6 cups uncooked cavatappi or spiral pasta
3 garlic cloves, minced
1/3 cup butter
1/4 cup all-purpose flour
1 tablespoon hot pepper sauce
4 cups 2% milk
6 cups shredded sharp cheddar cheese
1 cup cubed Velveeta
3 green onions, chopped
TOPPINGS:
1/2 cup panko bread crumbs
3 thick-sliced bacon strips, cooked and coarsley crumbled
1 tablespoon butter, melted
1 green onion, chopped
Coarsely ground pepper, optional

Steps:

  • Cook cavatappi according to package directions., Meanwhile, saute garlic in butter in a Dutch oven. Stir in flour and pepper sauce until blended; gradually add milk. Bring to a boil; cook and stir until thickened, about 2 minutes., Stir in cheeses until melted; add green onions. Drain cavatappi; stir into cheese mixture., Transfer to a greased 13x9-in. baking dish. Combine the bread crumbs, bacon and melted butter; sprinkle over top., Bake, uncovered, at 350° until bubbly, 20-25 minutes. Sprinkle with green onion and, if desired, pepper.

Lobster Mac and Cheese is a delicious seafood pasta recipe made with chunks of precooked lobster, mozzarella, cheddar and Swiss cheese.

4 cups cavatappi noodles
1/4 cup butter
1/2 tbsp garlic puree
1/4 cup all purpose flour
4 cups milk
1 tbsp onion powder
1 tsp salt
1 tsp pepper
7 oz precooked lobster chunks (usually found in the frozen section of the grocery store, thaw before using)
1/3 cup fresh chives, chopped
3 cups shredded mozzarella and cheddar cheese blend
1 cup shredded Swiss cheese

Steps:

  • Cook cavatappi noodles according to instructions on package.
  • Drain pasta, rinse and set aside.
  • Dump butter into a large pot over medium-high heat.
  • Add the garlic puree to the pot.
  • Once the butter is completely melted, add the flour to the pot and stir well.
  • Leave the flour to cook until it just starts to brown slightly.
  • Then add the milk to the pot and stir well.
  • Add the onion powder, salt and pepper to the pan.
  • Whisk until smooth and then bring the liquid to a boil.
  • Once the liquid is boiling, add the cooked noodles to the pot.
  • Stir until the noodles are coated in the sauce.
  • Then add the chunks of lobster meat and chopped chives to the pot.
  • Stir well and leave to cook for 3 minutes.
  • Then reduce the heat to low and add the shredded mozzarella, cheddar and Swiss to the pot.
  • Stir until the cheese is completely melted.
  • Serve and enjoy!

Number Of Ingredients 14

kosher salt
vegetable oil
1 lb cavatappi pasta or 1 lb elbow macaroni
1 quart milk
8 tablespoons unsalted butter, divided
1/2 cup all-purpose flour
12 ounces gruyere cheese, grated (4 cups)
8 ounces extra-sharp cheddar cheese, grated (2 cups)
4 ounces blue cheese, such as Roquefort, crumbled
1/2 teaspoon fresh ground black pepper
1/2 teaspoon nutmeg
crushed red pepper flakes (optional)
1 1/2 lbs cooked lobster meat
1 1/2 cups fresh white breadcrumbs (5 slices, crusts removed)

Steps:

  • Try Ina's variation on this dish with lobster!
  • Preheat the oven to 375ºF.
  • Drizzle oil into a large pot of boiling salted water.
  • Add pasta and cook according to the directions on the package, 6 to 8 minutes; drain well.
  • Meanwhile, heat the milk in a small saucepan, but don't boil it. In a large pot, melt 6 tablespoons of butter and add the flour.
  • Cook over low heat for 2 minutes, stirring with a whisk.
  • Still whisking, add the hot milk to form a thick and creamy sauce, and cook for a minute or two more until thickened and smooth.
  • Off the heat, add the Gruyere, cheddar, Roquefort, 1 tablespoon salt, the pepper, nutmeg and crushed red pepper flakes, if using.
  • Add the cooked macaroni and lobster and stir well.
  • Place the mixture in 6 to 8 individual gratin dishes.
  • Melt the remaining 2 tablespoons of butter, combine them with the fresh breadcrumbs, and sprinkle on the top.
  • Bake for 30 to 35 minutes, or until the sauce is bubbly and the macaroni is browned on the top.
  • Enjoy!

This is based off a red pepper cream sauce recipe, sans red pepper flakes. After I make that again (I haven't made it in awhile) I'll post it in its entirety. Actually, believe it or not, being the gourmand I am, I was craving the basil cream sauce from none other than Pizza Port at Disneyland. I will say, their basil cream sauce with cavatappi is fantastic! Truly so. Anyway, this recipe still needs some tweaking, but, as is, it's pretty good and will satisfy me tonight.

2 tablespoons butter (or butter substitute)
1 1/2 tablespoons flour (I used just over 2 tonight for an extra-creamy sauce)
1 cup milk
1 teaspoon salt (plus more to taste)
1/2 cup good parmigiano-reggiano cheese (good cheese can really make a difference, look for "Parma" on the rind if you buy it in a block)
1/4 teaspoon fresh ground black pepper (to taste)
2 -4 tablespoons freshly chopped basil
1 dash garlic powder
1/2 cup shredded roasted chicken (I buy the rotisserie chickens from the market. This step is optional.)
1 1/2 cups dried cavatappi pasta

Steps:

  • If putting this over pasta, start your water boiling first, and add pasta when water comes to a boil.
  • Melt the butter.
  • Add flour and cook to make light roux.
  • Stir in milk, salt, pepper, parmigiano-reggiano, garlic powder, chicken, and basil over low-med heat.
  • Cook until creamy and thick, or to the consistency you like. I find that I have to turn the heat down to low as the sauce begins to come together.

1 -2 garlic clove, minced
1 (8 ounce) tomato sauce
4 teaspoons all-purpose flour

3/4 cup half-and-half
1/2 cup 2% low-fat milk
1/3 cup vodka
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1/2 cup grated fresh parmesan cheese
2 tablespoons finely chopped fresh basil

Steps:

  • Cook pasta by following package directions, omitting salt and fat; drain.
  • Melt butter in a medium saucepan over medium heat.
  • Add in onion and garlic; cover and cook 3 minutes or until tender.
  • Add in tomato sauce; simmer, partially covered, 8 minutes or until thick.
  • Combine flour and water, stirring with a whisk until smooth; add flour mixture to pan; cook 1 minute.
  • Add in half-and-half, milk, vodka, salt, and pepper; bring to a boil.
  • Stir in cheese; decrease heat to low; cook 3 minutes or until cheese melts, stirring frequently.
  • Add in pasta; toss to coat; sprinkle with basil.

12 ounces cavatappi pasta or 12 ounces campanelle pasta
2 teaspoons olive oil
1 small onion, chopped
1 (8 ounce) package sliced mushrooms
1 tablespoon cornstarch
1 1/2 cups milk
1/2 cup freshly grated parmesan cheese, plus additional for serving
salt and pepper
1 (10 ounce) package frozen peas
8 ounces deli-sliced ham, cut into 1/2-inch-wide strips

Steps:

  • Heat large covered saucepot of salted water to boiling on high. Add pasta and cook as label directs.
  • Meanwhile, in 12-inch skillet, heat oil on medium until hot. Add onion and cook 3 minutes or until beginning to soften. Increase heat to medium-high, and stir in mushrooms; cook 8 to 10 minutes or until mushrooms are golden and most liquid evaporates, stirring frequently. Transfer mushroom mixture to small bowl.
  • In 2-cup liquid measuring cup, whisk cornstarch into milk; add to same skillet and heat to boiling on medium, whisking frequently. Boil 1 minute, stirring constantly to prevent scorching on bottom of skillet. Remove skillet from heat and whisk in 1/2 cup Parmesan, 1/4 teaspoon salt, and 1/4 teaspoon freshly ground black pepper.
  • Place peas in colander. Pour pasta over peas; drain and return to saucepot. Stir in mushroom mixture, cheese sauce, and ham; toss to coat. Serve with freshly grated Parmesan.
