PESTO BRUSCHETTA
Pesto Bruschetta combines three of my favorite things - juicy tomatoes, rich, creamy pesto and toasty bread for a tasty and unique appetizer.

- Preheat oven to 400 degrees F.
- Combine ingredients for the bruschetta in a medium size and set it aside while you make the pesto and the crostini. Bruschetta can sit out for up to 1 hour without needed refrigeration.
- Arrange the bread side by side on a large, rimmed baking sheet. Brush each side with olive oil and sprinkle lightly with salt.
- Bake for 7-10 minutes, flipping it over halfway through. You want the crostini to be crispy but not so hard you can't easily bite into it.
- While the crostini is cooling, make the pesto. To a food processor or blender add fresh basil, parmesan cheese, sunflower seeds, garlic and lemon juice. Turn to low and drizzle in olive oil to emulsify. Once all the olive oil is added, continue to blend for about a minute or until pesto is smooth. Scrape the sides of the bowl at least once to ensure all ingredients are evenly mixed in. Taste and adjust salt and pepper as desired.
- Assembly: Top each piece of crostini with a smear of pesto and a spoonful of the bruschetta. Sprinkle grated parmesan or fresh basil on top if desired.

- 1. Wash and cut each tomato into quarters. Place in a pan with a tiny drizzle of olive oil. Allow to cook covered on medium heat for 1 min. Turn the tomatoes and cook for 1 min on each side. Drizzle more oil if you find it necessary. Cook until the tomatoes begin to soften but don't over cook them. Once ready, set aside.
- 2. Toast the bread in toaster or oven if you are making more than two people.
- 3. Spread the creme cheese equally between the slices.
- 4. Add a layer of pesto sauce over the creme cheese topped by 2 pieces of tomatoes.
- 5. Garnish with some freshly chopped basil leaves or some basil flowers, some toasted pine nuts or simply some toasted sunflower seeds. Enjoy

- Place the olive oil and the garlic in small bowl and let sit for at least 1/2 an hour; preheat the broiler; spread the bread slices on a baking sheet and then brush both sides with the olive oil; broil until golden on both sides (this will only take a couple of minutes).

- In a medium bowl, combine tomatoes, garlic, 1 tablespoon olive oil, balsamic vinegar, salt, pepper, and basil. Set aside.
- Place ciabatta rolls on a baking sheet with cut sides facing up. Brush with remaining 3 tablespoons olive oil, sprinkle with 1/4 cup asiago cheese, and broil 2 minutes, or until golden.
- Spread each roll half with 1 tablespoon pesto, and top with 4 slices of fresh mozzarella. Divide tomatoes evenly over mozzarella, and top with remaining asiago cheese. Serve.

PESTO BRUSCHETTA - PESTO CREAM CHEESE AND TOMATO BRUSCHETTA
Steps:
- Slice the bread into 1/4 inch thick slices.
- Heat a grill pan or regular griddle on medium heat. Once hot, drizzle some olive oil .
- Place the sliced bread and roast for about 1 min or until the side is nice and golden. Flip and cook the other side too until golden brown and crunchy. Remove from heat and keep aside
- Slice the grape tomatoes into round (about 4-5 slice per tomato).
- Apply Pesto (a tsp or as much the bread can hold comfortably) on the crunchy bruschetta slices, top it with some cream cheese (I sliced mine into small rectangles), couple of tomato slices, fresh chopped basil and salt pepper.
- Pesto Bruschetta is ready to serve!!

- Preheat the oven to 430 F. Drizzle or brush baguette slices with 1 tablespoon of olive oil, place on a parchment lined baking dish and toast in the oven for 7 minutes.

- Heat 1 tablespoon of olive oil in a large skillet and on a medium heat. Arrange zucchini rounds in one layer, sprinkle with salt and pepper and cook for 2-3 minutes until zucchini start to brown at the bottom. Flip and cook for another 1-2 minutes. With a slotted spoon transfer zucchini on a paper towel lined plate.
- Spread 1 tablespoon of cream cheese on each baguette slice. Top with sun-dried tomato. Spread 1 or 1 1/2 tablespoons of Pesto sauce on top of sun-dried tomato and top with zucchini slice. Enjoy!
