon olive oil
1 pound (450g) raw shrimp (buy frozen, peeled, and deveined shrimp)

1 tablespoon butter
1 clove garlic (minced)

Steps:

  • In a medium-sized saucepan, boil water and salt it. Add your pasta, and cook according to the package instructions until al dente. When the pasta is cooked, reserve 1 cup of the pasta water and drain the pasta.
  • In a skillet over medium heat, melt the butter, and add olive oil. Cook the shrimp for a minute, then season with salt, pepper, and Old Bay Seasoning or paprika if using.
  • Continue to cook the shrimp until it's pink. Do this in batches if you're worried that you may overcook the shrimp. Remove the shrimp onto a plate and set aside.
  • In the same pan, melt butter and add garlic, cook for 30 seconds or until it's fragrant. Add the heavy cream, and with the spatula deglaze the pan.
  • Add parmesan, let it melt then loosen the sauce with reserved pasta water and allow to simmer for a minute. Taste the sauce and see if more salt and pepper is needed.
  • Toss the pasta with the sauce until it's well coated. Add the shrimp back in to reheat it gently, garnish with freshly chopped parsley and serve.

175g pack raw shelled king prawns, de-veined and split in half lengthways

Steps:

  • Boil the pasta following pack instructions. Meanwhile, very gently cook the garlic in the butter in a medium pan until softened. Add the prawns and cook until they just turn from grey to pink. It is important not to overcook them or they will be tough. Remove from the heat and stir in the zest and seasoning.
  • Drain the pasta and toss into the pan with the prawn mixture and parsley until well mixed. Divide between two bowls and serve with the lemon wedges.

150 g dried linguine
2 cloves of garlic
160 g raw peeled king prawns, from sustainable sources
4 rashers of higher-welfare smoked pancetta
olive oil
50 ml Italian red wine
1 heaped tablespoon mascarpone cheese
50 g rocket
10 g Parmesan cheese

Steps:

  • Cook the pasta in a pan of boiling salted water according to the packet instructions. Meanwhile, peel and finely slice the garlic. Run your knife down the back of 2 prawns, so they'll butterfly as they cook, then finely chop the rest.
  • Put a large non-stick frying pan on a medium heat. Finely slice the pancetta, sprinkle into the pan with 1 tablespoon of olive oil and fry until lightly golden. Toss in the garlic and whole prawns for 2 minutes, then go in with the wine and let it cook away. Toss through the chopped prawns and mascarpone for 1 minute, then use tongs to drag the pasta straight into the pan, letting a little starchy cooking water go with it. Roughly chop the rocket, add most of it to the pan and toss it all together over the heat until you have a silky sauce. Subtly season to perfection with the Parmesan and black pepper. Serve sprinkled with the remaining rocket and an extra grating of Parmesan, if you like.

250 g (½lb) shrimp / prawns (peeled and deveined)
150 g (5oz) mussel meat ((approximately 500g with shells) )
150 g (5oz) calamari tubes / squid heads
2 tbsp butter
4 garlic cloves (crushed)
½ tsp chilli flakes
½ cup white wine
1-2 tsp lemon juice
1 cup cream
salt and pepper (to taste )
½ cup parsley (finely chopped)
500 g (1lb) pasta (cooked + 1 cup cooking water reserved)

Steps:

  • In a large pan, add a splash of oil and allow to heat up.
  • Season the seafood with salt and pepper then cook in batches until golden brown.
  • The shrimp/prawns should take no more than a minute per side (depending on size) and the calamari and mussels will take only a few minutes to cook. Take care not to overcook the seafood as they will go tough and rubbery. Rather undercook slightly as it will cook a little more while being tossed with the sauce and pasta.
  • Remove the seafood from the pan and set aside.
  • In the same pan, melt the butter and add the garlic and chilli flakes. Cook until fragrant then pour in the lemon juice and wine.
  • Bring to a simmer and allow to reduce by half.
  • Pour in the cream and allow to come to a simmer. Allow to cook for 5 minutes or until the sauce coats the back of a spoon.
  • Add the seafood (and any of its resting juices) and parsley and stir to combine.
  • Toss the sauce with cooked pasta and a splash of the pasta cooking water and toss to coat the pasta. Serve sprinkled with parsley.

8 to 10 ounces small shells pasta, (or elbow macaroni)
12 ounces raw shrimp, (shells removed and deveined)
1 block (8 ounces) cream cheese
1 pint cherry tomatoes
3 cloves garlic, (minced)
1 teaspoon dried oregano
½ teaspoon dried thyme
2 tablespoons extra virgin olive oil
Salt and Freshly ground black pepper, (to taste)

Steps:

  • Preheat oven to 425˚F.
  • Bring a large pot of salted water to a boil. Cook pasta according to package directions.
  • 2 minutes before the pasta is done, drop in the shrimp and cook until shrimp is pink and cooked through.
  • Reserve ½ cup of pasta water, then drain out the rest.
  • In the meantime place cream cheese in the middle of a large baking dish.
  • Add tomatoes and garlic around the block of cream cheese.
  • Sprinkle oregano and thyme all over, then drizzle with oil.
  • Bake for 25 to 30 minutes, or until cream cheese is soft, and tomatoes have started to burst.
  • Remove from oven and stir until cheese is smooth and everything is well combined.
  • Add cooked pasta and shrimp to the cheesy sauce and ¼ cup of reserved pasta water; stir to combine.
  • Add more pasta water, if needed, to thin out the sauce.
  • Season with salt and pepper; taste and adjust seasoning as needed.
  • Serve.

8 cloves garlic, unpeeled
12 large shrimp, peeled
2 tablespoons olive oil
1 1/2 cups heavy cream
1/4 cup finely chopped parsley
1/2 cup grated Parmesan
8 ounces fresh linguine, cooked and drained
Salt and pepper

Steps:

  • In a saucepan bring 6 cups of water to a boil. Using a small paring knife, remove the vein along the back of each shrimp and rinse under running water. Add garlic to water and boil for two minutes. Add the shrimp to the water and cook with the garlic for 2-3 minutes. Drain the shrimp and garlic. Peel the garlic and finely chop. Heat oil in a large skillet over medium heat. Add garlic and cook for 1 minute. Pour in heavy cream and bring to a simmer. Cook until cream begins to thicken. Stir in parsley, Parmesan and shrimp. Season with salt and pepper. Pour sauce over linguine in a large bowl and toss to coat. Garnish with parsley and Parmesan.

2 teaspoons pepper
1 tablespoon garlic powder
4 garlic cloves, crushed
1/2 cup butter
1/4 cup parmesan cheese
1/3 cup half-and-half
1 tablespoon flour
10 medium shrimp

Steps:

  • Preheat broiler.
  • Boil pasta. Drain, set aside, keep warm.
  • Place cleaned and deveined shrimp in pan. Place butter and 3 crushed garlic cloves on shrimp, sprinkle with pepper and garlic powder. Broil until shrimp is pink and opaque.
  • In same saucepan used to boil pasta, over medium heat, combine half and half, garlic powder, salt, pepper, 1 crushed garlic clove, and cheese. Add pasta, bring to low boil. Add flour, mix well.
  • Add shrimp AND butter mixture from pan directly into saucepan, mix well. Serve immediately.
