4 cloves garlic, minced

1 ½ teaspoons coarse sea salt or kosher salt, divided
½ teaspoon freshly ground black pepper
1 (2 pound) center-cut beef tenderloin roast
½ cup sour cream
3 tablespoons prepared horseradish

Steps:

  • Heat oven to 350 degrees F. Combine 2 tablespoons of Carapelli, garlic, thyme, rosemary, 1 teaspoon of the salt and pepper; set aside.
  • Heat 1 tablespoon of oil in a large ovenproof skillet over medium-high heat. Add roast; cook 2 to 3 minutes or until well browned. Turn roast over; turn off heat. Spread garlic and herb mixture evenly over top and sides of roast.
  • For that matter, you could spread this mixture on just about anything. Meat. Bread. Veggies. Bacon. Mmmbacon.
  • Transfer skillet to oven; bake 25 to 30 minutes or until internal temperature reaches 125 degrees F. Transfer roast to a carving board; tent with foil and let stand 10 minutes. (Internal temperature will rise to 130 degrees F for medium-rare).
  • Meanwhile, combine remaining 1 tablespoon oil, sour cream, horseradish and remaining 1/2 teaspoon salt; chill until serving time.
  • Carve roast crosswise into 1/2-inch thick slices; place on warmed serving plates. Serve with sauce. Watch your hard work vanish in minutes as family and friends devour. Then bask in the glow of their approval.

1 tablespoon olive oil
1 large shallot, finely chopped
1 clove garlic, finely chopped
1 cup heavy cream
1/4 to 2/3 cup finely grated horseradish (see Cook's Note)
1 tablespoon chopped fresh dill
2 tablespoons lemon juice
Kosher salt

Steps:

  • Heat the olive oil in a medium saucepan or skillet over medium heat. Add the shallots and sweat until translucent. Add the garlic and cook, stirring, for 1 minute. Add the heavy cream and reduce about 5 minutes. Stir in the horseradish and dill, take off the heat and finish with the lemon juice. Add salt to taste.
  • Use as desired; we recommend using it to cook or finish fish such as salmon.

2 tablespoons butter
1/2 cup vermouth, Dry White French
1 tablespoon cornstarch
2 cups bouillon
1 tablespoon horseradish, prepared
1 egg yolk
4 tablespoons heavy cream (a little more if you wish)
salt
white pepper
2 tablespoons herbs, parsley, chives minced

Steps:

  • Cook garlic cloves and butter in a small sauce pan for about 5 minutes over a low heat (do not brown the butter).
  • Add vermouth and cover. Simmer for about 10-15 minutes until garlic is very soft and liquid has evaporated.
  • Blend in cornstarch.
  • Gradually beat in the bouillon and bring to a simmer.
  • Simmer for 2 minutes and remove from heat.
  • In a small bowl blend horseradish, egg yolk, and cream.
  • By dribbles, beat in half of the hot garlic mixture into the bowl.
  • By dribbles, pour this into the remaining garlic mixture into the pan.
  • Bring to a simmer again, stirring and taste for seasoning.
  • Add salt, pepper, horseradish and cream to taste.

½ teaspoon olive oil
freshly ground black pepper to taste
2 cups heavy cream
½ cup prepared horseradish
½ teaspoon salt

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Cut about 1/2 inch off the top of the garlic head, making sure that the tops of the cloves are open and exposed. Place on a square of aluminum foil, drizzle the top with olive oil, and lightly season with pepper. Wrap the bulb up in the foil.
  • Bake in the preheated oven until the cloves are soft and the tops are brown and caramelized, 30 to 40 minutes. Set aside.

1 cup light sour cream

Steps:

  • Remove steaks from the refrigerator, and let sit, covered, at room temperature for 20 minutes before grilling.

  • Prepare grill.
