1 ½ cups fresh cranberries
1 cup water
1 cup white sugar
½ cup orange juice
6 eggs
½ cup white sugar
½ cup orange juice
½ cup half-and-half
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
12 slices French bread

Steps:

  • Combine cranberries, water, sugar, and orange juice in a saucepan. Cook over medium heat until cranberries soften and turn jammy, 20 to 25 minutes.
  • Preheat the oven to 300 degrees F (150 degrees C).
  • Whisk eggs, sugar, orange juice, half-and-half, cinnamon, and vanilla extract together in a shallow dish. Dip slices of French bread in the egg mixture until well coated on both sides. Transfer to the griddle and cook until egg coating is set, 3 to 4 minutes per side.
  • Arrange 2 slices of French toast on each plate and spoon sauce on top.

1/2 cup heavy cream
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon vanilla extract
Zest of one orange
1 tablespoon clarified butter
8 slices Challah bread, cut into 1-inch-thick slices
Apple Cranberry Compote, recipe follows
Pecan Compound Butter, recipe follows
Maple Syrup Reduction, recipe follows
1/4 cup powdered sugar, for garnish
1 cup fresh or frozen cranberries
1/2 cup fresh-squeezed orange juice
3 tablespoons granulated sugar
Zest of one orange
3 Granny Smith apples, peeled and cut into a 1/2-inch dice
1/2 cup pecans
Kosher salt
2 sticks (16 tablespoons) unsalted butter, at room temperature
1 cup maple syrup

Steps:

  • Whisk together the eggs and heavy cream in a large bowl and add the granulated sugar, cinnamon, nutmeg, vanilla and orange zest and whisk again.
  • Heat some clarified butter in a large skillet over medium-high heat. Dip four slices of the Challah into the egg mixture until soaked through. Immediately place each slice onto the hot skillet. Fry until golden brown, 2 to 3 minutes per side, and set aside. Repeat with the remaining 4 slices of bread.
  • Cut each piece of French toast in half diagonally and plate four halves per serving. Top with Apple Cranberry Compote, a scoop of Pecan Compound Butter and a light drizzle of the Maple Syrup Reduction. Dust with powdered sugar and enjoy!
  • Add the cranberries, orange juice, sugar, orange zest and apples to a large skillet and cook over medium heat for about 10 minutes, or until the apples are cooked as desired.
  • Preheat the oven to 325 degrees F. Place the pecans on a cookie sheet and bake for about 10 minutes, or until they become aromatic and heated through. Salt immediately while still hot. Allow the pecans cool completely.
  • Once the pecans are completely cool, chop them up into small pieces and add to the butter, until incorporated. Set aside until ready to serve, or refrigerate.
  • Place the maple syrup in a small saucepan and heat over low heat until reduced by one-half. Use sparingly to top off French toast.

1 orange
4 large eggs, lightly beaten
1 1/2 cups milk
1 teaspoon ground cinnamon
4 cups cornflakes, crumbled
3 slices bacon, cooked and crumbled
1 loaf challah, cut into 1-inch-thick slices
6 tablespoons unsalted butter
1 cup warm maple syrup
Ground cinnamon, for serving

Steps:

  • Preheat the oven to 200 degrees F. Fit a baking sheet with a wire rack. Heat a griddle pan or nonstick skillet over medium heat.
  • Zest the orange and set aside. Working over a medium bowl, segment the orange; squeeze the juice from the remaining orange membranes.
  • Whisk the eggs, orange zest, milk, cinnamon and orange juice in a baking dish or shallow bowl. Add the cornflakes and bacon to another baking dish and toss together. Dip the bread slices in the egg mixture and let them soak for 1 minute.
  • While the bread is soaking, melt 2 tablespoons of the butter on the griddle pan or skillet.
  • Working with one slice of bread at a time, let the excess egg mixture drip off and then dredge the bread in the cornflake mixture. Add the bread to the griddle, carefully placing as many slices of bread as can comfortably fit without touching too much (it's OK if the edges need to touch a little). You can dredge the bread, transfer it to an unlined baking sheet and hold for 5 minutes while one batch is cooking.
  • Cook on one side, rotating occasionally, until the bottom is golden brown and crisp, about 3 minutes. Flip and cook the other side until it is equally browned, another 2 minutes. Transfer the slices to the prepared baking sheet and keep warm in the oven while you complete the next batches. Repeat the cooking process, melting 2 tablespoons of butter for each batch.
  • When all of the French toast is cooked and you are ready to serve, gently stir together the maple syrup and orange segments, making sure not to break up the segments. Spoon the syrup over the French toast and sprinkle with cinnamon. Serve immediately.

1 can (14 ounces) whole-berry cranberry sauce

2 cups 2% milk
1/3 cup maple syrup
2 teaspoons ground cinnamon
Dash ground nutmeg
Additional maple syrup, optional

Steps:

  • Arrange half the bread in a single layer in a greased 13x9-in. baking dish; top with cream cheese and spoonfuls of cranberry sauce. Top with remaining bread., In a large bowl, whisk eggs, milk, 1/3 cup syrup, cinnamon and nutmeg until blended. Pour over casserole. Refrigerate, covered, overnight., Remove casserole from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, uncovered, until a knife inserted in center comes out clean, 50-60 minutes. Let stand 10 minutes before serving. If desired, serve with additional maple syrup.

1 (20 ounce) loaf uncut white bread
1 (8 ounce) package cream cheese (room temperature)
2 tablespoons sugar
1 egg yolk
1 teaspoon grated orange zest
1 tablespoon orange juice
8 eggs
1 egg white
1 cup milk
1 teaspoon vanilla extract
1 tablespoon sugar
12 ounces fresh cranberries
1/2 cup maple syrup
1/2 cup sugar
1/2 cup orange juice
1 teaspoon vanilla extract

Steps:

  • Cut 1" from each end of the loaf and discard or use for another recipe.
  • Cut the loaf into 1" thick slices and halve each slice on the diagonal.
  • Cut in the diagonal side of each piece of bread to form a pocket (this is almost like cutting the bread into 1/2" slices except you don't go through any of the other sides of the bread).
  • Mix the cream cheese, 2 tbsp sugar, egg yolk, zest and 1 tbsp orange juice until smooth.
  • Fill each bread pocket with 1 tbsp of the cream cheese mixture.
  • Put bread slices in a 13" x 9" baking dish, overlapping slightly.
  • Whisk the eggs, milk and 1 tsp vanilla until frothy and pour over the bread.
  • Cover with plastic wrap and refrigerate overnight.
  • Preheat oven to 350 degrees F.
  • Sprinkle bread with 1 tbsp sugar.
  • Bake for 35 minutes or until a toothpick inserted into the center comes out clean.
  • Cranberry Sauce: Combine cranberries, maple syrup, 1/2 c sugar, 1/2 c orange juice and 1 tsp vanilla in a pot.
  • Cook over medium heat stirring as required until cranberries burst and mixture thickens, about 15 minutes.
  • Cool sauce and serve with toast.

A few years ago, at the age of 50, I decided to teach myself to cook. I made this French toast that my mother would serve with grilled ham and sweet warm maple syrup. I was so pleased with the results, I've been cooking ever since!
