A sweet salad with plenty of crunch that goes perfectly with Middle Eastern dishes

PEAR AND POMEGRANATE SALAD
A fall and winter favorite--I am always eager for pomegranates to come in season so I can make this again. I make my own pomegranate juice by pressing the seeds against a metal sieve.

Steps:
- Divide the lettuce between two bowls. Halve and core the pear, then cut each half in slices. Divide the pear slices and pomegranate seeds among the two bowls and mix gently.
- Combine the vegetable oil, pomegranate juice, lemon juice, mustard, honey, and pepper in a saucepan. Bring to a boil over high heat; reduce heat and simmer, stirring frequently, until the dressing thickens slightly, about 2 minutes. Pour the warm dressing over the salads and serve.

- Whisk together all of the Creamy Pomegranate Dressing ingredients in a medium bowl and chill in the refrigerator while you prepare the salad. Combine salad ingredients in a large bowl. If serving entire salad immediately, drizzle with desired amount of dressing and toss to coat. If there might be leftovers, drizzle dressing on individual salad servings. Top with freshly ground salt and pepper.

- Preheat oven to 350°F. Place nuts on a parchment lined baking sheet. Season generously with salt. Toast 8 minutes. Cool to room temperature.
- Slice pear in half lengthwise. Cut each half into half lengthwise. Slice out core on angle. Cut into thin slices. Coat in lemon juice to prevent browning.
- Whisk together lemon juice and molasses in a small bowl. Slowly stream in olive oil while constantly whisking. Season with salt.
- Add lettuce, pear and pomegranate to a large bowl. Drizzle with dressing and lightly toss to coat. Transfer to serving dishes. Top with pistachios and cheese. Enjoy.
