You don't need to wait for the county fair to enjoy delicious old-fashioned funnel cakes. You just need a funnel with a 1/2-inch opening that can hold a cup of batter.

8 cups vegetable oil for frying
1 ½ cups milk
2 eggs
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon ground cinnamon
½ teaspoon salt
¾ cup confectioners' sugar

Steps:

  • In a deep-fryer, or heavy skillet, heat oil to 375 degrees F (190 degrees C).
  • In a large bowl, beat milk and eggs together. Combine flour, baking powder, cinnamon and salt. Stir into the egg mixture until smooth.
  • While covering the funnel hole with one hand, pour in 1 cup of batter. Start from the center in a swirling motion to make a 6 or 7 inch round. Fry on both sides until golden brown. Remove and drain on paper towels. Sprinkle with confectioners' sugar and serve warm.

2 c all purpose flour
1 Tbsp shortening
2 c milk
3 tsp baking powder
1 tsp salt
2 large egg, separated

Steps:

  • 1. Beat egg yolks, then add milk and shortening to the yolks.
  • 2. Mix flour, salt, nd baking powder together.
  • 3. Add dry ingredients to the liquid mixture and mix until smooth.
  • 4. Beat egg whites until stiff.
  • 5. Fold egg whites into batter, just until lightly blended.
  • 6. Pour batter to desired size, onto a hot greased griddle. Turn shortly after pancakes have started to bubble and are lightly browned, and cook other side. Remove from pan and serve with maple syrup or desired topping. Suggestions might be strawberries or apple pie filling or what ever you may like for the topping.

1 teaspoon salt
3 teaspoons baking powder
2 eggs, separated
2 cups milk
1 tablespoon melted shortening

Steps:

  • Sift flour, salt and baking powder together.
  • Beat egg yolks and add milk and shortening.
  • Beat in flour with a rotary beater (or electric mixer).
  • Fold in stiffly beaten egg whites.
  • Bake on hot griddle, turning to brown both sides.
  • Makes 24.

1/3 cup Irish cream liquor, preferably Baileys
2 large eggs
1 cup whole milk
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/4 cup confectioners' sugar
1 tablespoon cocoa powder
1 teaspoon baking powder
1 teaspoon kosher salt
4 cups canola oil
Granulated sugar, for sprinkling
1/4 cup Irish cream liqueur, preferably Baileys
1 cup confectioners' sugar

Steps:

  • Make the batter: In a large bowl, whisk together the Irish cream, eggs, milk and vanilla. Sift the flour, confectioners' sugar, cocoa and baking powder right over the wet ingredients. Add the salt and whisk to combine. Transfer the batter to a large resealable kitchen bag or pastry bag. Refrigerate for at least 30 minutes and up to 4 hours.
  • Make the glaze: In a small bowl, whisk the Irish cream and confectioners' sugar together until smooth. Set aside until ready to serve.
  • Get ready: Meanwhile, preheat the oven to 350 degrees F. Pour the oil into a wide heavy-bottomed pot or pan. Heat the oil to 350 degrees F over medium heat. Fit a baking sheet with a wire rack. Have a spider, fish spatula, or slotted spoon on hand.
  • Fry: Cut a small corner of the plastic bag or bottom of the pastry bag to create a small opening. Pour the batter from the bag into the hot oil, streaming about 5 overlapping rings of batter. Allow the batter to fry until it firms up and turns brown on the underside, 2 to 3 minutes. Use the spider to gently lift the cake out of the oil and flip it to the other side. Fry until golden brown, an additional 2 to 3 minutes. Transfer the funnel cake to the wire rack. Sprinkle with some granulated sugar. Use up the remaining batter to fry more funnel cakes, allowing the oil to return to 350 degrees F before each batch. You can hold the funnel cakes on the baking sheet in the oven while you make the remaining funnel cakes.
  • Serve: Arrange the funnel cakes on plates, drizzling generously with the glaze.

1 1/2 cups unbleached all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1 cup milk, more as needed,at room temperature
3 tablespoons unsalted butter, melted

Steps:

  • In a mixing bowl, add the eggs and sugar; beat on high speed for about 5 minutes or until light and fluffy.
  • Sift the flour, baking powder, and salt into another bowl.
  • Stir 1 cup of milk and the melted butter gently into the egg mixture just until blended.
  • Pour the liquid ingredients over the dry.
  • Fold gently until the dry ingredients are moistened.
  • If the batter seems too thick, add milk 1 tablespoon at a time.
  • Do not over mix.
  • Heat a non-stick skillet or griddle over medium heat until it is hot enough for a drop of water to sizzle.
  • Brush skillet with a small amount of oil or spray with non-stick cooking spray.
  • Pour 1/3 cup batter into the skillet; spread evenly.
  • Lower heat to med-low.

  • Pour enough oil into a skillet to completely coat the bottom and heat over medium-high heat.

Way back in the 60s I ran into an old cookbook at the library with this recipe in it. It was written about the 1910s. And they stated this was an old recipe for Flannel Cakes. I wasn't sure about the sugar and the vanilla but the pancakes were thick, light, golden and picture perfect. And they tasted as good as they looked. Been making them ever since. Then I misplaced the recipe a couple years ago. TODAY I found it and I AM NOT LOSING IT AGAIN. One impressive breakfast main course for special occasions and wonderful for everyday.

1 3/4 cups flour
4 teaspoons baking powder
1 teaspoon sugar
1/2 teaspoon salt
2 eggs, beaten
1 3/4 cups milk
2 tablespoons melted butter
1 teaspoon vanilla

Steps:

  • Mix dry ingredients and sift. Make a mound and place hole in the center. Add the liquid ingredients and mix well. Pour 1/4 cup batter for one pancake.
  • The consistency should be thin enough that you do not need to touch the batter once you pour it. This pancake will rise. Use the ingredients specified. Adjustment of other ingredients WILL change the taste but so far as I have noted not the texture.
  • Use lard or bacon grease on the skillet or griddle. This is not a pam or oil recipe. If you must reduce the amount of grease wipe rapidly with a paper towel to remove. The skillet should be so hot a drop of water dances on it. IF you leave this overlong it will get a dark brown or black that means it browns rapidly. IT should bubble around the edges. Flip and watch the rise of the pancake to know when it is done. I suggest making a few small ones until you get the knack for this.
  • Yes it is 4 tsp baking powder, no it is NOT a typo so don't ask. Yes it needs that.
  • Serve with a pat of fresh butter and your favorite syrup.
