2 - 3 tilapia fillets, fresh or thawed if frozen
Kosher salt and pepper
All-purpose flour for dredging
1 tablespoon olive oil
2 tablespoons butter
2 cloves garlic, finely chopped
1 shallot, thinly sliced
3 - 4 thinly sliced lemon wheels, seeds removed
¼ cup dry white wine
½ cup chicken stock, low salt, preferably homemade
2 tablespoons fresh lemon juice
1 tablespoon capers, drained and rinsed
Optional: knob of butter to finish off sauce
Chopped fresh parsley for serving

Steps:

  • Heat a large skillet over medium-high heat and add olive oil and butter. Blot tilapia dry and season both sides with salt and pepper and then dredge in flour, shaking off excess. Add to pan and brown 4 - 5 minutes per side. Remove to plate and set aside.
  • Turn heat down and add garlic, shallots and lemon slices. Sauté for about 30 to 60 seconds, until starting to soften and fragrant. Pour in wine and stir and deglaze the pan, scraping up any browned bits. Cook until reduced by half.
  • Add chicken stock, lemon juice and capers. Simmer and stir for 2 - 3 minutes until reduced by about half. Stir in a small knob of butter, if desired, to finish off sauce and make it extra silky.
  • Taste for salt, pepper and acidity, adjust if needed. Return tilapia to skillet, simmer, spooning sauce over fish until warmed through. Sprinkle with chopped fresh parsley and serve immediately. Enjoy!

½ cup low sodium chicken broth, ((or dry white wine))
¼ cup heavy cream
2 tablespoons fresh lemon juice

Steps:

  • Set a skillet over medium heat; heat up oil and 1 tablespoon butter.
  • Season fish with salt and pepper and add to skillet; cook for 3 minutes per side.
  • Remove fish from skillet and set aside.
  • Add 1 tablespoon butter to the same skillet and melt over medium-high heat.
  • Stir in garlic and cook for 20 seconds.
  • Slowly whisk in chicken broth and cook for 4 minutes, or until reduced by 1/3.
  • Reduce heat to medium-low and add remaining butter.
  • Slowly whisk in heavy cream.
  • Add lemon juice and whisk until everything is well combined. Make sure to whisk continually so that the heavy cream doesn't curdle.
  • Season with salt and pepper; taste the sauce and adjust accordingly.
  • Remove from heat.

1 frozen or fresh tilapia fillet
2 tablespoons flour
1/4 cup white wine
1 pat of butter
1 tablespoon seasoning salt, such as Mrs. Dash
Sea salt, to taste
1 to 2 tablespoons olive oil

Steps:

  • Cut the tilapia fillet in half so you have two smaller pieces. Make sure to really pat the fish down with the paper towel so that you get a really good sear. It should be relatively dry to the touch (or as dry as possible for a fish to be.) Dredge the two pieces lightly in the flour and shake off the rest. It should just be a thin white dusting of flour. Now season each side with seasoning salt and put to the side. Heat olive oil in a non-stick skillet over medium-high heat and place the fish in. Season the fish with the sea salt and sear on both sides until the fish develops a nice brown color and is white in the center. Now splash in the white wine and the butter and stir around. The sauce will thicken very quickly due to the fish being dusted in the flour. Remove the fish from the pan, pour sauce over fish, and squeeze with some lemon for a burst of freshness. I served my fish with a salad made of arugula, red onion sliced thinly, and some toasted almonds. I whipped up a quick vinaigrette (balsamic vinegar, olive oil, chopped garlic, salt and pepper). This recipe is super healthy and extra delicious.

2 tomatoes, seeded and chopped (about 2 cups)
1 small onion, chopped (about 1/2 cup)
2 tablespoons chopped fresh cilantro leaves
1 lime, juiced
1 tablespoon olive oil
Minced fresh chile of choice, see Cook's Note*
Canola oil, for frying
6 fillets of tilapia (about 6 ounces each)
Sea salt and freshly ground black pepper
Flour, for dusting

Steps:

  • To make the salsa: Stir the tomatoes, onion, and cilantro together in a small bowl. Stir in the lime juice, olive oil and chile. Season with salt and pepper, to taste. Place in the refrigerator to chill while preparing the fish.
  • Preheat the oven to 200 degrees F.
  • Pour enough canola oil into a large frying pan to generously coat the bottom. Heat over medium-high heat until hot but not smoking.
  • While the oil is heating, season as many of the fillets as will fit in the pan comfortably with salt and pepper. Dredge the seasoned fillets in flour to coat both sides and shake off the excess flour. Carefully slip the coated snapper into the hot oil and give the pan a little shake to prevent sticking. Cook until lightly golden on the underside side, about 3 minutes. Flip the fillets over and cook until the thickest part of the fillets are opaque at the center, 2 to 3 minutes. Transfer to a baking sheet and keep warm in the oven. Repeat with the remaining fillets, adding more oil to the pan, if necessary.
  • Serve warm, passing the tomato salsa separately.

2 tilapia fillets

This is a really elegant dish, but really simple. An easy 1 pot sauce, simply pan seared tilapia and served over rice pilaf and a fresh vegetable for a side and you have a very quick easy dinner. I have served this many times for dinner parties and everyone loves it.

4 tilapia fillets
1 teaspoon butter
1 teaspoon olive oil
salt
pepper
1 (6 ounce) can crabmeat (you can use the more expensive claw meat, but for this sauce I don't find it makes a difference)
1 cup shrimp, peeled, tails removed, and chopped
1 cup heavy cream
3/4 cup white wine
1 tablespoon lemon juice (buy 1 lemon and cut in half, use 1/2 for the zest and lemon juice and the other half for a garnish)
1/2 teaspoon lemon zest
1 tablespoon fresh parsley
1/2 teaspoon fresh dill
1 1/2 tablespoons all-purpose flour
salt
pepper
lemon slice (use the other half that wasn't used in the sauce)
3 -4 cups rice, cooked (use any kind of rice you want)
3 scallions, fine chopped (white and green part)
1 teaspoon lemon zest (from the lemon we used for the sauce)

Steps:

  • Optional Rice -- If you decide to serve this dish over the rice you should start the rice first as the fish and sauce don't take much time to make. Just follow package directions for whatever type of rice you are using. When the rice is finished cooking, toss in the lemon zest, fresh scallions and season with salt and pepper.
  • Sauce -- In a small sauce pan, add the flour and just a little white wine and whisk well to combine the two. Then add the remaining white wine and bring to medium heat. Then add in the salt, pepper and cream and bring to a medium boil, cook just a minute and then reduce to medium low and let it simmer. The cream will naturally thicken as it simmers on low heat. You will add the shrimp and crab later. You want the sauce to simmer at least 5-7 minutes. This is just enough time to cook the fish.
  • Fish -- Make sure your fish is NOT icy cold; it doesn't have to be room temperature, but just not right out of the refrigerator. Season each side of the fish well with salt and pepper. In a medium saute pan, I prefer non stick for this, add the butter and oil and bring to medium high heat. Saute the fish on each side until golden brown. Try not to move the fish once you put it in the pan until the first side is golden brown. Cooking time will vary depending on the type of fish and thickness. Tilapia takes just 2-3 minutes on the first side and even quicker on the second side.
  • Sauce -- When you start the fish is a good time to add the shrimp and crab to your sauce. Bring the sauce back up to medium heat and add the shrimp. Cook just 1-2 minutes and then stir in the crab. Don't stir too much, you don't want to break up the crab. Add the lemon juice, zest, parsley and dill and then turn off the heat -- the sauce is done.
  • Serve -- For each plate, add 3/4-1 cup of the rice, top with one of the fish fillets and top with the sauce. Garnish with a fresh lemon slice. ENJOY!

3/4 cup whipping (heavy) cream

1/8 teaspoon white pepper
4 skinless tilapia fillets or other medium-firm fish fillets (6 oz each)

1/4 cup chopped toasted hazelnuts (filberts) or almonds

Steps:

  • In 2-quart saucepan, heat wine, lemon juice and shallots to boiling over medium-high heat. Boil uncovered 4 minutes, stirring occasionally, until liquid is reduced by half.
  • Add whipping cream to pan and heat to boiling, stirring occasionally. Boil uncovered 6 minutes, stirring occasionally, until sauce is thickened and reduced to about 1/2 cup. Remove from heat and add lemon peel. Beat in butter, 1 piece at a time, with wire whisk, adding the next piece only after the first has been completely beaten in and melted. When all of the butter has been beaten in, add 1/4 teaspoon salt and the white pepper. Cover to keep warm.
  • Sprinkle fish with 1/4 teaspoon salt; set aside.
  • In 12-inch skillet (preferably nonstick), heat oil over medium-high heat until shimmering and hot. Add fish and cook 3 minutes. Flip and cook 3 minutes longer or until edges begin to brown and fish flakes easily with fork.
  • To serve, spoon sauce over fish and sprinkle with nuts.
