Time 1h

Yield 45 servings

Number Of Ingredients 9

1 c. unsalted butter (no substitutions), at room temperature
1/2 c. granulated sugar
1 large egg
1 tbsp. vanilla extract
3 c. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. kosher salt
Assorted colored granulated sugars for decorating
Ornamental Frosting

Steps:

  • Preheat oven to 350ºF. In large bowl, with mixer at low speed, beat butter and sugar until blended. Increase speed to high, beat until light and creamy. At low speed, beat in egg and vanilla. Beat in flour, baking powder, and salt just until blended.
  • Divide dough into 4 equal pieces. Wrap each piece with plastic wrap and refrigerate until firm enough to roll, about 1 hour.
  • On lightly floured surface, with floured rolling pin, roll 1 piece of dough 1/8 inch thick. With floured 2- to 3-inch assorted cookie cutters, cut dough into as many cookies as possible, wrap and refrigerate trimmings. Place cookies, 1 inch apart, on large ungreased cookie sheet, sprinkle cookies with colored sugar now if you like, or frost with Ornamental Frosting after baking.
  • Bake cookies 10 to 12 minutes, until lightly browned. Transfer cookies to wire rack to cool. If you like, brush colored sugar remaining on cookie sheets onto piece of waxed paper to use again. Repeat with remaining dough and trimmings.
  • When cookies are cool, prepare Ornamental Frosting if you like, use to decorate cookies as desired. Sprinkle colored sugars as desired on frosting before it dries. Allow frosting to dry completely, about 1 hour. Store cookies in tightly covered container up to 2 weeks.

CREAMY CHRISTMAS BUTTER COOKIES

Creamy Christmas Butter Cookies image

These are very simple cookies -- simple to make and simple to decorate. Just roll dough into balls, imprint each ball with a fork, and sprinkle with colored sugar. The result is an attractive, melt-in-your-mouth delicious, perfect-for-Christmas cookie you'll be proud to share with friends and family. These cookies are delicate and buttery. It's easy to change the color of the sugars to fit any occasion, too!

Provided by Lorraine of AZ

Categories     Dessert

Time 20m

Yield 48 cookies

Number Of Ingredients 9

8 ounces unsalted butter, softened (2 sticks)
1 1/2 cups confectioners' sugar
1 teaspoon vanilla extract
1 large egg
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1/4 teaspoon salt
colored sanding sugar (red, green or color of choice)

Steps:

  • Preheat oven to 350 degrees F. Grease 2 cookie sheets.
  • In a large bowl of an electric mixer at medium speed, mix butter, sugar and vanilla just until blended.
  • Add the egg and mix well.
  • In a separate bowl, mix together the flour, soda, cream of tartar, and salt. Add to the butter mixture and mix at low speed until well combined.
  • Shape the dough into 3/4-inch balls. Arrange the balls 2-inches apart on the cookie sheets. Flatten each ball with a fork as you would a peanut butter cookie. Do this one time. To prevent the fork from sticking to the cookie dough;, dip it occasionally in confectioners' sugar. Sprinkle tops of the cookies with colored sanding sugar.
  • Bake 8-10 minutes or until lightly colored around the edges. Let cookies cool on the cookie sheets for 5 minutes, then transfer to a wire rack to cool completely.

CREAM CHEESE CHRISTMAS (HOLIDAY) COOKIES

Cream Cheese Christmas (Holiday) Cookies image

My Grandmother taught me this recipe when I was very young. Now, I can't go a Christmas without making these cookies! I usually make a double batch of these and pass them out to everyone, but here's the recipe for a single batch. You can also use this recipe for ANY holiday, not just Christmas.

Provided by k k Nye

Categories     Dessert

Time 55m

Yield 5-6 dozen cookies, 32-38 serving(s)

Number Of Ingredients 8

1 cup sugar
1/2 teaspoon salt
1 cup softened butter
3 ounces softened cream cheese
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1 egg yolk
2 1/4 cups flour

Steps:

  • Mix sugar, salt, butter, cream cheese, almond and vanilla extract, and egg yolk together well.
  • Stir in flour until well blended.
  • Chill dough for at least 30 minutes (I've chilled mine a little less than 24 hours but I wouldn't suggest going over that.).
  • After You've taken the dough out of the chilled area (sometimes I use the garage) Preheat oven to 375 degrees F.
  • On a lightly floured surface roll out 1/3-1/2 of the dough.
  • Cut the dough to holiday shapes and place on an ungreased pan. (The cookies do not expand very much while cooking, so you can place them close together.).
  • Here's where you can use the egg white! Spread the egg white over the top of the cookie and add sprinkle if you would like, or leave them plain and add frosting later!
  • Bake the cookies 10 minutes (or until they're a light brown).
  • Let cookies cool completely before adding any frosting.

  • Preheat your oven to 375 degrees F. In a large bowl, add the softened butter, sugar, and salt. Cream everything together until the sugar has dissolved and the mixture is light yellow and fluffy, about 2 to 3 minutes. You can use a hand mixer on high speed or use a whisk by hand.
  • Next, add the egg and vanilla into the bowl and beat it together until it's fully incorporated. About 1 minute.
  • Sift in the cake flour in three parts and mix together on medium speed until the flour is fully incorporated. The dough will be thick and sticky. Be careful not to over mix the dough as you want to minimize gluten development.
  • Transfer the dough into a piping bag fitted with a large closed star tip. I use Ateco piping tips. I recommend Ateco 846 or Ateco 844. Line a baking sheet with parchment paper or a silicone baking mat. Pipe rosettes, straight lines, or any other shape you want.
