Pears, spices and cream cheese are layered between a crunchy oat crust and topping.

1/2 cup Land O Lakes® Butter softened
2/3 cup firmly packed brown sugar
1 1/3 cups uncooked quick-cooking oats
2/3 cup all-purpose flour
2/3 cup finely chopped pecans
1 teaspoon baking soda
1 teaspoon ground cinnamon
Pear Mixture
3 medium (3 cups) pears, peeled, cored, coarsely chopped
1/4 cup firmly packed brown sugar
2 tablespoons cornstarch
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Filling
1 (8-ounce) package cream cheese, softened
2 tablespoons firmly packed brown sugar
2 teaspoons almond extract
1 large Land O Lakes® Egg

Steps:

  • Heat oven to 350°F.
  • Combine butter and 2/3 cup brown sugar in bowl. Beat at medium speed until creamy. Add all remaining crust ingredients; continue beating until well mixed.
  • Press half of crust mixture onto bottom of ungreased 13x9-inch baking pan. Bake 9-11 minutes until edges are lightly browned.
  • Combine all pear mixture ingredients in bowl. Toss to combine and coat chopped pear; set aside.
  • Combine all filling ingredients except egg in bowl; beat at medium speed until well mixed. Add egg; continue beating until well mixed. Pour filling over partially baked crust. Spoon pear mixture over filling. Crumble remaining crust mixture evenly over pears; press down lightly.
  • Bake 28-33 minutes or until top is golden brown and center is set. Cool completely; cut into bars. Store bars refrigerated.

Steps:

  • Place pear halves, cut side down, on paper towels. Combine cream cheese and 4 teaspoons sugar in small bowl until smooth. Match pear halves by size. Spread about 1 rounded tablespoon cream cheese mixture on cut side of one pear half; press cut side of second pear half into cream cheese. Repeat with remaining pears. Cover; refrigerate for 15 minutes.
  • Heat evaporated milk to boiling in medium, heavy-duty saucepan. Stir in morsels. Cook, stirring constantly, until mixture is slightly thickened and smooth. Remove from heat; stir in remaining 2 tablespoons sugar, vanilla extract and salt.
  • To serve: Place pears in pool of raspberry sauce; drizzle with chocolate sauce.

1 tablespoon fresh lemon juice

  • Very thinly slice pears lengthwise with a mandoline or chef's knife and place in a single layer on parchment-lined baking sheets. Bake in a preheated 225 degrees oven 1 1/2 hours. Flip slices and continue baking until darkened slightly and edges have curled (they should still be pliable), 1 to 1 1/2 hours. Transfer to a wire rack and let stand until cool and crisp. Store at room temperature in an airtight container up to 1 week.

2 1/2 tablespoons tapioca
6 medium ripe pears (about 3 pounds), sliced
1 cup golden raisins
Crema, for serving (recipe below) (optional)
2 cups heavy cream
1/4 cup buttermilk

Steps:

  • In a large mixing bowl, cut together the topping ingredients with 2 knives until they are well combined and crumbly. Be sure the butter is evenly distributed in the mixture. If desired, freeze for up to 3 months, or use immediately.
  • Preheat the oven to 400 degrees. In another large mixing bowl, combine the sugar and the tapioca and toss until evenly mixed. Add the pears and toss until they are evenly coated with the mixture. Mix in the raisins. Turn the fruit mixture into a 10 x 2 inch deep round baking dish, preferably glass. Sprinkle the crumb mixture evenly over the top and bake the crisp for 15 minutes, then turn the oven down to 375 degrees. Bake for 15 to 20 minutes more, or until the topping is golden. Cool on a rack for 10 minutes, then serve warm accompanied by a dollop of Crema, if desired.
  • Whisk the cream and the buttermilk together in a bowl. Cover and set in a warm place (a gas oven with just the heat from the pilot light is fine) for 8 hours. Crema may be kept in the refrigerator for as long as a week.
