- 1. I washed and dried potatoes. Cut a slice into the tops of each and microwaved for 10 minutes. You want them cooked, but not mushy as you will be cutting them into chunks. Once cool enough to handle. Cut each potato into. Depending how big the potato is, cut each halve 2 - 3 times lengthwise, then cut into cubes crosswise. I use my iron skillet for fried potatoes. Any non stick skillet will work. Pour enough bacon fat into pan to cover bottom. Heat the fat over medium. Once good and hot, add the potatoes and onion. Sprinkle the top evenly with creole seasoning and garlic pepper. Add dollops of the garlic paste here and there. Let potatoes start browning, turning occasionally and adding vegetable oil as needed. The potatoes will soak up the initial bacon fat. So, just keep adding a little oil here and there as needed until potatoes are desired crispness. Salt if needed - I didn't.

- 1. Peel and rinse potatoes. Cut into pieces and put into a large saucepan. Peel and quarter onion and put into pan with potatoes. Cover with water bring to a boil. Cover and cook until tender.
- 2. When potatoes are done, pour off most of the water. It's okay if there's a little water left with the potatoes. Add milk, butter, salt and pepper.
- 3. Cook over medium heat, stirring constantly until butter is melted and potatoes have thickened. This usually only takes a few minutes. Do not mash, but leave in chunks. Serve with your favorite meat and vegetables.
UNCLE BILL'S FRIED POTATOES AND ONIONS
I remember my Grandmother making this marvelous dish over 65 years ago. We were the only vegetarians in our family and therefore Grandma cooked just to please me. A very easy, simple but tasty side dish. Young potatoes are especially good.

- Peel and slice potatoes about 1/8 inch thick or thinner.
- Slice onion thinly.
- In a large frying pan on medium-high heat, melt butter, add olive oil.
- Add sliced potatoes and onions, cover and fry for 10 minutes. Using a spatula, turn the potatoes and onions over so they do not break apart. If potatoes appear too dry, add some additional butter.
- Sprinkle with granulated garlic powder, dried dill weed, salt and pepper and continue to fry with cover removed for another 5 minutes or until potatoes begin to turn slightly brown; turning occasionally.
- Serve hot with your meal.
- Note: You may use 2 or 3 large garlic cloves (chopped small), instead of granulated garlic powder. Add to the potatoes after the first 10 minutes of cooking time.
REDNECK FRIED TATERS AND ONIONS WITH HOT DOGS

My husband loves my fried taters. It's just something I've whipped up and the spices are more to the person's taste than anything. They can be a bit spicy so you can hold back on the salt. Let me know what you think.

- In a large skillet, pour the olive oil and heat on med-high heat.
- Wash potatoes well and cut with skin on into thin cubes or triangles.
- Add potatoes to skillet.
- Next sprinkle the lemon& pepper, garlic salt, garlic powder and essence over the potatoes as you turn them to make sure you get all of the potatoes.
- Lower your heat to medium and turn potatoes until browned on each side.

- Put a large skillet on the stove on Med High. Put oil in the pan and add the chopped onions and garlic. Peel and cube the potatoes. The smaller the cube the less cooking time. Add salt and pepper to season accordingly to your taste. Turn the potatoes every few minutes till they are browned on all sides. Slice the smoked sausage (I use the skinless with cheese inside) and add to the pan. Cover then stir every few minutes. We like the meat really browned so I turn up the heat to high till the sausage slices are the right color.
- Serve with a salad and some sweet tea, and you have the perfect midweek meal.
