This simple turkey stuffing recipe is studded with dried cranberries, walnuts, celery, and onions, and scented with a mix of fresh herbs, for an easy and comforting addition to your Thanksgiving table.

10 cups unseasoned dry bread cubes
2 cups walnuts (, chopped)
1 cup dried cranberries
9 tablespoons butter
3 celery stalks (, chopped)
2 large yellow onions (, chopped)
1/4 cup Italian parsley (, chopped)
1 tablespoon ground sage
1 tablespoon ground thyme
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 1/2 - 2 cups chicken broth

Steps:

  • Preheat oven to 350°F.
  • Place bread cubes, walnuts and cranberries in large bowl and set aside.
  • Coat a 9x13-inch baking pan with 1 tablespoon butter.
  • Melt remaining butter in skillet over medium-high heat and add celery and onions. Cook 4-5 minutes, or until softened and lightly browned, stirring frequently. Add parsley, ground sage, thyme, kosher salt and pepper and mix well. Add mixture to bread cube mixture and toss to combine.
  • Drizzle 1 1/2 cups of the chicken broth over mixture in bowl, and stir to combine. Add more chicken broth and salt and pepper as desired.
  • Place stuffing in prepared pan and bake, uncovered, until top is lightly browned, about 50-60 minutes.

½ cup butter
1 cup chopped celery
1 cup chopped onion
1 (1 pound) loaf French bread, torn into small pieces
1 tablespoon rubbed sage, or to taste
2 egg whites, beaten
½ cup frozen cranberries, chopped
½ cup chopped walnuts
½ cup chopped almonds
½ cup chopped pecans
1 (14.5 ounce) can chicken broth

Steps:

  • Melt butter in a large skillet over medium heat. Cook celery in butter until almost tender. Add onions, and cook until lightly browned and tender. Set aside.
  • Place the pieces of bread into a large glass or ceramic bowl, and sprinkle liberally with rubbed sage. Heat bread in the microwave for 2 minutes, then heat for 10 seconds at a time until bread is crispy. Remove from the microwave, and add the egg whites, cranberries, walnuts, almonds and pecans toss lightly to distribute. Add the onion and celery with the butter, and toss lightly while moistening to your desired consistency with chicken broth.
  • Use this to stuff a turkey, or transfer to a 9x13 inch baking dish.

1 onion , finely chopped
25g butter
2 slices white bread , whizzed to chunky breadcrumbs
200g sausagemeat
1 apple , peeled and grated
200g cranberry
50g pistachios
4 sage leaves, finely sliced
½ tsp mixed spice
bay leaves , to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cook the onion in the butter until soft but not browned. Add the breadcrumbs and stir so they soak up all the excess butter and fat. Let the mixture cool. Tip into a bowl with the sausagemeat, apple, cranberries, pistachios, sage and mixed spice. Mix well, then roll into balls. You can now cover and chill for up to a day before cooking.
  • To cook, place in a roasting tin and bake for 40 mins, turning a few times, or until browned all over. Add the bay leaves, if using, for the final ten minutes of cooking.

1/4 cup I Can't Believe It's Not Butter!®
1/2 teaspoon crushed (dried thyme)
1/4 teaspoon freshly ground pepper
2 Tablespoons chopped (fresh parsley)
1/2 cup macadamia nuts (roughly chopped)
1/2 cup dried cranberries
1/2 cup chicken broth

Steps:

  • Preheat oven to 325 degrees F. Grease a 9 x 13-inch pan, or any other 3-quart pan, with I Can't Believe It's Not Butter!®. Set aside.
  • Cut each roll into 8 pieces (cut into more pieces if you'd like smaller bread pieces). Place the bread into a large bowl, set aside.
  • In a large skillet, melt I Can't Believe It's Not Butter!® over medium heat. Add the celery and onion and cook until slightly browned on the edges and tender, about 5-6 minutes.
  • Pour the celery & onions mixture over the bread. Add the dried thyme, pepper, parsley, macadamia nuts, cranberries, and broth. Stir the mixture until combined, and the broth is absorbed.
  • Cover with foil and bake for 35 minutes. Remove the foil and bake another 10-15 minutes, or until the bread is toasted. Serve.
