My husband is a lifelong veggie hater, but he tried these deep-fried pumpkin bites and fell in love. Serve them with chipotle mayo or ranch dressing. -Trisha Kruse, Eagle, Idaho

Number Of Ingredients 12

1-1/2 cups all-purpose flour
2 teaspoons baking powder
1-1/4 teaspoons salt
3/4 teaspoon chili powder
1/2 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
2 large eggs, room temperature
1 can (15 ounces) pumpkin
1/2 cup 2% milk
2 tablespoons butter, melted
Oil for deep-fat frying
Chipotle mayonnaise, optional

Steps:

  • In a large bowl, whisk the first 6 ingredients. In another bowl, whisk eggs, pumpkin, milk and melted butter until blended. Add to dry ingredients, stirring just until moistened., In a deep cast-iron skillet or deep-fat fryer, heat oil to 375°. Drop batter by tablespoonfuls, a few at a time, into hot oil. Fry each side until golden brown, 1-1/2 to 2 minutes. Drain on paper towels. Serve warm. If desired, serve with chipotle mayonnaise.

1/2 cup sugar
3/4 cup flour
1/2 teaspoon nutmeg
1/4 teaspoon salt
1 egg
1/2 teaspoon baking powder
oil (for frying)
confectioners' sugar (optional)

Steps:

  • Mix together pumpkin, sugar, flour, nutmeg, salt, baking powder and egg. Mix well.
  • Heat shallow amount of oil in a frying pan.
  • Drop mixture by tablespoon-full into hot oil and fry over medium-low heat until golden brown on each side.
  • Remove from pan and drain on paper towel.
  • Dust with Confectioner's Sugar for a sweeter dish!

This is for all the people who don't like pumpkin pie. I don't like pumpkin pie either, but this one's different. It's so spicy!! It has become a much anticipated family custom. It's best to make your own pie shell instead of using the ready made kind because they aren't deep enough. This recipe is easily doubled.

2 cups canned pumpkin puree
1 cup milk
1 cup light cream
½ cup brown sugar
½ cup white sugar
1 ½ teaspoons ground cinnamon
¼ teaspoon salt
½ teaspoon ground nutmeg
¼ teaspoon ground ginger
¼ teaspoon ground cloves
1 tablespoon all-purpose flour
2 eggs, lightly beaten
1 (9 inch) unbaked pie crust

Steps:

  • Preheat oven to 450 degrees F (230 degrees C.)
  • In a large bowl, combine pumpkin puree, milk, cream, brown sugar and white sugar. Mix in the cinnamon, salt, nutmeg, ginger and cloves. Beat in the flour and eggs. Pour filling into pie shell.
  • Bake for 10 minutes at 450 degrees F (230 degrees C) then reduce the temperature to 350 degrees F (175 degrees C) and bake for 50 minutes, or until filling has set.

1 teaspoon baking powder
1 teaspoon curry powder
1 teaspoon salt
4 cups vegetable oil for frying

Steps:

  • In a medium bowl, combine pumpkin, egg, flour, baking powder, curry powder, and salt. Mix until smooth.
  • Heat oil in a deep saucepan to 325 degrees F (165 degrees C). Drop batter by spoonfuls into hot oil. Fry until golden brown, about 2 minutes. Remove with a slotted spoon, and serve immediately.

1 cup plain yogurt
2 tablespoons sugar
1 tablespoon honey
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon crushed red pepper flakes
1 can (15 ounces) chickpeas or garbanzo beans, rinsed and drained
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger
1 large egg
1/2 teaspoon baking soda
1/2 cup chopped fresh cilantro
2 green onions, thinly sliced
Oil for deep-fat frying

Steps:

  • In a small bowl, combine the first 6 ingredients; refrigerate until serving., Place the chickpeas and seasonings in a food processor; process until finely ground.
