3 pounds Yukon gold potatoes, cut into 1 1/2-inch chunks
1 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon sugar
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
6 hard-boiled eggs, chopped
3 scallions, sliced
2 celery stalks, chopped fine
2 shallots, chopped fine
1 lemon, juiced

Steps:

  • Put the potatoes in a large pot and cover with cool water. Bring to a boil and cook until tender, 12 to 15 minutes. Drain and transfer to a large bowl.
  • In a separate bowl, combine the mayonnaise, mustard, sugar, salt, pepper, eggs, scallions, celery, shallots and lemon juice; stir to mix together. Add the mixture to the potatoes while still hot, mixing until the potatoes are coated. Transfer to a serving bowl.

Have you ever posted a recipe and just love reading the reviews for it? This is my signature potato salad. Whenever there is a pot luck function at work, I am TOLD that I have to bring the potato salad. No one else is allowed to and I am never given a choice. Thank you everyone who ever tried this potato salad and for leaving such glowing reviews for it. You all have made me look so good. I personally can not stand eggs or raw onions, so I leave them out but I know most people don't think a potato salad is complete without them. Thanks again for so many wonderful reviews. 6 medium potatoes (2 pounds)
1/2 lb bacon, prepared as in Homemade Fresh Bacon Bits
1 cup thinly sliced celery
1/2 cup finely chopped onion
1/3 cup sweet pickle relish
1 1/4 cups mayonnaise or 1 1/4 cups salad dressing
2 teaspoons sugar
2 teaspoons celery seeds
2 teaspoons apple cider vinegar
2 teaspoons prepared mustard
1 1/2 teaspoons salt
2 hardboiled egg, coarsely chopped

Steps:

  • Cook potatoes in boiling, salted water until tender.
  • Drain well.
  • Peel and cube potatoes.
  • Transfer to a large bowl.
  • Add celery, onion, sweet relish and bacon bits.
  • Combine mayo, sugar, celery seed, vinegar, mustard, and salt.
  • Add mayo mixture to potatoes.
  • Toss lightly to coat potato mixture.
  • Carefully fold in the chopped eggs.
  • Cover and chill thoroughly.
  • Bacon bit tip: Partially freeze your package of bacon. Use a sharp knife and cut the frozen bacon into long strips about 1/4 inch wide. Turn the bacon and cut the strips into pieces also about 1/4 in wide. You now have perfect raw bacon pieces to fast fry. No need to separate. They will separate during cooking. Perfect bacon bits.

Consider jazzing up your potato salad dressing and adding some bacon, diced ham, pepperoni or salami to your side. We love sprinkling fresh herbs before serving for a little extra color and taste. 1 1/2 pounds round red or white potatoes (about 6 medium), peeled
1 1/2 cups mayonnaise or salad dressing
1 tablespoon white or cider vinegar
1 tablespoon yellow mustard
1 teaspoon salt
1/4 teaspoon pepper
2 medium stalks celery, chopped (1 cup)
1 medium onion, chopped (1/2 cup)
4 hard-cooked eggs, chopped
Paprika, if desired

Steps:

  • Place potatoes in 3-quart saucepan; add enough water to cover potatoes. Cover and heat to boiling; reduce heat to low. Cook covered 25 to 30 minutes or until potatoes are tender; drain. Let stand until cool enough to handle. Cut potatoes into cubes.
  • Mix mayonnaise, vinegar, mustard, salt and pepper in large glass or plastic bowl.
  • Add potatoes, celery and onion; toss. Stir in eggs. Sprinkle with paprika. Cover and refrigerate at least 4 hours to blend flavors and chill. Store covered in refrigerator.

Garlic Aioli Potato Salad image

Homemade garlic aioli gives this otherwise classic potato salad a pungent kick. If you don't want to add the hard-cooked eggs, use another 1/2 pound of potatoes instead. This is best served at least an hour or so after making to allow the flavors to mellow. Or make it the day before and store it in the refrigerator; bring it to room temperature before serving. If you can find garlic chives, there's no better place for them than here.

3 large eggs
2 garlic cloves, grated
1/2 teaspoon kosher salt, more as needed
1 tablespoon lemon juice, more as needed
1 large egg yolk
1 cup extra-virgin olive oil
1/4 cup sour cream
1/2 cup finely chopped celery
1/4 cup finely chopped red onion
2 pounds small waxy white or yellow potatoes, roughly about the same size
Black pepper, as needed
2 tablespoons finely chopped chives, for garnish

Steps:

  • Place 2 eggs in a small pot with water to cover. Bring to a boil over high heat; immediately remove from heat and cover for 8 minutes. Transfer eggs to a bowl of ice water to cool. Peel and dice small.
  • Meanwhile, combine grated garlic, salt and lemon juice in a blender, and pulse a few times to combine. Pulse in egg yolk. With motor running, slowly drizzle in olive oil until completely incorporated and mayonnaise is thick. Scrape into a bowl and fold in sour cream. Fold in celery and red onion.
  • Place whole unpeeled potatoes in a large pot with enough salted water to cover by 1 inch. Bring to a boil over medium-high heat and cook until potatoes are just tender, 15 to 25 minutes depending upon size. Drain and cut potatoes into 1 1/2-inch chunks as soon as you can handle them.
  • Transfer hot potatoes to a large bowl and toss with diced boiled eggs and 2/3 of the dressing. Let cool to room temperature, or refrigerate until ready to use. Just before serving, toss with some of the remaining dressing to taste (if desired). Season with black pepper and add more salt if necessary. Sprinkle with chives.

8 medium red potatoes
5 cloves garlic
1 1/2 teaspoons salt
1 teaspoon black pepper, freshly ground
1/2 cup red onion, chopped
3 stalks celery, chopped
1 1/2 cups mayonnaise

1/4 cup Italian parsley, chopped
1 envelope lipton savory herb with garlic soup mix

Steps:

  • Place the potatoes and garlic in a saucepan with water to cover.
  • Bring to a boil and let the potatoes cook until they are tender, about 25-35 minutes.
  • Drain the potatoes, saving the garlic cloves When the potatoes are cool, cut them into bite size pieces and place in a large mixing bowl.
  • Season them with the salt and pepper, add the onion and celery, and toss to combine.
  • In a medium mixing bowl, mash the boiled garlic cloves, add the mayonnaise, mustard, parsley, and soup mix, and whisk to blend.
  • Pour the dressing over the potatoes and toss the salad until the potatoes are evenly coated.
  • Cover the bowl tightly and refrigerate the salad for at least 2 hours for up to 24 hours.

A creamy potato salad that is simple to make, and is a sure crowd pleaser. I get asked to bring this to every barbeque I go to.

4 large potatoes
1 (250 g) jar creamy mayonnaise
1 medium onion
2 cloves garlic
1 can corn kernel
2 tablespoons fresh chives, chopped
3 eggs

Steps:

  • Combine mayonnaise, finely diced onion and crushed garlic cloves in container with a lid.
  • Mix well and refrigerate for 2-3 hours.
  • (This is so the flavour of the garlic and onion will be picked up by the mayonnaise) Wash potatoes and cube, leaving the skin on.
  • Boil until tender, and skin is SLIGHTLY coming away.
  • The potatoes will be slightly overcooked by potato salad measures, but this only adds to the creaminess.
  • Set aside to cool.
  • At the same time you can hardboil the eggs.
  • Once eggs are cooled, cut in quarters, lengthways and set aside.
  • Place cooled potatoes in large bowl and add the mayonnaise mixture, corn kernals and chives.
  • Mix well.
  • The last step is to add the eggs.
  • Place them throughout the salad, being careful not to mix them in too much, as they will lose their yolk and discolour the salad.

OLD FASHIONED CREAMY POTATO SALAD



Old Fashioned Creamy Potato Salad image

This has a cooked dressing that is combined with mayonnaise to create the most wonderful creamy dressing! I like to add in some cooked cubed deli ham and frozen thawed peas but that is optional. This dressing will seem sweet after it is cooked but will mellow out after chilling time, this salad must be chilled for a minimum of 8 hours or up to 24 hours before serving, all amounts may be adjusted to taste. Prep time includes chilling time.

8 -10 medium red potatoes (cooked until fork tender and cooled slightly then chopped)
6 hard-cooked eggs (peeled and chopped)
5 green onions, chopped
1 small yellow onion, finely chopped
2 stalks celery, finely diced
2 eggs
1/2 cup white sugar
1 teaspoon cornstarch
1 teaspoon seasoning salt (or use 1/2 teaspoon white salt)
1/3 cup cider vinegar
1/2 cup milk
2 -4 teaspoons prepared yellow mustard
2 1/2 tablespoons butter
1/2 teaspoon black pepper (or to taste)
1/2 teaspoon garlic powder (if you are a garlic-lover then use 1 teaspoon)
1 1/2 cups mayonnaise (can use up to 2 cups)

Steps:

  • For the dressing; in a saucepan combine 2 eggs with sugar, cornstarch and seasoned salt or white salt.
  • Add in cider vinegar, milk and mustard (start with 2 teaspoons mustard you may add in more later) whisk until smooth.
  • Set heat to medium and bring to a simmer; cook whisking frequently for about 10 minutes or until hot and bubbly.
  • Add in butter and stir until melted.
  • Refrigerate until semi-cooled, then stir/whisk in the mayonnaise until completely combined.
  • Add in garlic powder and black pepper (you may adjust the garlic, mustard and black pepper to taste) if desired.
  • Place the cubed potatoes in a large bowl, then add in chopped eggs, green onions, yellow onion and celery; mix to combine.
  • Pour the dressing over and toss with a large spatula to combine.
  • Cover and refrigerate for a minimum of 8 hours or up to 24 hours.
