4 boneless skinless chicken breast halves
1 (10 3/4 ounce) can Campbell's Cream of Chicken Soup or 1 (10 3/4 ounce) can 98% fat-free cream of chicken soup
1/2 cup water
1 tablespoon coarse-grain dijon-style mustard
1 teaspoon dried parsley flakes
1 teaspoon brown sugar, packed
1/2 teaspoon onion powder
1/4 teaspoon dried tarragon leaves, crushed

Steps:

  • HEAT oil in skillet. Cook chicken 10 minute or until browned.
  • ADD soup, water, mustard, parsley, brown sugar, onion powder, tarragon and garlic powder. Heat to a boil. Cover and cook over low heat 5 minute or until chicken is done.

  • Whisk together cream, mustard and brown sugar. 8 boneless, skinless chicken thighs, trimmed (about 2 pounds)
1/4 cup plus 1 tablespoon Dijon mustard, such as Grey Poupon® Dijon Mustard
1 teaspoon sweet paprika
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter
1/2 cup dry white wine
1 1/2 tablespoons all-purpose flour
1/2 cup chicken broth
1/4 cup heavy cream
2 tablespoons chopped fresh thyme, plus more for garnishing
Sliced French bread, for serving

Steps:

  • Pat the chicken thighs dry with paper towels. Combine the 1/4 cup mustard with the paprika, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl.
  • Brush the mustard mixture on the chicken thighs with a pastry brush, coating them on both sides.
  • Melt 2 tablespoons of the butter in a large skillet or cast-iron skillet over medium heat. Add the chicken thighs in a single layer. Cook until browned on one side, then flip once and brown the other side, about 10 minutes total. (If necessary, brown the chicken thighs in batches to avoid overcrowding the skillet.) Transfer the chicken to a plate, leaving the drippings in the skillet.
  • Increase the heat to medium-high. Carefully add the wine to the skillet and simmer, scraping up any browned bits with a wooden spatula, until the liquid has reduced by half, about 2 minutes.
  • Reduce the heat to medium-low and add the remaining 1 tablespoon butter. When it melts, whisk in the flour and cook, whisking constantly, for 1 minute. (The mixture will be very thick.)
  • Whisk in the chicken broth, heavy cream, the 2 tablespoons thyme and the remaining 1 tablespoon mustard.
  • Return the chicken thighs and any accumulated juices to the skillet, arranging them in a single layer, and cook until an instant-read thermometer inserted into the thickest part of the chicken reaches 165 degrees F, 5 to 7 minutes.
  • Transfer the chicken to serving plates, spoon the sauce on top and sprinkle with thyme. Serve with French bread, for dipping.

2 green scallions, sliced
1 garlic clove, minced
1/2 cup white wine
1/2 cup heavy cream

  • Place chicken breast under plastic wrap and flatten using mallet, rolling pin, or a glass bottle. Season breasts with salt and pepper. In heated skillet add olive oil and butter. This is the basic recipe I use for Dijon chicken, I also substitute cajun seasonings, honey mustard, crushed carlic croutons. This recipe is so easy to mix and match to any tastes or what you have on hand. I also cut one of the breasts into " nuggets " then season, coat and dredge, my DS doesn't know of " Mickey D's " fast food. Easy finger food for toddlers, adjust the seasonings for toddler's taste. You can bake these " nuggets " within the same pan, but adjust baking time down for this size. I also lightly drizzle honey atop his servings, healthier and fun for him to have his own.

  • Heat the olive oil in a non-stick skillet over medium heat. Add the onion and cook until the onion becomes tender, about 4 minutes. Add the garlic and cook 1 minute more.
  • Turn the heat up to medium-high. Season the chicken with salt and pepper and add it to the skillet. Saute the chicken until it is golden brown on all sides, about 4 minutes.
  • Quickly add the chicken broth and stir with a wooden spoon to release any caramelized bits that are stuck to the pan. Cook until the chicken broth has reduced by half. Stir in the mustard.
  • Serve with mashed potatoes.

1 tablespoon olive oil
1 teaspoon salt

1 small onion, finely diced

2 tablespoons Dijon mustard
2 tablespoons fresh basil

3/4 lb pasta (rigatoni, penne or fusili)

Steps:

  • Place a large pot of water on to boil. Add the pasta and cook about 12 minutes until al dente or per instructions on the package. Drain.
  • While the pasta is cooking, heat the olive oil in a large saute pan over moderately high heat.
  • Season the chicken with salt and pepper then add to the pan. Saute the chicken until golden on both sides, about 6 minutes.
  • Lower the heat and add the onions. Cook until the onions are translucent, about 5 minutes.
  • Add the garlic and cook 1 minute more.
  • Remove the chicken from the pan and set aside.
  • Turn the heat to medium, add the wine and reduce until it is almost completely evaporated.
  • Add the chicken stock and reduce by half.
  • Add the mustard and low-fat sour cream and stir until the sauce is creamy.
  • Add the chicken and cooked pasta to the sauce and toss until well coated. Sprinkle with fresh basil.

2 tablespoons French's Dijon Mustard
