CREAMY CUCUMBERS WITH MIRACLE WHIP
Steps:
- The English cucumbers come in the shrink wrap plastic. Remove the plastic and peel the green skin. I think if you don't remove the skin, it gives the cucumbers a little bit of a bitter taste. You could certainly leave the skins on, then I would wash and dry off the cucumbers before slicing.
- Slice the cucumbers thinly. If some of the slices seem kind of big, you can cut them in half as well to make it easier to eat.
- Add the Miracle Whip and Sugar. Stir.
- Let sit about 3 minutes for the sugar to dissolve. Enjoy!

I don't remember where I got this recipe from but it sure is good. It makes a great dish for gatherings. Everybody seems to want the recipe.

Steps:
- Peel Cucumbers and scoop out seeds with a spoon.
- Cut into bite size pieces and sprinkle with salt (no special amount).
- Let drain for about an hour then rinse cucumbers well with cold water.
- Cut onions into bite size pieces and add to cucumbers.
- Mix sour cream, miracle whip, salt sugar, vinegar, and dill weed or chives together and pour over cucumbers & onions.
- Stir thoroughly.
- Refrigerate for at least an hour.

- 1. Peel cucumbers. Slice cucumbers. Place in bowl of water with 1/4 teaspoon of salt. Let sit in fridge from 1-4 hours.

- Mix cucumbers, sweet onion, and sea salt together in a bowl. Cover bowl with plastic wrap and let sit for 30 minutes.
- Turn cucumber mixture into a colander set over a bowl or in a sink; let drain, stirring occasionally, until most of the liquid has drained, about 30 minutes more. Transfer drained cucumber mixture to a large bowl.

CREAMED CUCUMBER DELIGHT
This is such a yummy blend of cucumbers and onions in a sweet creamy sauce. When I was young my Grandma would make this for me all the time. That was over 30 years ago. It is a wonderful go to recipe for those hot summer days when you don't want to cook. I prefer using Vadalia onions, but any yellow onion will do. I try not to use too big of cucumber (diameter) because there are too many seeds. I have even substituted splenda for the sugar and light miracle whip with good results. (However, the juice doesn't flavor as long with the splenda). Finally, the cook time is the refrigerator marinate time. I hope you enjoy.

- Peel and slice cucumber and onions thinly. The best results are even slices. I use a mandolin for this step.
- Place sliced cucumber and onions in a medium bowl that has a lid.
- In a small bowl mix together the Miracle Whip, sugar, vinegar. Add salt and pepper if using. Pour over top of the cucumbers/onions. Place the lid on the bowl and give it a shake or two.
- Marinate 6 hours or overnight in the refrigerator.
- Do not add more liquid. Juice will keep for a long time. Just keep adding onions and cucumber as they get low until you no longer get the wonderful flavor on the cucumbers. Then it is time for a new batch.
