Steps:
- Place cream cheese and butter in the bowl of an electric mixer fitted with the paddle attachment and beat until creamy, about 30 seconds.
- With the mixer on low, slowly add sugar, scraping down the sides of the bowls as necessary.
- Add vanilla and increase mixer speed to medium. Blend until frosting is fluffy, about 1 minute.

CREAM CHEESE BUTTERCREAM

Steps:
- Cut the butter (125g) into cubes and beat (either by hand or using a mixer on a slow speed ) until soft.
- Sift the icing sugar (125g) and beat it into the butter until fully combined and smooth.
- Add the cream cheese (250g) and vanilla extract (¼ tsp) and beat until thoroughly combined and smooth.
- Check the consistency of your buttercream. It should be firm, but soft enough to pipe. If it is too firm, then beat in a little milk (no more than a teaspoon at a time) until you have the right consistency.
- Your buttercream is now ready to use.

PROFESSIONAL CREAM CHEESE BUTTERCREAM FROSTING
This is the best recipe for taste, presentation and easy for decorating, borders, cupcakes, cakes and such! This yields A LOT!! This works very well with KitchenAids mixers that really make a difference in outcome of frosting! If needed, add a little milk or water to thin out but KA's help, really don't need it. Very stable and can withstand room temp!!

Steps:
- In a large bowl (or KA Mixer) cream together shortening and butter.
- Stop and scrape down, start again till creamy.
- Add cut-up cream cheese and cream again, scraping down sides till fluffy on high.
- Add vanilla extract and blend.
- Add at time confectioner's sugar, starting on low speed as to not spray sugar all over, then increase speed till blended each time and scrape down each time.
- You may add salt if you need to.
- Turn on high speed for 15 minutes to make frosting blended, smooth and fluffy.
- Also you may have to chill frosting after completed.
CREAM CHEESE FROSTING
Made with much less confectioners' sugar than the usual cream cheese frosting, it's sturdy, dependable and not too sweet - just right for a child's birthday party or to ice three-dozen cupcakes for a bake sale. While it's not quite as silky as a buttercream based on beaten eggs and sugar syrup, it's much, much less persnickety to make and it holds up well without refrigeration for several hours before it starts getting soft. Plus, the cream cheese makes it incredibly creamy while adding a tangy bite that helps tone down the sweetness of the confectioners' sugar. To make lemon cream cheese buttercream (which tastes a little like a cheesecake), substitute one tablespoon lemon juice for the vanilla and add a teaspoon of grated lemon zest to the frosting.

- Coarsely chop the chocolate and melt in a double boiler over 160°F water.
- Don't allow the water to touch the bottom of the bowl.
- Stir the chocolate until smooth, 10 minutes or so.
- •OR you can melt the chocolate in the microwave, stirring every 15 seconds, remove before fully melted and finish with residual heat.
- Allow chocolate to cool.
- In a mixing bowl beat the cream cheese with a flat beater until smooth and creamy, gradually beat in the cooled chocolate until smooth.

- Beat the softened butter to a soft and even consistency. Add the orange juice, if using, then the icing sugar. Cream until you have a smooth, soft buttercream consistency.
- Add the cream cheese and work it in - don't beat it in, just slowly mix with a wooden spoon. Depending on how soft the mixture is, you may want to put it in the fridge for 10 mins at this point. If it's runny, it will firm up again. It should be spreadable and not run off the cake.
