MOM'S CREAM CHEESE PIE

1 1/2 cups graham cracker crumbs
6 tablespoons unsalted butter, melted
1/4 cup confectioners' sugar
1 teaspoon ground cinnamon
12 ounces cream cheese, at room temperature
3/4 cups granulated sugar
2 teaspoons vanilla extract
2 large eggs, at room temperature
1 cup sour cream
3 1/2 tablespoons granulated sugar
1 teaspoon vanilla extract

Steps:

  • For the graham cracker crust: Preheat the oven to 350 degrees F.
  • Combine the graham cracker crumbs, melted butter, confectioners' sugar and cinnamon in a small bowl. Press into a 9-inch pie pan. Bake for 10 minutes. Cool completely before filling. Leave the oven on.
  • For the cream cheese filling: Put the cream cheese, granulated sugar, vanilla and eggs in a medium bowl and beat with a hand mixer on medium speed until smooth. Pour the filling into the cooled crust and bake until set, 15 to 20 minutes. Cool 5 minutes before topping; leave the oven on.
  • For the sour cream topping: Combine the sour cream, granulated sugar and vanilla in a small bowl and mix until smooth. Spread onto the pie and bake 10 minutes. Cool to room temperature, then refrigerate until cold, about 4 hours. Slice and serve.

10 sheets graham crackers, ground fine
1/4 cup butter, melted
12 ounces cream cheese
2 eggs, beaten
1/2 cup granulated sugar
2 teaspoons vanilla extract
1 cup sour cream
2 tablespoons granulated sugar
1 teaspoon vanilla or lemon extract
1/4 cup lemon curd

Steps:

  • Crush the graham cracker crumbs in a blender or food processor until finely ground.
  • In a medium bowl combine graham cracker crumbs and butter then mix until moistened.
  • Pat the crumbs into a 9 inch pie pan.
  • In a larger bowl combine all the filling ingredients and beat on low until ingredients are light and frothy.
  • Pour into the prepared pie pan.
  • Bake at 350 for 15-20 minutes. Remove from oven and cool for about 5 minutes.
  • Spoon a light layer of lemon curd and top with the sour cream topping. Return to oven and bake for an additional 10 minutes.
  • Remove from oven and chill in refrigerator for a minimum of 5 hours before serving.
  • In a medium bowl blend the sour cream, sugar and vanilla until well combined smooth.

My mom used to make this recipe in the 60's everytime she had company. It was one of her most requested recipes. It is so delicious, and easy to make, that I always make 2 of them when I have my family over for Christmas Dinner. There are never any leftovers!

12 oz cream cheese, room temperature
2 eggs, beaten
3/4 c sugar
2 tsp vanilla
1/2 tsp lemon juice
1 prepared graham cracker pie crust, or homemade pie crust
FOR TOPPING
3/4 c sour cream
3 1/2 Tbsp sugar
1 tsp vanilla
PRE HEAT OVEN TO 350 DEGREES

Steps:

  • 1. Pre heat oven to 350 degrees.
  • 2. gather your ingredients.
  • 3. place all pie ingredients into a mixing bowl.
  • 4. beat ingredients with a hand mixer until light and fluffy.
  • 5. Pour into prepared pie crust. (you can make your own crust by mixing 1 1/2 cups graham cracker crumbs, 6 tablespoons butter, softened, and 1/3 cup sugar. Press mixture in a 9" pie plate, and continue with recipe)
  • 6. Bake in 350 degree oven for 30 minutes. Remove to wire rack and cool for 15 minutes.
  • 7. Meanwhile, mix topping ingredients, pour over pie, and bake in oven for 10 more minutes.
  • 8. Chill 5 hours, or overnight. Enjoy

2 (8 ounce) packages cream cheese, softened
2 eggs
1 cup white sugar
1 teaspoon vanilla extract
1 cup sour cream
2 tablespoons white sugar
¼ teaspoon vanilla extract
1 (9 inch) prepared graham cracker crust

Steps:

  • Combine cream cheese, eggs, 1 cup sugar, and 1 teaspoon vanilla in the bowl of an electric mixer. Mix on low speed until smooth. Pour filling into graham cracker crust.
  • Bake at 350 degrees F (175 degrees C) for 35 minutes. Remove pie from oven. Raise oven temperature to 450 degrees F (230 degrees C).
  • In a small bowl, blend sour cream, 2 tablespoons sugar, and 1/4 teaspoon vanilla together. Gently spread mixture over pie.
  • Bake for five minutes before serving.

1 (16 ounce) can pumpkin
1 (14 ounce) can condensed milk
2 eggs
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg

2 teaspoons grated orange peel (optional)
sour cream, topping
1 1/2 cups sour cream
2 tablespoons sugar
1 teaspoon vanilla or 2 teaspoons thawed orange juice concentrate

Steps:

  • Place rack in lowest position in oven and preheat oven to 425 degrees.
  • Combine all ingredients except pastry shell, mix well. Pour into pastry shell.
  • Bake 15 minutes. Reduce oven temperature to 350 degrees, bake 35 to 40 minutes longer. Cool.
  • Sour Cream Topping.
  • Combine sour cream, sugar and vanilla or thawed orange juice concentrate and grated orange peel. After 30 minutes of baking, spread evenly over the top of pie; bake 10 minutes longer.

1 1/2 cups graham cracker crumbs (about 7 ounces)
1/4 cup granulated sugar
1/4 cup almond meal (can substitute ground pecans)
5 tablespoons butter, melted
1 pinch kosher salt
3 (8 ounce) packages cream cheese, room temperature (it is VERY important that the cheese be at room temperature, take the packages out of the fridge at )
1 1/4 cups granulated sugar, divided
1 teaspoon kosher salt
1/4 cup all-purpose flour, sifted
5 large eggs, separated
1 cup sour cream
2 1/2 tablespoons lemon juice
1 1/2 teaspoons vanilla extract (sub the 1/2 tsp for 1/2 teaspoon almond extract if you like a more nutty taste)
1/4 teaspoon ground nutmeg
1 pint sour cream
1/4 cup sugar
1 teaspoon pure vanilla extract

Steps:

  • Combine graham cracker crumbs, sugar, ground almonds, and salt in a bowl. Drizzle melted butter and stir until evenly moistened. Press into the bottom and up the sides (as far as it'll go) of a lightly buttered 10-inch springform pan. Refrigerate for at least 1 hour to set.
  • Preheat oven to 325 degrees F.
  • In a large mixing bowl or the bowl of a stand mixer, combine cream cheese, 1 cup of sugar, and salt and beat until smooth. Add flour and egg yolks and mix thoroughly. Stir in sour cream, lemon juice, vanilla and nutmeg and beat until smooth.
  • In a separate bowl, beat egg whites with remaining 1/4 cup sugar until it forms stiff peaks. Fold thoroughly into cream cheese mixture; no need to be terribly gentle with it, but you do want the whites to be evenly incorporated. Pour into chilled crust.
  • Bake cheesecake for 1 hour 15 minutes or until top is puffed and lightly golden brown. There will be cracks, but that's what the sour cream topping is for. Without opening the oven door, turn the oven off, and let the cheesecake sit in the oven as it cools for 1 hour. Do not take the cheesecake immediately out of the hot oven or it will fall. After an hour, remove cheesecake and heat oven to 450 degrees.
  • While the cheesecake is cooling, make the sour cream topping by whisking the sour cream, sugar and vanilla together until smooth. Once the cheesecake has cooled for an hour, pour the sour cream topping over top. Using a rubber spatula or offset spatula, smooth out the surface.
  • Place back into the oven (remember the heat should have been increased to 450° F) and bake for about 10 minutes. Remove from the oven and place on a cooling rack to let cool to room temperature.
  • Refrigerate the cheesecake overnight to set. ***Don't put cheesecake in the fridge until it has cooled to room temperature.***.

This is a great cheese pie recipe from my Mother-In-Law. It's actually easy to make and the sour cream topping is great.

2 cups graham cracker crumbs
1/2 cup butter (melted)
3 tablespoons butter (melted)
3 -8 ounces cream cheese
2 cups white sugar
3 eggs
1/2 tablespoon vanilla
2 (8 ounce) packages sour cream
1/2 cup sugar
1/2 tablespoon vanilla

Steps:

  • To make pie crust add melted butter (1/2 cup plus 3 Tbls. butter) to graham cracker crumbs and press into pan. (Or you can purchase pre-made pie crust).
  • Mix cream cheese, sugar, eggs and vanilla, pour over graham cracker crust.
  • Bake for 30 to 40 minutes at 350 degrees. (Oven Temps. vary).
  • Meanwhile, blend together ingredients for topping.
  • Remove pie let cool for about 10 minutes. Pour sour cream topping mixture over cake. Return to oven for about 12 to 15 minutes.
  • Remove pie from oven, let cool some, then chill and serve.
  • NOTE: Do not place hot pie into refrigator straight from oven, this could harm your refrigator.
  • You can serve it plain or use cherry, strawberry or blueberry pie filling to top this pie. Makes for a great change.
  • You can also press the graham cracker crumbs into a 9" x 13" cake pan and follow the rest of the recipe to finish as a cheese cake.
