CREAMY LAYERED LEMON SQUARES



Creamy Layered Lemon Squares image

Combine sweet berry and bright citrus tastes with our Creamy Layered Lemon Squares. Lemon gelatin and strawberries meet in these layered lemon squares.

2 cups graham cracker crumbs
1/2 cup sugar, divided
1/2 cup butter or margarine, melted
1-1/2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese (12 oz.), softened
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
3 cups sliced fresh strawberries, divided
1-1/2 cups boiling water
1 pkg. (6 oz.) JELL-O Lemon Flavor Gelatin
2 cups ice cubes

Steps:

  • Combine graham crumbs, 1/4 cup sugar and butter; press onto bottom of 13x9-inch dish.
  • Beat cream cheese and remaining sugar in medium bowl with mixer until blended. Whisk in 1-1/2 cups COOL WHIP; spread over crust. Top with 2 cups strawberries. Refrigerate until ready to use.
  • Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Add ice cubes; stir until melted. Refrigerate 5 min. or until gelatin is thickened. Whisk in remaining COOL WHIP; spread over strawberry layer in dish.
  • Refrigerate 4 hours or until firm. Serve topped with remaining strawberries.

I have been making these for 35 years. Came from Sunset Magazine. My family can't eat them fast enough. I always give Christmas Baskets every year to friends and neighbors and these are a favorite for them too. Please enjoy and let me know what you think.

1/2 c (1/4 lb) unsalted butter or margarine, softened
1/2 c 4 oz cream cheese, softened
1 c sugar
1/2 tsp 1/2 tsp. each vanilla and grated lemon peel
1 c 1 cup all-purpose flour

Steps:

  • 1. Pre-heat oven to 350
  • 2. In Large bowl of an electric mixer, 1) Beat Butter, Cream Cheese, and sugar until creamy 2) Beat in Vanilla and Lemon Peel 3) Gradually add flour blending thoroughly 4) Drop by rounded teaspoonfuls onto ungreased baking sheet, spacing cookies about 2 inches apart 5) Bake in oven for about 12 minutes or until edges are golden brown.
  • 3. 6) Transfer to racks and let cool. 7) Store in air tight container.

Number Of Ingredients 8

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
3/4 cup butter, softened
1 cup granulated sugar
2 tsp. vanilla
2-1/4 cups flour
1 pkg. (3 oz.) JELL-O Raspberry Flavor Gelatin
1/2 tsp. baking soda
2 Tbsp. powdered sugar

Steps:

  • Beat first 4 ingredients in large bowl with mixer until blended. Mix flour, dry gelatin mix and baking soda; gradually add to cream cheese mixture, mixing well after each addition. Refrigerate 30 min.
  • Heat oven to 375ºF. Roll dough into 60 (1-inch) balls. Place, 2 inches apart, on baking sheets sprayed with cooking spray.
  • Bake 9 to 11 min. or until edges are lightly browned. Cool on baking sheets 2 min. Remove to wire racks; cool completely.
  • Sprinkle with powdered sugar just before serving.

This is from St. Phillip's Favorite Fixings Plymouth Meeting, PA. A delicious cookie that starts with a cake mix, but you can't tell!

Number Of Ingredients 8

1/4 cup butter, softened
8 ounces cream cheese, softened
1 egg yolk
1 teaspoon vanilla extract
18 1/2 ounces yellow cake mix
1 1/4 cups seedless raisins
1/4 cup flaked coconut
1/4 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees.
  • In large bowl beat cream cheese, butter, egg yolk and vanilla extract.
  • Blend in dry cake mix 1/3 at a time.
  • Blend the last 1/3 in by hand.
  • Mix in raisins, coconut and walnuts.
  • Drop by level tablespoons onto greased cookie sheets.
  • Bake for 15 minutes or until lightly brown.

Number Of Ingredients 7

1 package yellow cake mix (regular size)
1 can (15 ounces) solid-pack pumpkin
3 large eggs
1/2 cup canola oil
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 to 2 cans (12 ounces each) whipped cream cheese frosting

Steps:

  • In a large bowl, combine the cake mix, pumpkin, eggs, oil, cinnamon and baking soda; beat on low speed for 30 seconds. Beat on medium for 2 minutes. , Fill paper-lined miniature muffin cups two-thirds full. Bake at 350° for 12-16 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks to cool completely. Frost cupcakes.
