- Set aside one-fourth of the avocado. In a blender or food processor combine the remaining three-fourths of the avocado, the buttermilk, cream cheese, lime juice, garlic, the 1/8 teaspoon cayenne pepper and salt. Cover and blend or process until smooth. Coarsely chop the reserved avocado; stir into pureed mixture. Cover and chill in the refrigerator for 30 minutes to 24 hours.
- Spoon into a serving bowl; sprinkle with the dash cayenne pepper. Serve with fresh vegetables.

- Mash avocado with a fork. Blend in all other ingredience. Refrigerate until ready to use.
CANAPES WITH GARLIC HERB CREAM CHEESE AND AVOCADO
Steps:
- Slice the bread into 1/3-inch slices (cut on the diagonal if it's a very small baguette to get bigger slices). Place them on a baking sheet and lightly brush both sides with melted butter.
- Bake 5 minutes, or until they are just starting to golden. Let these cool to room temperature.
- Toppings: Cut your avocado in half, remove the pit, spoon the avocado flesh out of the shell and cut avocado into slices. Finely chop both green onions and 1/4 cup of fresh dill.
- Use a fork to mash together 8 oz cream cheese, 1/4 cup chopped dill, chopped green onion and your pressed garlic clove.
- Spread enough herbed cream cheese over each canapé to generously cover the top.
- Top canapés with avocado slices and squeeze a couple drops of lemon juice over the avocado slices (this keeps the avocado from browning), then sprinkle with freshly ground black pepper. Garnish with dill and green onion and you're done! It's best fresh but tastes great even after refrigeration.

- Cook pasta according to package instructions - I cooked 12 oz pasta in 4 Qts water with 1 Tbsp salt and boiled 10 min. About 4 min before pasta is done cooking, add frozen peas and corn and cook 4 min until veggies are crisp tender. Rinse under running cold water to chill pasta. Drain well and transfer to large mixing bowl.
- In a food processor or blender, combine half of the spinach, 2 quartered avocados, 4 Tbsp lemon juice, 1 sliced garlic clove, 1 tsp salt and 1/4 tsp black pepper. Pulse until blended then add remaining spinach and blend until creamy and smooth.
- Add avocado dressing to pasta bowl along with sliced tomatoes and 1 remaining sliced avocado. Toss salad together until evenly coated. Season to taste with more salt and black pepper.
