1 orange pound cake, recipe follows
1 cup good raspberry jam
2 half-pints fresh raspberries
Orange cream, recipe follows
1 cup (1/2 pint) cold heavy cream
2 tablespoons sugar
1/2 teaspoon pure vanilla extract
1/2 pound (2 sticks) unsalted butter at room temperature
2 1/2 cups sugar, divided
4 extra-large eggs, at room temperature
1/3 cup grated orange zest (6 oranges)
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
3/4 cup freshly squeezed orange juice, divided
3/4 cup buttermilk at room temperature
1 teaspoon pure vanilla extract
1 1/2 cups milk
1 teaspoon grated orange zest (1 orange)
5 extra-large egg yolks, at room temperature
1/2 cup sugar
2 tablespoons sifted cornstarch
1/2 teaspoon pure vanilla extract
1/2 teaspoon Grand Marnier liqueur
1 tablespoon unsalted butter
1 tablespoon heavy cream

Steps:

  • Cut the pound cake into 9 (3/4-inch) slices and spread each slice on 1 side with raspberry jam, using all the jam. Set aside.
  • Place a layer of cake, jam side up, in the bottom of a 2 1/2 to 3-quart glass serving bowl, cutting the pieces to fit. Top with a layer of raspberries and orange cream. Repeat the layers of cake, raspberries, and orange cream, ending with a third layer of cake, jam side down, and raspberries.
  • Whip the cream in the bowl of an electric mixer fitted with the whisk attachment. When it starts to thicken, add the sugar and vanilla and continue to whip until it forms stiff peaks. Decorate the trifle with whipped cream. The trifle can sit for awhile at room temperature.
  • Heat the oven to 350 degrees F. Grease and flour 2 (8 1/2 by 4 1/2 by 2 1/2-inch loaf pans. Line the bottoms with parchment paper.
  • Cream the butter and 2 cups of the granulated sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, or until light and fluffy. With the mixer on medium speed, beat in the eggs, 1 at a time, and the orange zest.
  • In a large bowl, sift together the flour, baking powder, baking soda, and salt. In another bowl, combine 1/4 cup of the orange juice, the buttermilk, and vanilla. Add the flour and buttermilk mixtures alternately to the batter, beginning and ending with the flour. Divide the batter evenly between the pans, smooth the tops, and bake for 45 minutes to 1 hour, until a cake tester comes out clean.
  • While the cakes bake, cook the remaining 1/2 cup of granulated sugar with remaining 1/2 cup orange juice in a small saucepan over low heat until the sugar dissolves. When the cakes are done, let them cool for 10 minutes. Take them out of the pans and place them on a baking rack set over a tray. Spoon the orange syrup over the cakes and allow the cakes to cool completely.
  • Combine the milk and orange zest in a medium stainless steel saucepan over medium heat and bring almost to a boil. Remove from the heat.
  • Beat the egg yolks and sugar on medium-high speed in the bowl of an electric mixer fitted with the paddle attachment until pale and thick, about 5 minutes. With the mixer on low speed, sprinkle on the cornstarch. Beat on medium-low speed until combined, scraping down the bowl with a rubber spatula.
  • With the mixer on low speed, slowly pour the hot milk mixture into the egg mixture. Pour the mixture back into the pan. Cook over low heat, stirring constantly, until the mixture thickens, about 5 to 7 minutes. (Pay attention because it will thicken and then quickly become orange scrambled eggs!)
  • Immediately, pour the mixture through a fine sieve into a large bowl. Stir in the vanilla, Grand Marnier, butter, and heavy cream. Place plastic wrap directly on the custard and refrigerate until cold.

1 madeira cake (about 200g)
5 tbsp lemon curd
300g raspberries
1 tsp vanilla extract
3 tbsp limoncello
100g skinless green pistachios , finely chopped
400g thick custard
300ml double cream
2 tbsp icing sugar

Steps:

  • Cut the madeira cake into 1cm thick slices, and sandwich pieces together using 4 tbsp of the lemon curd. Cut into small squares, and pile into four dessert glasses or one medium trifle dish.
  • Mash half the raspberries in a bowl with a fork, and stir in the vanilla and limoncello. Spoon over the sponge. Top with more halved or whole raspberries - saving some to finish - and a scattering of the pistachios.
  • Stir most of the remaining pistachios into the custard, then spoon over the fruit and sponge.
  • Whip the cream and sugar in a large bowl until thick and billowy, and holding soft peaks. Spoon over the trifles. Top with the reserved pistachios, a swirl of lemon curd and the remaining raspberries.

1 can (14 ounces) whole-berry cranberry sauce
1 cup sugar
1 cup water

  • In a large saucepan, combine cranberries, cranberry sauce, sugar and water. Bring to a boil, stirring to dissolve sugar. Reduce heat to medium; cook, uncovered, until thickened, 10-15 minutes. 2 teaspoons lemon juice

  • In a small saucepan, bring 1/2 cup sugar, 1/4 cup water, and lemon juice to a boil, stirring to dissolve sugar, 1 to 2 minutes. Let cool.

  • Heat oven to 350 degrees. Butter 8-inch round cake pan. Line bottom with parchment paper; dust side with flour.
  • Combine eggs, sugar, vanilla, zest, and salt in mixer bowl. Place bowl over (not in) pan of hot water and whisk until warm.   • To make cranberry filling: combine cranberries, water, sugar, lemon zest, and lemon juice in medium saucepan and heat to boiling. Reduce heat and simmer, stirring occasionally, until cranberries pop and flavors are blended, about 10 minutes. Let cool to room temperature.
  • To make candied almonds: melt butter in small skillet over medium-high heat. Add almonds and 1 T. sugar; cook, stirring constantly, until sugar is dissolved and almonds turn golden brown. Sprinkle with remaining 1 T. sugar and spread on piece of waxed paper to cool. Store in airtight container.
  • Cut cooled cake horizontally in half with long serrated knife. Trim to fit neatly in 2-1/2-quart glass dish with straight sides. Spread each cake half with half the cranberry filling.   • Heat butter in a large glass bowl in microwave on high until melted, about 30 seconds. Whisk in confectioners' sugar, rum extract, and water, stirring to form a smooth sauce. 1 package instant vanilla pudding
milk
1 (4 ounce) container Cool Whip
1/2 cup raspberry preserves
2 cups fresh raspberries or 12 ounces frozen raspberries, thawed
1/4 cup sliced almonds

Steps:

  • Cut cake into 1 inch cubes.
  • Prepare pudding according to directions on package.
  • Fold half of the Cool Whip into the pudding.
  • Place 1/3 of the cake cubes in a 2 quart serving bowl; dot with 1/2 of the raspberry preserves.
  • Layer 1/2 of the raspberies and 1/2 of the pudding mixture over this.
  • Continue layering with 1/3 of the cake cubes, the remaining preserves, raspberries and pudding mixture.
  • Top with remaining cake cubes and whipped topping.

2 cubes Turkish delight , optional
500g pot good-quality vanilla custard
½ a 350g/12oz bought madeira loaf
300g pack raspberry
juice 1 orange
200ml tub crème fraîche (use reduced-fat if you like)
handful pistachios , roughly chopped

Steps:

  • If you don't want to add the Turkish delight, move on to step 2. Snip the Turkish delight into pieces with kitchen scissors into a large bowl and add a few tablespoons of water. Microwave on High for 1 min, stirring after 30 secs, or until dissolved and smooth. Tip in the custard and stir together.
  • Break the cake into rough chunks and divide between 6 sundae dishes or serving glasses. Mix half of the raspberries with the orange juice in a bowl and crush gently with a fork to break the fruit up slightly. Spoon over the cake layer. Cover with the custard, then leave to cool in the fridge for at least 30 mins. Can be made up to 1 day ahead. To serve, top the trifles with a dollop of crème fraîche, the remaining raspberries and a sprinkling of pistachios.

This was served to me at a ladies luncheon. It took months to talk the hostess into giving up the recipe. She did so only after I promised no substitutions. It's an elegant, delicious dessert. Triffle supposedly got it's name by the way polite ladies responded to the question "would you like dessert?" So as not to appear gluttonous a polite lady would respond "Yes please, just a triffle." I don't know if that's true but it's a cute story.

1 (5 ounce) package vanilla pudding mix, not instant
1 pint whipping cream
2 tablespoons sugar
1 teaspoon vanilla
1 (10 ounce) jar seedless raspberry jam
10 ounces angel food cake
2/3 cup slivered almonds, toasted
1 pint raspberries
mint sprig, for garnish

Steps:

  • Cut or tear angel food cake into bite sized pieces. I use an electric knife for ease of cutting and to not squish the cake.
  • Raspberries may be fresh or frozen. Frozen are absorbed into the cake better. Fresh make a better garnish. Use both if you like.
  • Reserve as many raspberries & almonds as you desire for top garnish.
  • Prepare pudding.
  • Whip cream with sugar and vanilla.
  • Warm preserves until liquid.
  • In a straight sided trifle bowl place half the cake cubes.
  • Pour half the preserves over the cake.
  • Sprinkle half of raspberries and half of almonds over the preserves.
  • Cover with half the pudding.
  • Cover with half the whipped cream.
  • Repeat layers with remaining ingredients, finishing with whipped cream.
  • Chill at least four hours but overnight is best.
  • Garnish with reserved raspberries and almonds just before serving.
  • Garnish with mint if you like but it's beautiful without it.

1/4 cup cornstarch
1 tbsp freshly grated orange zest

20 ladyfingers
1/4 cup tawny port (or Grand Marnier)
3 packages (6 oz each) fresh raspberries

Steps:

  • Stir milk, sugar, cornstarch, and zest in a saucepan. Bring mixture almost to a boil over medium heat. Beat eggs in blender on low speed and slowly add hot milk mixture. Return to pan. Cook over low heat (do not boil), stirring constantly, until custard thickens enough to coat the back of a spoon, about 7 minutes. Stir in vanilla. Cool in refrigerator, stirring once. To assemble, place a layer of ladyfinger halves in the bottom of a glass serving bowl. Sprinkle with a little port. Spread 1/3 berries and 1/3 custard on top. Continue layering, ending with custard. Cover with plastic wrap; refrigerate 1 hour.

2 cups sugar
2 cups water
1/4 cup crystallized ginger, chopped
1 tablespoon grated fresh orange zest

8 ounces cream cheese, softened
2 cups heavy cream
24 ounces poundcake, cut into 3/4-inch thick slices (two loaves all-butter pound cake)
additional grated fresh orange zest, to garnish (optional)

Steps:

  • Make compote:.
  • In a medium saucepan cook the cranberries, 2 cups of sugar, 2 cups of water, ginger, and orange zest for about 5-8 minutes over medium-high heat, until some of the berries just begin to burst. Let compote cool completely.
  • Make Cream Filling:.
  • Using an electric mixer, beat cream cheese, brown sugar, 1/4 cup granulated sugar and vanilla on high until well combined. With mixer on medium, gradually add heavy cream; continue beating until soft peaks form.
  • Arrange 1/3 of cake in a 3 quart trifle dish. Spoon 1/3 of compote over cake; spread to sides of dish. Dollop 1/3 of cream filling over compote; spread to sides of dish. Repeat twice more, ending with cream filling. Cover; refrigerate at least 2 hours (or up to 1 day). Garnish with freshly grated orange zest (or candied orange zest), if desired.

1 purchased angel food cake, sliced
2 (16 ounce) bags frozen sweetened raspberries
1 cup raspberry-cranberry frozen juice concentrate, thawed
6 tablespoons Cointreau liqueur or 6 tablespoons brandy (or six tablespoons orange juice mixed with 1 tablespoon sugar)
4 cups cranberry-raspberry juice
2 tablespoons cornstarch
6 large egg yolks
3/4 cup sugar
1/2 cup fresh orange juice
4 tablespoons unsalted butter
2 tablespoons finely grated orange zest
1 pinch salt
8 ounces mascarpone cheese
1 cup heavy cream, whipped to medium firm peaks
1/2 cup heavy cream, whipped to medium-firm peaks and placed in decorating bag with piping tip or in plastic resealable b

Steps:

  • To make the berry filling: In a large saucepan bring the 4 cups of raspberry-cranberry juice to a boil over high heat.
  • Cook until reduced to about 1 1/2 cups, about 10 minutes.
  • In a small bowl, stir together 4 tablespoons Cointreau with the cornstarch.
  • Whisk into the reduced raspberry-cranberry juice and cook on medium heat until juice has thickened and become clear.
  • Remove from the heat and add the two 16-ounce bags of frozen raspberries.
  • Set aside and let stand until the berries have thawed.
  • To make the mousse layer: In a heavy nonreactive saucepan (stainless steel or enamel) combine the egg yolks, sugar, orange juice and butter.
  • Cook over medium heat, stirring to dissolve the sugar, until the butter melts.
  • Reduce the heat to medium-low and stir constantly with a wooden spoon until the mixture thickly coats the back of the spoon, about 5 to 10 minutes.
  • Strain mousse through a fine-mesh strainer to remove lumps, into a large bowl.
  • The orange mousse mixture will be very thick.
  • Refrigerate, covered with plastic wrap on the surface to prevent a skin from forming, until completely chilled, about half an hour.
  • When mixture is chilled, in a large bowl, mash mascarpone cheese with a rubber spatula, add 1/4 cup of the orange mousse and stir until smooth and creamy.
  • Stir in the remaining orange mousse and then fold in the whipped cream.
  • To make the soaking liquid: In a small bowl, mix the 1 cup of thawed raspberry-cranberry concentrate with 2 tablespoons of Cointreau.
  • Stir until blended and set aside.
  • To assemble the Trifle:.
  • In a 12-cup trifle bowl or a glass bowl with straight sides, layer half the slices of the angel-food cake on the bottom, making sure that only the white, cut edges of the cake are visible against the sides of the trifle bowl.
  • Drizzle cake with half the soaking liquid.
  • Evenly spread half the orange mousse mixture over the soaked cake slices.
  • Spread three-quarters of the berry filling carefully over the mousse.
  • Layer the remaining angel-food cake slices on top of berry filling, cut sides against the glass.
  • Drizzle cake with remaining soaking liquid.
  • Spread remaining orange mousse mixture over cake.
  • Mound remaining quarter of the raspberry mixture on top of the mousse in the center of the bowl.
  • Pipe whipped cream on top of trifle to decorate.
  • Garnish with fresh raspberries.
  • Refrigerate for 4 to 6 hours or overnight before serving.
