CREAM CHEESE GEMS
I have been making these for 35 years. Came from Sunset Magazine. My family can't eat them fast enough. I always give Christmas Baskets every year to friends and neighbors and these are a favorite for them too. Please enjoy and let me know what you think.

- 1. Pre-heat oven to 350
- 2. In Large bowl of an electric mixer, 1) Beat Butter, Cream Cheese, and sugar until creamy 2) Beat in Vanilla and Lemon Peel 3) Gradually add flour blending thoroughly 4) Drop by rounded teaspoonfuls onto ungreased baking sheet, spacing cookies about 2 inches apart 5) Bake in oven for about 12 minutes or until edges are golden brown.
- 3. 6) Transfer to racks and let cool. 7) Store in air tight container.

This is from St. Phillip's Favorite Fixings Plymouth Meeting, PA. A delicious cookie that starts with a cake mix, but you can't tell!

Steps:
- Preheat oven to 350 degrees.
- In large bowl beat cream cheese, butter, egg yolk and vanilla extract.
- Blend in dry cake mix 1/3 at a time.
- Blend the last 1/3 in by hand.
- Mix in raisins, coconut and walnuts.
- Drop by level tablespoons onto greased cookie sheets.
- Bake for 15 minutes or until lightly brown.

CREAM CHEESE LEMON BARS
Cream Cheese Lemon Bars are the dessert you never knew you needed, but bake them once, and you'll never go without them again. Sweet, cream cheesy, lemony, buttery, and so easy!

Steps:
- Preheat oven to 350 degrees and line a 9x13 inch pan with foil or parchment with plenty of overhang around the edges to lift the bars out of the pan before cutting.
- Prepare the crust by combining flour, sugar, salt, and butter cubes in a food processor or blender. Cover and pulse until fine crumbs form. (You can also do this with a pastry cutter, fork, or with your fingers in a large bowl.)
- Press crust into prepared pan and bake for 10 minutes while you prepare the filling.
- Prepare the filling by combining cream cheese and sugar in a large bowl. Cream together until smooth. Mix in flour, powdered sugar, lemon juice, eggs, and vanilla until completely incorporated.
- Pour filling over crust and return to oven for 30 minutes.
- Allow to cool for about 20 minutes, then cover and transfer chill in the fridge 4 hours or overnight. Lift the foil edges to remove the bars from the pan, slice into squares, sprinkle with additional powdered sugar, and serve.

- In a bowl whisk together the flour, the baking soda, the salt, and the sugar. In another bowl whisk together the eggs, the lemon juice, the butter, and the vanilla, add the egg mixture to the flour mixture, and stir the batter until it is just combined. Divide the batter among 24 buttered 1/8-cup muffin tins and bake the muffins in the upper third of a preheated 400°F. oven for 10 to 12 minutes, or until a tester comes out clean. Turn the muffins out onto a rack, let them cool, and serve them with the cream cheese and the papaya in cinnamon syrup.

Steps:
- Lightly spoon flour into a dry measuring cup; level with a knife.
- In a bowl, combine flour, brown sugar, and salt, stirring well with a whisk.
- Cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. Press mixture firmly into a 13 x 9-inch baking dish coated with cooking spray.
- Combine figs, water and 1/4 cup granulated sugar in a medium saucepan; bring to a boil over medium-high heat.
- Cook 5 minutes or until figs are tender and sugar dissolves.
- Cool slightly. Place fig mixture and juice in a blender; process until smooth.
- Gently spread fig mixture over prepared crust.
- Place remaining 1/4 cup granulated sugar, cheese, vanilla, and egg in a medium bowl; beat with a mixer at medium speed until smooth.
- Pour over fig mixture; spread to edges. Bake at 350° for 30 minutes or until set and lightly browned.
- Cool in pan on a wire rack; sprinkle with powdered sugar.
