1/2 pound sausage
¾ cup shredded cheddar cheese
½ (10-oz) can Rotel tomatoes, (drained)
1 Tbsp taco seasoning
3 large eggs
1/4 cup sour cream
1 cup heavy cream or milk
salt and pepper, (to taste)
1 (9-in) frozen unbaked deep-dish pie crust

Steps:

  • Preheat oven to 350ºF.
  • In a large skillet, cook sausage until well browned, stirring frequently. Drain off grease and set aside.
  • Spread cooked sausage in bottom of pie crust. Top with shredded cheese and Rotel diced tomatoes and green chiles.
  • Whisk together taco seasoning, eggs, sour cream, and milk. Season with salt and pepper. Pour over sausage mixture in the pie crust.
  • Bake 1 hour. Allow quiche to rest for 5-10 minutes before serving.

2 (10-oz.) cans Rotel tomatoes & chilies, undrained
2 (8-oz.) bricks cream cheese
thick restaurant-style tortilla chips, for dipping

Steps:

  • Brown sausage in a large skillet over medium-high heat, breaking it up into small pieces as it's cooking. Drain off any excess oil, as necessary.
  • Reduce heat to medium-low and dump in 2 cans of Rotel.
  • Add the cubed cream cheese and cook over medium-low heat, stirring frequently until the cream cheese melts and everything is fully combined.
  • Serve warm with thick restaurant-style tortilla chips.
  • Brown the sausage in a large skillet over medium heat, breaking it up into small pieces as it's cooking. Drain off any excess oil.
  • Transfer the browned sausage to your crockpot insert, and dump in 2 cans of Rotel.
  • Add the cubed cream cheese and cover. Choose your desired heat setting depending on when you want to serve your dip. Heat stirring occasionally until fully combined, about one hour on low heat. Turn heat down to "keep warm".
  • Serve warm with thick restaurant-style tortilla chips.

Cream Cheese Sausage Rotel Dip Quiche is seriously delicious. All the flavors of our favorite dip in a quiche! Just add a salad and dinner is done!

1 pound pork sausage
8 ounces cream cheese
5 large eggs
10 ounce can diced tomatoes with green chiles (mild flavor)
¾ cup cheddar Colby cheese (shredded)
9 inch pie crust (deep dish)
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F.
  • Blind bake the pie crust. See notes above for details.
  • In a skillet, cook and crumble sausage until it's no longer pink. Drain excess fat from the pan.
  • Cut cream cheese into cubes and add to the pan with the sausage along with 10-ounces of drained diced tomatoes and green chiles. Stir until cream cheese melts.
  • Cool mixture about 5 minutes then stir in beaten eggs. Add a pinch of salt and pepper, if desired.
  • Pour sausage mixture into pie crust.
  • Spread cheddar Colby cheese evenly over the top.
  • Bake quiche 30 to 35 minutes or until crust is brown and center of the quiche is slightly jiggly.
  • Remove from the oven and cool for 5 minutes before cutting.

2 eggs
1/4 cup ranch dressing
1/4 cup sour cream
1/3 cup milk
9 inches unbaked deep dish pie shells

Steps:

  • Preheat oven to 350.
  • In a large skillet, cook sausage until well browned, stirring frequently. Drain off grease and set aside.
  • Whisk together eggs, Ranch dressing, sour cream and milk. Add sausage, cheese and Rotel.
  • Stir to combine.
  • Pour egg mixture into prepared pie crust.

This dip is an absolute hit everytime I make it! My husband and all of our friends devour it and it's always the first to go! It has a nickname of "white trash dip". I make it in a round 4 quart crock pot, but the recipe can be halved or doubled for smaller or larger crock pots.

4 (8 ounce) packages Philadelphia Cream Cheese
2 (16 ounce) packages jimmy dean original breakfast sausage
1 (10 ounce) can original Rotel tomatoes & chilies
1 (10 ounce) can hot Rotel tomatoes & chilies
tortilla chips

Steps:

  • Brown both packages of sausage in a skillet over medium heat.
  • Drain the sausage in a colander.
  • Cube the cream cheese into a crock pot.
  • Add the sausage to the cream cheese in the crock pot.
  • Add both cans of rotel (with the juice) to the crock pot.
  • Heat the mixture in the crock pot on high heat for approximately 1 hour, stirring occasionally until the dip is well mixed.
  • Reduce heat to warm/low and serve with tortilla chips.

2 (8 ounce) packages cream cheese
1 (10 ounce) can Rotel Tomatoes
1 (24 ounce) bag tortilla chips

Steps:

  • Cut blocks of cream cheese into cubes and put in small crock pot.
  • Pour can of rotel (do not drain) over cream cheese.
  • Set crock pot to low and heat through. Stir often, it will burn. Once the cream cheese is really soft stir well. I use a whisk or hand blender to get the ingredients to combine better. You don't want it to be lumpy.
  • This dip will stay in the crockpot for just a couple of hours before it will start to burn and just turn gross. Make sure you turn the crockpot off after about 2 hours.
  • Serve with Tortilla Chips! Enjoy! :).
