SLOW-COOKER BERRY COBBLER
I adapted my mom's yummy cobbler recipe for slow cooking. With the hot summers here in Arizona, we can still enjoy this comforting dessert, and I don't have to turn on the oven. -Karen Jarocki, Yuma, Arizona

- Whisk together 1 cup flour, 2 tablespoons sugar, baking powder and cinnamon. In another bowl, whisk together egg, milk and oil; add to dry ingredients, stirring just until moistened (batter will be thick). Spread onto bottom of a 5-qt. slow cooker coated with cooking spray., Mix salt and the remaining flour and sugar; toss with berries. Spoon over batter. Cook, covered, on high until berry mixture is bubbly, 1-3/4 to 2 hours. If desired, serve with frozen yogurt.

This colorful cobbler is very juicy, but the sweetened berry "sauce" is so delicious it's worth spooning up. If you don't have time to make the sour cream topping, a sprinkle of confectioners' sugar or a dollop of vanilla yogurt works well, too.

- For the filling: Butter the sides and bottom of the insert of a 6-quart slow cooker. Whisk together the cornstarch, lemon juice and 2 tablespoons water in a small bowl. Add the mixture to the insert, add the berries and granulated sugar and toss.
- For the biscuit topping: Whisk together the flour, 2 tablespoons of the granulated sugar, baking powder and salt in a large bowl. Add the butter and rub the mixture together with your fingers so that it forms a coarse meal with some pea-sized lumps. Add the milk and stir with a wooden spoon to form a wet dough.
- Drop spoonfuls of the dough on top of the berry mixture. Combine the remaining 1 tablespoon granulated sugar and the cinnamon and sprinkle over the dough. Cover the slow cooker and set to high for 3 to 4 hours. The cobbler should be bubbly and the biscuits should be cooked through. Let rest for 20 minutes before serving.
- For the sour cream topping: Meanwhile, combine the heavy cream, sour cream and confectioners' sugar in a medium bowl and beat with an electric mixture until the mixture forms medium peaks.
- Spoon the cobbler into bowls and top with the whipped sour cream topping.
SLOW COOKER PEACH COBBLER
This slow-cooked cobbler is a great use for frozen peaches and so easy to make. Add some toasted, chopped pecans for a little Southern flair.

EASIEST CROCK POT FRUIT COBBLER
I found this recipe in a Fix-It-And-Forget-It crock pot cookbook. It is extremely forgiving and versatile...not to mention delicious! You'll be amazed at the cobbler-like texture that you can get with boxed cake mix, butter and a crock-pot. I personally prefer yellow cake mix + cherry pie filling + walnuts (as recipe indicates).

- Melt your butter in a microwave-safe container.
- Stir in the cake mix until well combined and crumbly.
- Dump your pie filling into the crock-pot.

CROCK POT CHICKEN COBBLER
This is my basic filling for chicken pot pie, with a little twist. It's done in the crock pot and spooned over fresh hot biscuits. I use the canned variety on weeknights, but use your favorite recipe.

- Place carrots and potatoes in microwave safe dish with 1/4 cup water. Place in microwave for 3 minutes Drain.
- Put potatoes, carrots, onion, green beans and corn in crock pot. Pour in 3/4 of can of cream of chicken, garlic powder and thyme. Stir.
- Place chicken breasts on top of vegetables, spoon remaining soup over chicken breasts covering each. Season with paprika and pepper.
- Turn crock pot to low and cook for 8 hours.
- 30 minutes before serving, break up chicken with a spoon. If sauce needs to thicken, dissolve cornstarch in water and add to crock pot. Turn on high for about 20 to 30 minutes or till thick as desired.
- Spoon mixture over hot biscuits, rice or noodles. Enjoy.

- 1. in a large mixing bowl, toss together all the frozen fruit, sugar and 1/2 cup baking mix.
- 2. transfer the fruit to the slow cooker.
- 3. in another large mixing bowl, stir together 2-1/4 cups baking mix, 1/4 cup sugar, melted butter and milk with a wooden spoon.
- 4. with your hands, drop bits of dough on top of the fruit in a slow cooker.
- 5. in a small mixing bowl, stir together the remaining 1/4 cup sugar and ground cinnamon.
- 6. sprinkle the cinnamon sugar on top of the dough and place the lid on the slow cooker.
- 7. turn slow cooker on high and cook for 3 hours until the topping has puffed and the fruit is bubbling. serve warm with vanilla ice cream.
