CREAMY CRAB AU GRATIN
Red pepper sauce adds a little kick to a creamy crab mixture topped with crunchy bread crumbs.

Steps:
- Heat oven to 400°F. Lightly spray 11x7-inch (2-quart) glass baking dish with cooking spray.
- Spray 3-quart saucepan with cooking spray; heat over medium heat. Cook mushrooms and celery in saucepan about 4 minutes, stirring constantly, until celery is tender. Stir in broth. Heat to boiling; reduce heat.
- In small bowl, beat half-and-half, flour and pepper sauce with wire whisk until smooth; stir into vegetable mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in crabmeat.
- Spoon crabmeat mixture into baking dish. Top with bread crumbs. Bake uncovered about 15 minutes or until heated through.

- Preheat oven to 350°. Arrange fish and scallops in a greased 11x7-in. baking dish., In a small saucepan, melt 2 tablespoons butter. Stir in flour and pepper until smooth; gradually add broth and milk. Bring to a boil; cook and stir 2 minutes or until thickened. Stir in 1/4 cup of each cheese; set aside. , In a small skillet, saute mushrooms in remaining butter until tender; stir into cheese sauce. Spoon over seafood. Sprinkle with remaining mozzarella, cheddar and Parmesan cheese. Cover and bake 15-20 minutes or until bubbly and fish flakes easily with a fork. If desired, top with chives to serve.

- Melt butter. Add onions, celery, bell pepper and pimiento and saute until soft.
- Stir in flour and blend well.
- Add hot half and half, stirring; cook, stirring until sauce thickens.
- Add wine, salt, and cayenne.
- Spread crabmeat in buttered baking dish; spoon sauce over crabmeat and sprinkle with grated cheese.
- Bake in preheated 375 degree oven 15 to 20 minutes, or until bubbly.

- Preheat the oven to 200C/400°F.
- Flake the white crabmeat and combine with the brown crabmeat in a bowl and set aside.
- Melt the butter in a medium saucepan over medium heat. Add the flour and cook, whisking for one minute. In a separate pan, gently heat the double cream.
- Remove the butter and flour mixture from the heat and whisk in the heated cream. Return to the heat, gently bring to a boil, then simmer, whisking for a minute or two until thickened.
- Add three quarters of the cheese, the cayenne and paprika and two-thirds of the crab. Season with a little bit of salt and freshly ground pepper.
- Divide the remaining crabmeat between six ramekins. Top with the creamy crab and cheese mixture, and sprinkle the remaining cheese over the top.
- Place the ramekins onto a baking tray and bake in the preheated oven for 15 minutes or until bubbling hot and golden.
- Serve the crab au gratin with triangles of toasted fresh bread or rounds of ciabatta and a simple green herb salad.

- Preheat oven to 400 degrees F (200 degrees C). Lightly butter 8 small baking dishes.
- In a large skillet, heat olive oil over medium high heat. Saute shrimp and scallops until firm, about 5 minutes.
- In a medium saucepan, melt butter over medium heat. Stir in flour until smooth. Gradually add chicken broth and raise heat to high. Stir until thickened. Mix in shallots, mushrooms and wine. Cook for 5 to 10 minutes.
- Arrange shrimp, scallops and crab in the bottom of prepared dishes. Pour sauce over seafood and cover with cheese.
- Bake in preheated oven until golden, about 12 t o15 minutes. Sprinkle with parsley and serve.

NEW ORLEANS CRABMEAT AU GRATIN
This is such a good dish. I would order this every time we went to Don's Seafood Hut in Lafayette....still do when I go home to visit. I have tried many recipes, and this is the closest I can come to theirs. This is a collaboration of many different recipes I have tried.

Steps:
- Preheat oven to 375ºF.
- In a medium heavy bottomed saucepan, melt the butter over medium heat.
- Add the onions and garlic; sauté for 3-5 min or until vegetables are wilted. Be careful not to brown.
- Sprinkle in the flour, blending well into the mixture.
- Using a wire whisk, add the hot cream into the saucepan, stirring constantly until thick cream sauce is achieved.
- Reduce heat to a simmer.
- Add the white wine, lemon juice, nutmeg, and hot sauce, stir to combine.
- Sprinkle in half of the Cheddar cheese, stirring the mixture constantly.
- Season with salt and pepper to taste. If mixture becomes too thick, add a small amount of hot water or whipping cream.
- Place equal parts of the crabmeat in the bottom of 6 au gratin dishes, top with sauce-enough to cover and sprinkle with remaining cheese.
- Bake for 10 min or until cheese is bubbly.
- OR.
- Spread crabmeat on the bottom of an 8-inch baking dish, top with sauce, and sprinkle remaining cheese on top.
- Bake for 30 min or until cheese is bubbly and melted.

- Saute onions and celery in butter until wilted.
- Blend flour in well with this mixture.
- Pour in milk gradually, stirring constantly.
- Add egg yolks, salt, red and black pepper.
- Cook for 5 minutes.
- Put crabmeat in a bowl suitable for mixing and pour the cooked sauce over the crabmeat.
- Blend well and then transfer to a lightly greased casserole and sprinkle with grated American Cheese Bake at 375 for 10- 15 minutes or light brown.

This recipe comes from a famous New Orleans restaurant but I don't remember which one! However, I remember the taste of the dish and have been trying to duplicate for years. This is very good!

- In a heavy saucepan, over moderate heat, melt butter, add onions and celery.
- Cook, stirring occasionally until onions are soft and transparent but not brown.
- Stir in the flour, blend well.
- Add milk, stirring constantly until smooth.
- Add pepper, nutmeg, mustard and cheese.
- Take pot away from heat.
- Beat egg yolk and lemon juice.
- Then add crabmeat, mix well.
- Butter baking pan or individual baking dishes.
- Add onion/cheese mixture to baking pan.
- Pour egg mixture over all.
- Combine cheese and breadcrumbs, sprinkle over top of mixture, then add dash of paprika.
- Bake at 350 degrees F for 15 to 20 minutes until top is au gratin, brown and crusty.

- Preheat broiler.
- In a small heavy saucepan cook carrot, celery, and bell pepper in butter over moderate heat, stirring, 1 minute.
- Add broth, wine, and tarragon and boil mixture until liquid is reduced to about 1 tablespoon.
- Add cream, ¼ cup Parmesan, and boil sauce until thickened, 1- 2 minutes.
- Stir in crab meat, lemon juice, and salt and pepper to taste and divide mixture between two 1-cup shallow baking dishes.
- Sprinkle remaining Parmesan over mixture and set dishes in shallow baking pan.
- Broil gratin about 4" from heat 2 minutes, or until bubbling and golden, and serve with toasts.
- Serve with thinly sliced French bread, lightly toasted.
- Variation: Using Portabello Mushrooms: Remove gills and broil (gill side down) about 2 minutes. With gill side up fill with mixture and return to broiler until golden on top.
