RED WINE CRANBERRY SAUCE WITH HONEY

Red Wine Cranberry Sauce With Honey image

What does a chef in Napa Valley do to jazz up her cranberry sauce? Add wine, of course. This recipe was inspired by Cindy Pawlcyn, the Napa Valley chef and cookbook author, and includes smashed fresh ginger for extra verve. It's more tart than most cranberry sauce recipes, so if you like yours sweeter, feel free to add more sugar or a little more honey.

Provided by Melissa Clark

Categories     condiments, sauces and gravies, side dish

Time 40m

Yield 10 to 12 servings

Number Of Ingredients 7

2 (12-ounce) packages fresh cranberries (6 cups)
1 3/4 cups dark brown sugar
1 cup dry red wine
3 tablespoons honey
4 (1/4-inch-thick) slices fresh gingerroot, smashed
Pinch of kosher salt
1/2 teaspoon black pepper

Steps:

  • In a medium pot over medium heat, combine the cranberries, sugar, red wine, 1/2 cup water, honey, ginger and salt. Simmer gently until most of the cranberries have popped and the sauce is thick and syrupy, 20 to 30 minutes. Stir in the black pepper. Chill thoroughly before serving.

CRANBERRY ROSEMARY WINE JELLY

Cranberry Rosemary Wine Jelly image

Categories     Sauce     Wine     Berry     Herb     Thanksgiving     Cranberry     White Wine     Fall     Gourmet

Yield Makes 8 servings

Number Of Ingredients 8

4 (12-ounce) bags fresh or frozen cranberries (14 cups; do not thaw)
3 cups sugar
2 cups dry white wine
2 (5-inch) fresh rosemary sprigs
3 2/3 cups cold water
1 tablespoon plus 2 teaspoons unflavored gelatin (from three 1/4-ounce envelopes)
Special Equipment
a 6-cup nonreactive mold (see cooks' note, below) or glass loaf pan

Steps:

  • Bring cranberries, sugar, wine, rosemary, and 2 2/3 cups water to a boil in a 6- to 8-quart pot, stirring until sugar is dissolved, then reduce heat and simmer, partially covered, stirring occasionally, until all berries have burst, 8 to 10 minutes. Pour into a large colander lined with dampened paper towels and set in a deep bowl, then let stand until all juices have drained through, 10 to 15 minutes, and discard solids. If you have more than 4 cups cranberry liquid, boil in a small saucepan until reduced; if less, add water to bring total to 4 cups.
  • Stir together gelatin and remaining cup water in a clean small saucepan and let stand 1 minute to soften. Heat over moderate heat, stirring, until gelatin is dissolved. Stir gelatin mixture into cranberry liquid until combined. Pour cranberry mixture into lightly oiled mold (see cooks' note, below), skimming off any foam. Cool to room temperature, then cover with plastic wrap and chill until firmly set, at least 12 hours.
  • To unmold, run tip of a thin knife between edge of mold and jelly. Tilt mold sideways and tap side of mold against a work surface, turning it, to evenly break seal and loosen cranberry jelly. Keeping mold tilted, invert a plate over mold, then invert cranberry sauce onto plate.

CABERNET CRANBERRY SAUCE

Cabernet Cranberry Sauce image

Making fresh cranberry sauce is not only easy, but it's fun! The sound of those fresh berries "popping" under the simmering liquid is quite mesmerizing. It sure beats the sound of a can opener. The salt and cayenne may seem like odd ingredients, but just a dash of each will really brighten the flavors of this great fresh cranberry sauce. Found on about.com website and written by John Mitzewich

Provided by m2wagner

Categories     Low Protein

Time 25m

Yield 2 1/2 cups

Number Of Ingredients 9

1 cup sugar
1/2 cup cabernet sauvignon wine (almost any red wine will work)
1/2 cup orange juice
2 tablespoons orange zest
1 cinnamon stick
12 ounces bag fresh cranberries
1 pinch salt
1 pinch cayenne
1/4 cup cold water

Steps:

  • Add the sugar to a sauce pan. Pour in the orange juice, wine, zest, cinnamon stick and spices. Bring that up to a simmer on medium heat. When it's simmering, add the cranberries. Bring back up to a simmer, and the berries will start to "pop." Simmer for about 10-12 minutes. The sauce will start to thicken and the berries will have all popped and collapsed.
  • Add a 1/4 cup of cold water and turn off the heat. Don't worry if a couple berries didn't pop, as they will break down as the sauce is cooled and stirred. Take out the cinnamon stick. As the sauce cools it will get very thick. Cool to room temperature, stir, and refrigerate until needed. This will keep for several weeks.

  • Combine all ingredients in a medium to large kettle, and bring to a rolling boil, stirring intermittently. Make sure kettle has room for sauce to at least triple in volume. The juices from the berries release and as the mixture boils rapidly, it will foam and a too-small pot will easily overflow.
  • Reduce heat to low and allow sauce to simmer for about 20 to 30 minutes, or until reduced and thickened slightly, and most of the cranberries have burst. Sauce will thicken more as it cools.
  • Transfer to heat-safe jars or containers with lids. Allow sauce to cool at room temperature before refrigerating.
