HOT CRAB AND CORN DIP

Number Of Ingredients 13

2 tablespoons unsalted butter, at room temperature
1 small shallot, chopped
2 cups frozen fire-roasted corn, thawed
1 red jalapeno pepper, seeded and chopped
2 tablespoons sherry or dry white wine
Kosher salt and freshly ground pepper
8 ounces lump crabmeat, picked through
1 1/2 cups grated monterey jack cheese (about 6 ounces)
3/4 cup sour cream
1 cup crushed butter crackers (such as Ritz; about 20 crackers)
1/4 cup grated sharp white cheddar cheese
2 tablespoons finely chopped fresh chives
1 teaspoon Old Bay Seasoning

Steps:

  • Preheat the oven to 375 degrees F. Melt 1 tablespoon butter in a skillet over medium-high heat. Add the shallot and cook until softened, about 1 minute. Add the corn and jalapeno; cook, stirring, until softened, about 3 minutes. Add the sherry and cook, stirring, until evaporated, about 2 minutes. Season with salt and pepper.
  • Transfer the corn mixture to a large bowl and add the crabmeat. Stir in the monterey jack, sour cream and 1/2 cup crushed crackers. Transfer to a 1-quart baking dish.
  • Combine the remaining 1/2 cup crushed crackers with the cheddar, chives and Old Bay in a medium bowl. Work the remaining 1 tablespoon butter into the crumb mixture with your fingers until combined. Sprinkle the crumb topping over the crab mixture. Bake until golden brown and heated through, about 20 minutes.
  • Serve with butter crackers or sliced baguette.

3/4 cup mayonnaise
1/4 cup freshly grated parmesan cheese
1/4 cup minced scallion
6 cloves roasted garlic
3 tablespoons Worcestershire sauce
2 tablespoons fresh lemon juice
1 teaspoon hot pepper sauce (I like Tabasco)
1/2 teaspoon dry mustard
salt (to taste)
black pepper (to taste)

Steps:

  • Pick through crab to remove any stray shells.
  • Mix together all ingredients and place in a small glass casserole dish.
  • Bake at 325F 30-35 minutes, or until hot and bubbly.
  • Serve warm, with cracker or toast.

1 can (6.5 oz.) lump crabmeat, drained, flaked
1 red pepper, chopped
1 jalapeño pepper, finely chopped
1/2 cup frozen corn, thawed
1/4 cup chopped fresh cilantro
1 cup KRAFT Real Mayo Mayonnaise
2 Tbsp. lime juice

Steps:

  • Combine crabmeat, peppers, corn and cilantro in medium bowl.
  • Mix mayo and lime juice. Add to crab mixture; mix lightly.
  • Refrigerate at least 30 min. before serving.

1/2 lb lump crabmeat, broken up
2 tablespoons sour cream
2 tablespoons green onions, minced
1 garlic clove, minced
2 teaspoons horseradish
1/2 cup grated cheddar cheese
2 teaspoons chopped fresh parsley
1/4-1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
chopped red bell pepper
chopped green onion

Steps:

  • Preheat oven to 375 degrees.
  • Lightly coat a square baking dish with non-stick spray.
  • Mix all ingredients, with exception of extra chopped green onion, and chopped red bell papper, in a large bowl. Spread mixture in baking dish.
  • Bake for 20 minutes, or until bubbly and lightly golden brown on top.
  • Remove from oven and garnish with chopped red bell pepper and chopped green onion.
  • Serve warm with crostini or bagel chips.

1 teaspoon Worcestershire sauce

Steps:

1 cup rice
2 tablespoons sunflower oil (or any cold-pressed vegetable oil)
1/4 cup onion, chopped
2 garlic cloves, chopped
1 tablespoon fresh ginger, chopped
soy sauce
1 cup celery, chopped
2 cups water
1/2 cup carrot, diced & steamed
1/2 cup fresh celery, chopped

Steps:

  • Brown rice briefly in the oil until brown.
  • In a blender, combine the onion, garlic, ginger and soy sauce and blend until liquid.
  • To the rice, add the water, the contents of the blender, and cook covered 30 minutes over a low flame.
  • After 30 minutes add the carrots and celery.
  • Cook 10 minutes more, covered.
  • Let stand five minutes before serving.

Creamy Crabmeat Corn Dip Sierra Madre image

I invented this for my young cousin's wedding reception. His outdoor-gear company's name is "Sierra Madre Research" so I thought something with a south-of-the-border flair might be tasty. IT IS! This would also work well with chopped shrimp or shredded cooked chicken, in which case you could kick the "heat" up a notch (I kept the spices on the milder side so as not to overpower the delicate crab flavor).

1/2 cup vidalia onion, finely chopped
1/2 cup red bell pepper, finely chopped
1 garlic clove, minced
1 (4 ounce) can diced green chilies
1/4 cup butter
1 teaspoon cumin
1/2 teaspoon cayenne pepper
2 teaspoons oregano
salt and black pepper
1 lb frozen white creamed corn, thawed
2 tablespoons sherry wine
4 ounces cream cheese, softened
8 ounces jalapeno pepper cheese, shredded
1/4 cup fresh cilantro, chopped
1 tablespoon fresh lime juice
1 lb lump crabmeat

Steps:

  • Melt butter in large skillet. Add vegetables and cook until soft. Stir in corn and sherry, cook another two minutes. Turn off heat, add cheeses, and stir until melted. Stir in lime juice and cilantro. Add crabmeat last, folding in gently so as not to break up the lumps too much. Serve hot or at room temperature, or even cold!
  • Serve with scoop-type chips or buttery crackers.
