A naturally vegan, creamy broccoli and bean soup that comes together in under thirty minutes.

3 tablespoons olive oil
1 medium yellow onion, diced small
3 garlic cloves, minced
1/4 cup dry white wine
1 can white beans
3 cups low-sodium vegetable broth
1 pound broccoli florets
2 cups baby spinach (see notes)
1/4 cup fresh parsley
1/4 teaspoon fine sea salt
1/2 teaspoon black pepper
red onions (to garnish)
dairy or non-dairy yogurt (optional garnish)

Steps:

  • Heat the olive oil in a large pan over low heat, and sauté the onions for 5 minutes.
  • Turn the heat up to medium, and add in the garlic. Sauté for 1 minute. Then pour in the white wine, stir and cook for 1 minute. Then stir again and simmer for 2 minutes or until the wine has mostly evaporated.
  • Drain and rinse the beans and add to the pan. Then add in the broth, broccoli, greens, parsley, salt and pepper, and cover. Simmer for 5 minutes or until the broccoli is bright green and tender throughout.
  • Then transfer the cooked broccoli and bean soup into a blender and blend until completely smooth. You may need to do so in small batches.
  • Serve warm with a sprinkle of red onions, more parsley and black pepper, a drizzle of olive oil, and dollop of yogurt if you desire.

1 shallot (thinly sliced)
1 garlic clove (thinly sliced or minced)
¼ teaspoon chili flakes
1 head of broccoli (450 grams- 1 pound) (cut into florets)
1 can cannellini beans (400 grams - 14 ounces) (drained and rinsed)
3½ cups (840 ml) vegetable stock (low sodium)
salt and freshly ground black pepper (to taste)
sunflower seeds
chili flakes
fresh oregano
freshly ground black pepper

Steps:

  • Heat the oil in a large pan over medium heat, and sauté the shallot until soft.
  • Add the garlic and sauté for 1 minute or until fragrant.
  • Add the broccoli, beans and vegetable stock. Cover and simmer until the broccoli are tender. This will take about 5 minutes. Season with salt and pepper.
  • Using an immersion blender, a blender, or a food processor, blend the soup until completely smooth.
  • Serve this creamy broccoli white bean soup in bowls garnished with sunflower seeds, chili flakes, fresh oregano, and freshly ground black pepper.Enjoy!

1 head broccoli (1 pound), cut into florets, stems thinly sliced
2 tablespoons extra-virgin olive oil
1 yellow onion, diced

Steps:

  • Steam broccoli florets and stems until tenderand bright green, about 3 minutes. Let cool slightly.Reserve 1/2 cup florets for garnish.
  • Heat oil in a medium pot over medium heat. Saute onion and garlic until translucent, about 6 minutes.Add beans and stock and bring mixture to a simmer.Remove from heat and add broccoli; puree in batches in a blender until smooth. I found this recipe on eatingwell.com, and it is SO delicious!! I paired it with a grilled cheese (on light bread w/ FF cheese, of course!) and an apple, and it made for a perfectly satisfying and filling lunch. The original recipe called for shredded sharp cheddar, but I subbed in fat free shredded cheddar to cut down on fat & calories. Also, the recipe originally made 6 1-cup servings. However, since I used fat free cheese, I changed the servings to 4 1.5-cup servings without changing the calories per serving very much at all...but you can do what fits you best :).

1 cup water
1 lb broccoli (I used a 1-lb bag of frozen chopped broccoli)

1/4 cup (60 ml) vegan butter or olive oil
5 cups (360 grams) broccoli, chopped (approx. 2 heads)
2/3 cup (100 grams) chopped carrots (approx. 2 carrots)
2/3 cup (100 grams) chopped celery (approx. 2 ribs)
2/3 cups (100 grams) chopped onion, (approx. 1 onion)
2 cloves garlic, minced
6 tbsp (65 grams) flour
4 cups (1000 ml) vegetable broth
2 cups (500 ml) original or unsweetened non-dairy milk (I recommend original cashew)
3/4 cup (185 ml) full-fat canned coconut milk (or sub with more non-dairy milk)
1/4 cup (20 grams) nutritional yeast flakes (or sub with vegan cheese shreds)
1 tsp (5 ml) white wine vinegar or lemon juice
1/2 tsp (2.5 ml) salt, to taste
Black pepper, to taste
1 cup (70 grams) broccoli florets
1 tbsp (15 ml) olive oil

Steps:

  • In a medium saucepan, heat vegan butter or olive oil over medium heat. Add the broccoli, carrot, celery, onion, and garlic. Sauté until onion is translucent and just tender, about 5 minutes.
  • Sprinkle vegetables with flour. Cook for 1-2 minutes, stirring often.
  • Gradually add vegetable broth and non-dairy milk, stirring constantly to prevent lumps. Add the coconut milk and nutritional yeast. Simmer soup over medium-low heat for 10-15 minutes, or until the vegetables are tender.
  • Blend the soup to your liking. I recommend puréeing ½ to ⅔ of the soup smooth.
  • If desired, adjust consistency with vegetable broth or non-dairy milk. Stir in white wine vinegar. Taste and adjust seasoning with salt, pepper, vinegar, (and if desired, sugar if using unsweetened non-dairy milk - refer to recipe notes).
  • In a separate saucepan or skillet, heat olive oil over medium heat.
  • Add the broccoli florets and sprinkle with salt. Sauté until just nearly tender. Turn the heat up to high and continue to cook, stirring sporadically, until the broccoli has a nice brown/black edge on at least 1 side. Remove from heat and set aside.
  • Ladle soup into bowls. Drizzle with a little bit of olive oil, top with browned broccoli florets, vegan cheese shreds (optional), and cracked black pepper. Serve with crackers, bread, sandwich or salad. Enjoy!

1 onion, diced
2 stalks celery, diced
4 cloves garlic, finely chopped
3 cups cooked cannellini or Great Northern beans or 2 15-ounce cans, drained
1 3-inch piece of Parmesan or Pecorino rind
6 cups vegetable stock, chicken stock or water (or a combo)
1 teaspoon sea salt
4 cups broccoli florets cut into 1-inch pieces (about 10 ounces)
2 teaspoons balsamic vinegar (dark or white)
Freshly ground black pepper
¼ cup shredded or coarsely grated Parmigiano-Reggiano (optional)

Steps:

  • Heat the oil and butter over medium heat in a 3-quart saucepan; add the onions, celery, and garlic. Saute until the vegetables are softened but not browned, about 6-8 minutes.
  • Add the beans, cheese rind, stock/water and salt and bring to a boil. Reduce heat, partially cover and simmer for 20 minutes.
