SPICY PUMPKIN FRITTERS

- In a large bowl, whisk the first 6 ingredients. In another bowl, whisk eggs, pumpkin, milk and melted butter until blended. Add to dry ingredients, stirring just until moistened., In a deep cast-iron skillet or deep-fat fryer, heat oil to 375°. Drop batter by tablespoonfuls, a few at a time, into hot oil. Fry each side until golden brown, 1-1/2 to 2 minutes. Drain on paper towels. Serve warm. If desired, serve with chipotle mayonnaise.

- Mix together pumpkin, sugar, flour, nutmeg, salt, baking powder and egg. Mix well.
- Heat shallow amount of oil in a frying pan.
- Drop mixture by tablespoon-full into hot oil and fry over medium-low heat until golden brown on each side.
- Remove from pan and drain on paper towel.
- Dust with Confectioner's Sugar for a sweeter dish!

SPICY PUMPKIN PIE II
This is for all the people who don't like pumpkin pie. I don't like pumpkin pie either, but this one's different. It's so spicy!! It has become a much anticipated family custom. It's best to make your own pie shell instead of using the ready made kind because they aren't deep enough. This recipe is easily doubled.

- Preheat oven to 450 degrees F (230 degrees C.)
- In a large bowl, combine pumpkin puree, milk, cream, brown sugar and white sugar. Mix in the cinnamon, salt, nutmeg, ginger and cloves. Beat in the flour and eggs. Pour filling into pie shell.
- Bake for 10 minutes at 450 degrees F (230 degrees C) then reduce the temperature to 350 degrees F (175 degrees C) and bake for 50 minutes, or until filling has set.
