CREAMY JALAPEñO BBQ COLESLAW

- For the Coleslaw Veggies
- In a large plastic or glass mixing bowl, combine the green cabbage, red cabbage, shredded carrots, and jalapeño.
- Set aside while you prepare the coleslaw dressing.
- In a 2 cup glass measuring cup, combine the mayonnaise, milk, buttermilk, apple cider vinegar, and lemon juice.
- Whisk until smooth.
- Add the sugar, starting with 2 tablespoons, and adding more to taste if desired.
- Then, add the salt and black pepper to the liquid mixture.
- Whisk until well combined.
- Pour the prepared liquid mixture over the cabbage mixture.
- Stir, using a wooden spoon or a spatula, until well coated.
- Taste for seasonings and add additional salt and pepper if desired.
- Cover with plastic wrap and refrigerate for an hour or up to overnight.

JALAPENO RANCH SLAW

- In a blender or mini food processor, combine the yogurt, buttermilk, mayonnaise, 3 tablespoons of the cilantro, half of the scallions, the garlic, jalapenos, chipotle powder, 1/2 teaspoon salt and a few grinds of pepper. Process until smooth.
- Put the coleslaw, the remaining 2 tablespoons cilantro and the remaining scallions in a large bowl. Add the dressing and toss to coat.
JALAPENO CRANBERRY SAUCE

- In a medium saucepan, put the sugar, ginger, jalapenos, orange zest and orange juice. Simmer for 2 minutes. Add the cranberries and set over medium heat for 20 minutes, stirring frequently. Add water if the mixture appears too dry. Add in the lemon zest and juice and season with salt or a bit more sugar. Let cool completely and serve.
QUICK CRANBERRY COLESLAW
A very tasty coleslaw using a pre-packaged cabbage mix and dressing it up with cranberries and nuts. Feel free to lighten it up with low/no fat mayo & Splenda.

JALAPENO CRANBERRY JELLY (CHRISTMAS JELLY)
This is one that will have your tastebuds begging for more. Note: When cutting hot peppers, disposable gloves are recommended and avoid touching your face. I saw the cutest idea. Place one very small whole pepper or one whole cranberry in each sterilized half-pint jar pouring over the liquid jelly and processing as recommended. This recipe halves easily. Also, I used cranberry juice cocktail in place of pure cranberry juice.

- Place cranberry juice and jalapenos in a blender; cover and process until peppers are fully chopped. Strain through a seive pressing with the back of a spoon to remove all liquid. This can also be strained through a double-thickness of cheesecloth.
- Pour the strained juice into a Dutch oven; add vinegar. Stir in sugar. Bring to a full rolling boil, stirring constantly. Stir in pectin; return to a full rolling boil that cannot be stirred down. Boil for 1 minute (no longer), stirring constantly.
- Remove from the heat; skim off foam with a metal spoon. Add food coloring if desired. Carefully ladle hot mixture into hot sterilized half-pint jars, leaving 1/4-in. headspace. Wipe rims and adjust lids. Process for 5 minutes in a boiling-water canner.

- Add enough water to the orange juice to make one cup of liquid.
- Combine cranberries, orange zest, juice and water, tequila, and sugar in a large pot.
- Bring to a slow boil, stirring occasionally.
- When the cranberries begin to pop, add the chopped jalapeno cook for about 5 minutes, stirring frequently.
- If the sauce seems a little thick, add a bit more water.
- Remove from heat, transfer to a bowl and chill.
CRANBERRY-JALAPENO SALSA
For this recipe you can really use as many jalapeños as you like, or substitute a half of a habanero pepper, seeded and finely chopped or use one serrano chile, seeded and finely chopped. This recipe makes about 2 cups but can easily be doubled. This is great with turkey cutlets, chicken or pork. This will intensify in taste the longer refrigerated.

- Roast red bell pepper either over a gas flame until it blisters or in a skillet with 2 tablespoons oil and blister over high heat. Wrap in a wet paper towel and set aside to steam gently. When you remove the towel, most of the skin should come off with it. Scrape off the rest of the skin with a butter knife. For corn, place "unshucked" ears of corn in an oven and set at 350 degrees - roast for 30 minutes or until kernels are soft. Shuck the corn, remove the silk, cut the kernels from the cob and proceed as directed.
- Combine all the ingredients in a bowl, including salt and pepper to taste. Toss well. Cover and let stand in the refrigerator for 2 hours before serving.

Steps:
- Rinse cranberries in cold water; drain.
- In a medium size saucepan mix water and sugar and bring to boil on medium-high heat; stir to dissolve.
- Add cranberries and Jalapeno peppers and return to boil.
- Reduce heat, cover and boil gently, for 10 minutes, stirring occasionally.
- Add lemon juice and sherry and stir well to blend.
- Remove from heat and let cool completely at room temperature.
- Refrigerate in a glass container with lid.
- Serve with turkey or chicken.
- CAUTION when handling the Jalapeno peppers.
- Wear plastic gloves, or wash hands thoroughly after handling, using any toothpaste.
- Then wash again with soap and water.
- You can also use a mixture of bleach and water to remove all pepper heat.
