Steps:
- Heat oven to 375°F.
- Mix 1 cup of the flour, oats, 1/4 cup of the sugar and 1/2 tsp. of the cinnamon in medium bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs; set aside.
- Beat egg and ricotta in large bowl until well blended. Stir in apples, remaining 3/4 cup sugar, remaining 2 Tbsp. flour and remaining 1 tsp. cinnamon. Spoon into greased 2-quart baking dish; sprinkle with the crumb mixture.
- Bake 35 to 40 min. or until apples are tender and mixture is hot and bubbly. Serve warm.

Steps:
- Cut Shortening into flour with a pastry blender or fork until well blended and particles are the size of small peas. Make a well in the center and pour in ice water. Toss together, being careful not to over work the dough. Shape into a flat disk and place on floured board. Roll out to about 2″ larger than inverted pie dish. Fold pastry in half and place in pie dish. Unfold and fit pastry to dish. Press firmly against bottom and sides. Crimp edges.
- For Pie:.
- Heat oven to 375 degrees.
- Peel and slice apples thinly. Mix sugar, nutmeg, cinnamon and ginger in a large bowl. Add sliced apples and toss well with sugar mixture. Turn into pastry coated pie plate.
- For Crumb Topping:.
- In a medium sized bowl, mix together the 1/2 cup of flour, 1 cup oatmeal, 1/2 cup brown sugar and the 1/3 cup of butter with a fork or pastry blender.
- Sprinkle crumb topping over the apples in pastry lined pie plate.
- Bake pie at 375 degrees for 40 to 45 minutes.
- This recipe yields one 10″ pie.

Steps:
- Preheat oven to 350º F and line a 9x13-inch baking dish with parchment paper.
- Cream together butter and sugars in a large bowl or mixer until fluffy and lightened in color.
- Add in oats, flour and walnuts, then mix in baking soda, cinnamon, salt, nutmeg and allspice until combined.
- Pour 1/2 crust mixture into lined baking dish and use your hands or a flat-bottomed surface to press crust into an even layer.
- Place baking dish in oven and bake for 10 minutes, or until lightly browned.
- While crust is pre-baking, whisk together sour cream, sugar, egg, honey and vanilla extract in a large bowl, then mix in shredded apples.
- Pour mixture over baked bottom crust and spread into an even layer, then top with remaining crumble mixture, pressing gently, so it adheres to filling layer.
- Place in oven and bake for 35 minutes, or until topping is golden brown. Cover with aluminum foil if topping is browning too quickly.
- Remove from oven and let cool completely before serving.
