GREEK SPINACH CHEESE ROLLS (APPETISERS)

I found these in a Diabetic cookbook! Sounds simple and delicious!! The directions indicate using a store-brought ready to use bread dough, but if you want to make your own, that's fine, too.

1 lb frozen bread dough
10 ounces frozen chopped spinach, thawed and squeezed dried
3/4 cup crumbled feta cheese
1/2 cup reduced-fat monterey jack cheese
4 green onions, thinly sliced
1 teaspoon dill
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon salt

Steps:

  • If using a store bought bread dough, allow the bread to thaw according to the package directions. Spray a standard Muffin Pan with nonstick spray. Roll out dough lightly with flour to 15X9 inch rectangle.
  • Combine spinach, cheeses, green onions, and seasonings in a large bowl. Mix Well.
  • Sprinkle spinach mixture evenly over the dough to within 1 inch of the edeges. Starting with long edge, roll the dough up snugly, pinching the seam close. Place the seam side down, and cut with serrated knife into about 15 slices. Place slices, cut side up, in to the prepared muffin pan.
  • Bake the rolls at 375* for 20-25 minutes or until golden. Seve warm or at room temperature.
  • The rolls can be stored in an airtight container for up to 2 days.

These pillowy biscuits are stuffed with spinach and cheese. They're perfect for Christmas morning, or any other brunch.

Nonstick vegetable oil spray or unsalted butter (for pan)
4½ cups (563 g) all-purpose flour
2 Tbsp. baking powder
2 tsp. Diamond Crystal or 1¼ tsp. Morton kosher salt
½ cup (1 stick) chilled unsalted butter
8 oz. Gruyère, Comté cheese, and/or aged white cheddar, coarsely grated
2 oz. Parmesan, finely grated
¼ tsp. crushed red pepper flakes
1 10-oz. package frozen chopped spinach, thawed
1 cup buttermilk
1 cup sour cream (not low-fat)

Steps:

  • Preheat oven to 425°F. Lightly coat a 13x9" baking pan or dish with nonstick spray. Whisk flour, baking powder, and salt in a large bowl to combine. Grate butter into dry ingredients on the large holes of a box grater, then lightly toss to coat. Freeze 10 minutes.
  • Scatter about three-quarters of Gruyère and Parmesan over flour mixture, then add crushed red pepper flakes. Squeeze as much liquid out of spinach as possible, pull into shreds, and strew over flour mixture.
  • Whisk buttermilk and sour cream in a large measuring glass or small bowl. Pour into bowl with flour mixture and mix with a fork just until combined. Knead in bowl with your hands until a soft cohesive dough forms (do not overmix).
  • Scrape dough into prepared pan and press into an even layer. Using a bench scraper or knife, deeply score into 12 portions (cut down almost to pan beneath). Scatter reserved Gruyère and Parmesan over.
  • Bake biscuits until puffed and golden, 30-35 minutes. Transfer pan to a wire rack and let cool 10 minutes before serving.

1 tablespoon caraway seed
3 eggs
1 can (11 oz) condensed Cheddar cheese soup
1 box (9 oz) frozen chopped spinach, thawed, squeezed to drain

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 9x5-inch loaf pan with shortening.
  • In large bowl, stir together all ingredients except spinach thoroughly; beat with spoon 1 minute. Stir in spinach. Pour into pan.
  • Bake 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool 20 minutes; remove from pan to cooling rack.

EASY SPINACH CRESCENT ROLLS



Easy Spinach Crescent Rolls image

This is something I made up to use some leftover spinach. They taste fantastic, are super easy, and even those who aren't big fans of spinach can enjoy! They also are easily modified for vegans (my sister enjoys Tofutti brand "better than cream cheese" which works very well in this recipe). This is my first attempt at posting a recipe, so please review and please excuse me if the recipe format looks odd.

4 tablespoons cream cheese (or cream cheese alternative)
4 tablespoons frozen chopped spinach, thawed and cooked (the small microwaveable packages work great for this)
1 tablespoon garlic salt
1 (8 ounce) package refrigerated crescent dinner rolls (garlic flavored ones are excellent for this recipe)

Steps:

  • Let cream cheese soften, you can speed this along by microwaving it carefully in 10 second intervals.
  • Combine cream cheese, spinach, and garlic salt, Just be sure to mix well.
  • Open crescent roll dough and separate the rolls, then spread about 1 tbsp of the mixture all over each triangle.
  • Roll the triangles up, and bake according to the directions on the package (usually this will be on an ungreased cookie sheet at 375 for 11 to 13 minutes or until golden brown, although these are quite tasty if slightly "doughy").

1 (8 ounce) package crescent roll dough
1 (8 ounce) package cream cheese with chives and onions (or herb)
1 (8 ounce) package frozen chopped spinach

Steps:

  • Preheat oven to directions on the crescent roll dough.
  • Unroll the crescent roll dough until it is flat.
  • Spread the cream cheese in a medium-thickness, even layer over the dough.
  • Sprinkle frozen spinach liberally on top of the cream cheese.
  • Roll the dough back together tightly, smooth edges of dough to keep any cracks from forming. Once rolled, slice into even pieces, smooth edges again. *To make slicing easier, you can put roll the dough into some foil and put it in the freezer for 10 minutes or so.
  • Place slices on an ungreased cookie sheet, and bake according to directions on the dough package. Remove, let cool, and watch them disappear!
