CRANBERRY FLUFF
Move over ambrosia salad: This sweet and tangy Thanksgiving side dish -- a Midwestern classic -- is as delicious as it is festive looking. It can also be whipped up in a matter of minutes, a boon for any holiday host.

Steps:
- Pulse the cranberries and sugar in a food processor until the cranberries are finely minced, about 8 times. Transfer to a large bowl and stir in the marshmallows. Cover the bowl with plastic wrap and refrigerate until well chilled, at least 4 hours and up to 12.
- When ready to serve, stir in the grapes, walnuts and apple, then fold in the whipped cream until completely combined.

A favourite of ours that uses only 3 ingredients and takes minutes to fix. Of course, anything with cranberries is good for me! Great to put in holiday food baskets for your teachers, neighbors, and friends.

- Melt white chocolate chips in the top of a double boiler; remove from heat.
- Add cranberries and walnuts/ drop mixture by teaspoonfuls onto wax paper.

MAINE MAPLE SNOW CANDY
What is Maple Snow Candy? It is pure maple syrup over lightly packed, clean snow. Wait till it hardens, which is almost immediately, and then you pick it up with a spoon or eat it like a lollypop. When you get new maple syrup, it is just yummy and the kids love to do this. It sure is a treat. If you don't have snow, vanilla ice cream will work fine.

Steps:
- Pour the maple syrup into a deep pot and bring to a boil--but don't let it boil over.
- Boil for 4 minutes.
- Make a snowball out of the one cup of clean snow and put it on a plate or small bowl.
- Test the syrup by pouring a small amount onto the snowball; if it clings to the snow and stops running, it is ready.
- Slowly pour the syrup in short, thin lines onto the packed snow in the pan.
- As it hardens, pick it up and eat it with a spoon or twist it onto popsicle sticks.

THE BEST CRANBERRY SCONES EVER
Recipe adapted from http://www.joyofbaking.com This is our favorite scone recipe...the scones are very festive looking and very light in texture. Great for brunches! Another great thing about this recipe is that it's easy and fast! I have managed to make this recipe in the morning before going to work (and I was on time) ;)

Steps:
- Preheat oven to 400 degrees F (205 degrees C) and place rack in middle of oven.
- Butter or line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder and salt.
- Cut the butter into small pieces and blend into the flour mixture with a pastry blender or two knives. The mixture should look like coarse crumbs.
- Stir in the cranberries and mixed fruit peel, making sure not to crush the berries.
- Add the milk and stir until just combined. Do not over mix.
- Knead the dough on a lightly floured surface. Roll or pat the dough into a circle that is 8 inches (20cm) round and about 11/2 inches (3.75 cm) thick.
- Transfer to the prepared baking sheet and then brush the scone with milk. Using a sharp knife, score the top of the scone into eight triangles and then sprinkle with the sliced almonds.
- Bake for 20 minutes or until lightly browned and a toothpick inserted into the center of the scone comes out clean.
- Remove from oven and then turn your broiler on a high setting. Sift icing sugar over the top of the scone and place under the broiler.
- Broil for just a few seconds, until the sugar has melted and turns golden brown. Make sure to watch the scone carefully as the sugar will burn very quickly!
- Transfer to a wire rack to cool.
- Enjoy!
CRANBERRIES IN THE SNOW RECIPE

- Put sugar in cranberries on low heat on the stove. Stirring constantly until almost comes to a boil. Remove from heat add jello and stir until well mixed. Put in frig to cool. While cooling drain pineapple and make topping. When cranberry mixture is cool but not jellied add crushed pineapple and mix well. Put in dish. Once set add topping and return to frig. Steps:

- In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium speed until light and fluffy, about 2 minutes. Add milk and vanilla. Beat until just combined. With mixer on low, gradually add flour, salt, cranberries, and pecans; continue beating until fully combined.
- Turn dough out onto a clean work surface, and divide into 2 equal pieces. Shape each piece into an 8-inch log, about 2 inches in diameter. Wrap logs in plastic wrap, and refrigerate until firm, about 2 hours.
- Preheat oven to 375 degrees. Using a sharp knife, cut logs into 1/4-inch-thick slices. Transfer to parchment-lined baking sheets, about 1 1/2 inches apart. Bake until edges are golden, 14 to 16 minutes, rotating baking sheets halfway through. Remove from oven, and transfer cookies to a wire rack to cool completely.
