- In a medium bowl, combine graham cracker crumbs, sugar and melted butter, mix until well combined
- Press almost 2/3 of the crumb mixture onto bottom of the prepared 9x9 inch dish by lightly greasing the edges of the dish with cooking spray, set in the freezer to firm while making filling
- Place bananas and lemon juice in a blender and pulse until mixture is pureed, set aside
- In medium bowl, mix cream cheese and powdered sugar until smooth and creamy
- In separate bowl, whip heavy cream until soft peaks form
- Add cream cheese mixture into beaten heavy cream mix on low speed just to combine
- Add condensed milk, vanilla extract and mashed bananas and beat until combined
- Spread the filling over chilled crust and sprinkle with remaining graham cracker crumbs
- Freeze at last 6 hours or overnight

Banana Cream Pie Bars are a delicious no bake dessert! They start with a cookie crust, a homemade cheesecake filling, and banana pudding, all topped with a creamy whipped topping!

- Grind up Vanilla Wafer Cookies in a blender, until a fine crumb is reached.
- Mix crushed cookies and melted butter in a small bowl.
- Pour into the bottom of an 8x8 or 9x9 pan, lined with foil, for easier cutting and clean up.
- Place in the fridge for 10 minutes.
- Beat cream cheese until smooth.
- Add in sugar and beat for 2-3 minutes until smooth and creamy.
- Fold in the cool whip.
- Spread layer evenly over the top of the cookie crust.
- Add pudding mix to a large bowl, and pour in milk.
- Whisk for about 2 minutes until pudding starts to thicken.
- Fold in 1/2 cup of Cool Whip
- Pour pudding over the cheesecake layer and smooth top.
- Carefully spread remaining Cool Whip over the top and spread till smooth.
- Place in the fridge for about 3 hours before serving.
- Carefully lift edges of foil to remove the whole dessert, before slicing to make easier removal. Enjoy!
FANTASTIC BANANA CREAM PIE WITH BANANA GRAHAM CRUST
To save some time the crust may be prepared and baked 24 hours in advance. It is important to leave the finished pie chill for a minimum of 8 hours or overnight, if you make the mistake of cutting into it any earlier the custard mixture might fall apart --- this pie is delicious!

- To make the crust: set oven to 350°F.
- For the crust; in a bowl stir together the cracker crumbs, sugar and mashed banana.
- Add in the melted butter and stir to moisten.
- Press into bottom and up sides of a deep-dish 10-inch glass pie dish.
- Refrigerate for about 40 minutes until firm.
- Remove from the fridge and bake for about 15 minutes; cool completely.
- For the filling: In a heavy-bottomed saucepan whisk together cornstarch, sugar and salt to blend.
- Whisk in the whipping cream and whole full-fat milk, then egg yolks.
- Scrape the vanilla bean seeds and then add them in with the whole bean (if using).
- Bring to medium-high heat and whisk until the custard thickens and simmers (about 6 minutes).
- Remove from heat. Whisk in butter, vanilla extract and 1/4 teaspoon banana extract (if using).
- Transfer the cooked thickened custard to a bowl; cool completely for about 1 hour, stirring or whisking occasionally.
- When ready to fill the pie crust, spread 1 cup of the custard over the bottom of prepared crust.
- Top with half of the bananas (about 2-1/2 bananas).
- Then top with the remaining custard covering the bananas totally.
- Repeat layering with remaining bananas and then remaining custard on the top.
- Chill for a minimum of 8 hours (overnight is even better), or until the filling is completely set.
- Cut pie into wedges and top with a dollop of whipped cream if desired.

- For the crust: Preheat the oven to 350 degrees F. Brush a 9-inch pie plate with butter to grease.
- In a medium bowl, stir to combine the melted butter, graham cracker crumbs, sugar and salt, then press into the bottom and up the sides of the prepared pie dish. Bake until lightly golden and crisp, 12 minutes. Set aside on a wire rack to cool completely.
- For the pie: Whisk the granulated sugar and flour together in a medium saucepan set over medium heat. Whisk in the milk, coconut milk, condensed milk, coconut extract and vanilla extract. - 1. Crush crackers in plastic bag using a rolling pin. Mix melted butter with the crumbs. Press onto bottom and up sides of an 8 or 9-inch dish or pie pan. Chill until firm.
- 2. Microwave the chocolate chips and 2 tablespoons of butter in 30 second interval, stirring until melted after each 30 seconds. (Brush the tops of 8 whole crackers with some of the chocolate mixture then set them in the fridge to chill, this step is optional.) Carefully brush or spread chocolate mixture over bottom and sides of crust. Chill to set for 5 minutes.
- 3. Arrange 1/2 the banana slices on bottom and side of the chocolate-coated crust. Pour the milk and both pudding mixes in a medium bowl. Whisk together until well blended. Gently fold in 1/2 the whipped topping and spoon into the the crust.
- 4. Top with remaining banana slices; and spread with remaining topping. Chill for 4 hours or more until set.
- 5. Remove from fridge for a few minutes before serving...it will be easier to cut. Just before servings garnish with the chocolate covered crackers, if desired.

- Combine the sugar, cornstarch, and nutmeg in a medium-sized saucepan.
- Slowly stir in the milk.
- Place over medium heat and cook, stirring constantly with a wire whisk.
- untilthe mixture comes to a boil.
- Reduce the heat to low, and cook and stir for another minute or two.
- Blend about 1/2 cups of the hot mixture into the egg substitute.
- Then return the egg mixture to the pan.
- Cook and stir over low heat for 3-4 minutes.
- DO NOT allow the mixture to come to a boil.
- Remove the mixture from the heat and stir in the vanilla extract.
- Let the mixture cool for 15 minutes, stirring every 5 minutes.
- Spread a thin layer of the filling over the bottom of the pie crust.
- Top with half of the bananas and half of the remaining filling.
- Repeat layers, ending with the filling.
- Sprinkle the top light with ground nutmeg if desired, or a handful of graham cracker crumbs.
- Chill for several hours, or until the filling is set.
- Cut into wedges and serve cold.
- Crust: Process the cracker into fine crumbs.
- Measure crumbs, you should have 1 1/4 cups.
- Put crumbs, sugar and baby food in a food processor (you can use a fork, it takes longer but does work) and process till moist and crumbly.
- Coat a 9-inch pie pan with nonstick cooking spray.
- Using the back of a spoon that has been sprayed as well, press the crumbs into the pan to form crust.

- Start by making the graham cracker crust; in a medium size mixing bowl add your graham cracker crumbs, the brown sugar and the melted butter and mix well with a rubber spatula until well combined.
- Add the mixture into a 9-inch pie dish and press down to form the crust. Bake the crust in the oven at 350ºF for 10 minutes or until the crust is golden brown. Allow to cool completely.
- Meanwhile, make the filling; in a medium saucepan over medium heat combine the half and half, sugar, and salt. Whisk until the sugar has dissolved, then bring to a simmer whisking occasionally. In a medium heatproof bowl mix the egg yolks and cornstarch together until thick and smooth.

- Slice 1 big banana (or 2 small ones) and arrange the slices into the cooled pie crust. Spread the cooled pudding on top. Place another piece of plastic wrap on top of the filling, to prevent the "skin" from forming. Refrigerate for at least 4 hours.
- When you are ready to serve the banana cream pie, make the whipped cream; using a hand mixer or a stand mixer fitted with the whisk attachment, beat the heavy cream, confectioner's sugar, and vanilla extract on medium-high speed until stiff peaks form, about 5 minutes.
- Spread the whipped cream onto the chilled pie. Slice the remaining bananas and decorate the pie with the banana slices. Slice and serve.

- In a large bowl, mix instant vanilla pudding mix and milk until combined (the pudding will be thick). Add in shredded coconut and mix. Set aside.

- Preheat oven to 375. Stir together crumbs and sugar. Add melted butter and mix until well-blended. Spray a 9x13-inch baking dish with cooking spray and spread crumb mixture in the dish to make a crust. Bake about 8 minutes. Remove from oven and allow to cool.
- In large bowl, beat cream cheese for 5 minutes. Add sugar and beat until light and creamy. Add vanilla and beat until combined.
- Twist the vanilla bean but don't scrape it and then add it to a medium pot with the milk and 1 cup of the cream. Heat slowly until almost simmering and then cover, remove from heat and allow to steep for 20 minutes.
- Put the egg yolks in a bowl and whisk in the sugar, then the flour and salt. Whisk until completely smooth and make sure there are no lumps hiding in there. Remove the vanilla bean from the milk and slowly whisk the milk into the egg yolks. Then put all of the goodness back into the saucepan and cook over medium-high heat until the custard thickens, whisking constantly. This should take about 3-5 minutes.
- Be sure you scrape the bottom and sides of the pan. After the custard begins to boil, cook for one minute longer and then remove it from the heat. The custard will be very thick. Strain through a fine-meshed sieve into a large bowl.
- Immediately whisk in the remaining 1 cup of cream and three teaspoons of vanilla. Continue whisking until the cream is completely mixed in.
- Spread cream cheese over the graham cracker crust. Sprinkle some vanilla wafer crumbs, then add a layer of sliced bananas. Spread custard over the bananas and sprinkle remaining vanilla wafer crumbs over the top. (You can layer bananas between the graham cracker crust and the cream cheese too.)
