CREAMY CHICKEN AND ROASTED CAULIFLOWER PASTA WITH SPINACH AND SUNDRIED TOMATOES



Creamy Chicken and Roasted Cauliflower Pasta with Spinach and Sundried Tomatoes image

Number Of Ingredients 25

1/2 lb. thin spaghetti pasta, cooked according to package
1lb. roasted cauliflower (recipe follows)
Chicken
4 tablespoons olive oil
2 lbs. chicken tenderloins
3 teaspoons kosher salt
2 teaspoons coarsely ground black pepper
2 teaspoons McCormick's Cajun Seasoning
Sauce
1 tablespoon olive oil
2 tablespoons butter
1 shallot, finely chopped
1 garlic clove, finely chopped
2 tablespoons flour
1 cup chicken stock
2 cups milk
1/2 cup parmesan cheese
1 teaspoon McCormick's Cajun Seasoning
1 1/2 teaspoon garlic powder
1 1/2 teaspoon onion powder
1 teaspoon kosher salt
4oz. baby spinach
Garnish
1/4 cup chopped sun-dried tomatoes, (drained of oil)
2 tablespoons chopped chives

Steps:

  • To make the chicken: Drizzle 3 tablespoons olive oil over chicken and toss to coat. Season both sides of chicken with kosher salt, black pepper and McCormick's Cajun seasoning. Heat the remaining tablespoon of olive oil in large frying pan over medium high heat. Add the chicken, making sure not to crowd the pan (cook in two batches if needed), and cook for 3 minutes, then turn chicken and cook for another 3 minutes. Remove the chicken and transfer it to a plate and set aside to make the sauce. Scrape up any burnt or severely browned chicken bits from the bottom of the pan and discard.
  • To make the sauce: Using the same pan, add the olive oil and the butter. Add in the shallots, stir and cook until translucent, about 1 to 2 minutes. Add the garlic and cook for another 30-seconds. Sprinkle flour on top, stir and scrape the pan until a paste-like texture appears, about 1 minute. Stir in chicken stock, add the milk and whisk until well blended. Add the cheese and stir constantly until cheese is fully melted. Stir in the cajun seasoning garlic powder, onion powder and kosher salt, whisk until blended. Turn off heat and remove pan from the stove top. (Sauce will be appear thin at this point, but will thicken as it cools. Don't be tempted to add more cheese of flour, or else the sauce will be too thick once the pasta and spinach is added).
  • To assemble: Add the spinach and stir until wilted. Add the chicken and pasta and toss to coat. Garnish with sun-dried tomatoes and chives. Serve immediately.
  • To roast the cauliflower: Heat oven to 395 degrees F. Trim and slice cauliflower into 1/4-inch thick slices. Place slices onto a baking sheet and toss drizzle about 3 tablespoons of olive oil. Season generously with salt and pepper toss to coat. Bake until cauliflower starts to caramelize at the edges, about 25 to 30 minutes.

This cauliflower pasta recipe was given to me by friends in Sweden. It is one of my husband's all-time favorite meals and is often requested by friends.

1 medium head cauliflower, broken into small florets
½ cup salted butter
1 medium onion, diced
1 tablespoon red pepper flakes, or to taste
2 pints heavy cream
1 (16 ounce) package farfalle pasta
1 (14.5 ounce) can diced tomatoes
1 cup grated Parmesan cheese, or more to taste

Steps:

  • Place cauliflower into a large pot of salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Remove cauliflower with a strainer, reserving the cooking water in the pot.
  • Melt butter in a large skillet over medium-high heat. Add onion and cook until transparent, about 5 minutes. Add cauliflower florets and red pepper flakes; saute until browned, 7 to 10 minutes. Add heavy cream; cook until reduced by half, 10 to 15 minutes.
  • Meanwhile, bring the cauliflower cooking water back to a boil. Add farfalle and cook, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
  • Add tomatoes to the cauliflower sauce; cook until heated through, about 1 minute. Add 1 cup Parmesan cheese to the cauliflower sauce; cook and stir until melted, about 1 minute more.
  • Combine pasta and sauce; toss until well coated. Sprinkle with additional Parmesan cheese to serve.

Rigatoni pasta in a creamy cauliflower sauce served with crisp, golden garlic breadcrumbs is an easy, delicious vegetarian dinner recipe.

500 g (1lb) cauliflower (chopped )
1 onion (finely chopped)
4 garlic cloves (crushed )
1 tsp dried thyme
pinch chilli flakes
1 cup stock/water
1 cup cream
salt and pepper
2 tbsp butter
2 garlic cloves (crushed)
2 cups grated ciabatta bread (or use any fresh breadcrumbs of your choice )
salt and pepper
500 g (1lb) rigatoni pasta
parmesan
fresh parsley (chopped)

Steps:

  • In a large, deep pan or skillet, add a few teaspoons of olive oil then add the onion.
  • Sauté until soft and translucent then add the garlic, thyme and chilli flakes. Cook for another minute then add the chopped cauliflower.
  • Sauté until the cauliflower starts to soften then pour in the stock or water.
  • Season with salt and pepper then reduce the heat and partially cover with a lid. Allow the cauliflower to cook until completely soft.
  • Pour in the cream, allow to simmer for another 5 minutes. Taste and adjust seasoning if necessary.
  • In a frying pan set over medium high heat, melt the butter.
  • Add the garlic and breadcrumbs then cook, tossing regularly, until the breadcrumbs are crisp and golden.
  • Season with salt and pepper and set aside.
  • Bring a large pot of salted water to the boil.
  • Once boiling, add the rigatoni and cook for 9-11 minutes, or until al dente.
  • Reserve 1 cup of cooking water then drain.
  • Toss the pasta with the cauliflower sauce and add a splash of the cooking water, if necessary.
  • Serve the creamy cauliflower rigatoni in bowls and top with the crispy breadcrumbs, grated parmesan cheese and fresh parsley.

Creamy cauliflower chicken with chunky bacon lardons is an easy comfort food dinner. Delicious served with creamy mash to soak up the sauce.

500 g (1lb) chicken breasts
250 g (½lb) bacon
1 onion (finely chopped )
4 garlic cloves (crushed )
3 cups cauliflower (sliced into small florets )
1 tsp fresh thyme
1 cup chicken stock
1 cup cream
1 tsp lemon juice
salt and pepper (to taste )

Steps:

  • Place chicken breasts in between two sheets of parchment paper and gently thin out with a meat mallet or rolling pin.
  • Drizzle with a little oil and season on both sides with salt and pepper.
  • Heat a large, deep pan over medium-high heat. Add the chicken breasts then allow to cook for 2-3 minutes per side until golden brown. Remove and set aside.
  • the same pan, add the bacon and cook until crisp and golden. Remove and set aside.
  • Drain off the bacon fat, leaving 1-2 tablespoons behind.
  • Add the onion and garlic to the pan and sauté until soft and fragrant.
  • Add the cauliflower florets and thyme and cook for 5 minutes. Pour in the chicken stock, cream and lemon juice then season with salt and pepper.
  • Allow to simmer until the cauliflower is almost tender.
  • Add the chicken back to the pan along with any of its resting juices and allow to cook for another 5 minutes until the chicken is heated through and cooked throughout.
  • Serve with side dishes of your choice.

300g dried penne
2 tsp olive oil
1 garlic clove, crushed
75g baby spinach leaves
250g soft cheese
25g parmesan
4 cooked chicken breasts (about 450g), shredded with a fork
100g frozen peas
small bunch of parsley or basil, chopped

Steps:

  • Cook the pasta following pack instructions. Reserve 100ml of the water and drain the pasta in a colander.
  • Meanwhile, heat the oil in a frying pan on a medium heat and fry the garlic and spinach for 3 mins until wilted. Add the soft cheese and heat until melted. Stir in most of the parmesan, then add the shredded chicken, peas and some of the pasta water. Bring to the boil and bubble for 2-3 mins until the chicken and peas are completely heated through.
  • Add the pasta and stir until combined. Add more pasta water to loosen the sauce, if needed. Remove from heat, sprinkle over the remaining parmesan and parsley or basil to serve.

2-1/2 cups penne pasta, uncooked
1 Tbsp. oil
2-1/2 cups small cauliflower florets (about 1/2 small head), finely chopped
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
6 KRAFT Singles, cut up
1/2 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
1/4 cup chopped fresh parsley
2 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Cook pasta as directed on package.
  • Meanwhile, heat oil in large nonstick skillet on medium-high heat. Add cauliflower; cook and stir 5 min. Remove from skillet; cover to keep warm. Add chicken, in batches, to skillet; cook 3 min. or until evenly browned, stirring frequently. Return all chicken and cauliflower to skillet; cover. Cook on medium-low heat 2 min. or until heated through, stirring occasionally.
  • Drain pasta, reserving 1-1/2 cups cooking water. Return pasta to pan; stir in reserved water and Singles. Cook on medium heat 2 min. or until Singles are completely melted and sauce is well blended. Add to chicken mixture in skillet with mozzarella; cook 2 min. or until mozzarella is melted, stirring frequently. Sprinkle with parsley and Parmesan.
