1 (3 1/2-pound) chicken, cut into 2 legs and 2 breasts
1 cup maple syrup
1 tablespoon oil
1/4 cup white wine vinegar
1 3/4 cups tomato puree
1/2 cup dry sherry
1 tablespoon soy sauce
Freshly ground salt
Freshly ground pepper
2 teaspoons hot curry powder
1 teaspoon powdered marjoram
4 whole cloves, smashed
1 medium onion, finely diced
1/2 cup mushrooms, finely sliced
2 tablespoons golden raisins
1/4 cup blanched almonds
1 green pepper, finely diced
2 celery stalks, finely sliced

Steps:

  • Place chicken pieces in casserole dish and cover with syrup, oil, vinegar, tomato puree, sherry and soy sauce. Season with salt and pepper and add curry powder, marjoram and cloves. Combine well and marinate for 4 hours at room temperature.
  • Place casserole on stove top on low heat and simmer 30 minutes. Add onion, mushrooms, raisins, almonds, green pepper and celery and cook another 30 minutes. Serve with wild rice.

1 (3 1/2 lb) roasting chickens, about 3-1/2 pounds, cut into 4 quarters
1 fresh orange
1/4 cup butter, melted
1/2 cup maple syrup
1 teaspoon onion powder
1 teaspoon kosher salt (to taste)

Steps:

  • Preheat oven to 400 degrees.
  • Line a 9 x 13-inch baking pan with nonstick foil.
  • Place chicken quarters skin-side up on the prepared pan.
  • Remove the zest from the orange with a grater, then juice the orange.
  • Whisk together orange zest, orange juice, butter, maple syrup, onion powder, and salt.
  • Brush orange mixture over the chicken pieces.
  • Bake 45 to 50 minutes, until done, basting midway with drippings.

Maple Syrup Glazed Ham - Jambon Glacé a L ' Érable image

This is a Quebec recipe, we make for Easter, Thanksgiving or Christmas. It is a recipe which has been passed down for my great great grandmother, my grandmother made this, my mom, my aunties, now I am sharing this family recipe with you all. Soon to be in my new cookbook at Cafepress :)

Number Of Ingredients 8

1 (9 lb) ham (4 kg)
2 cups maple syrup, combined with
10 cups water
2 cups dried raisins
2 cups maple sugar, crumbled
1 teaspoon dried mustard (Keen's Dried Mustard)
2 teaspoons whole cloves (optional)
4 teaspoons apple juice

Steps:

  • In a large pot bring the ham to a boil in the maple syrup water.
  • Reduce the heat and let simmer on low heat for 3 to 4 hours, or until the ham is tender.
  • Remove the ham from the water and let sit for 15 minutes or until cooled.
  • Reserve a few cups of this water for later use.
  • Once ham is cooled remove the rind and place aside for now.
  • In a bowl crush the maple sugar and mix with the mustard and apple juice, stir well till blended.
  • Add the cloves to the maple sugar and juice mixture and let sit for 15 minutes until the flavors blend together.
  • Place your ham in a roasting pan and baste your ham with the maple sugar juice mixture, making sure to heavily coat the whole ham.
  • Add a cup or more of the ham water into your roasting pan and add the ham rind.
  • Add the raisins, placing some raisins over the the top of ham.
  • Bake ham for 40 to 50 minutes in a 300°F oven. Baste your ham often adding more ham water if needed, the more the tastier it will be.
  • Remove from oven and place on serving platter, pour the raisins and maple syrup drippings over the ham.
  • Note: I use quebec smoked ham. My mother makes this ham with bacon strips over top of ham held on with toothpicks. Like I said the more flavors the tastier it will be. We make this ham for Easter, Thanksgiving or Christmas. Serve with mashed potatoes, carrots and turnips all whipped together.

1/2 cup sugar
2 tablespoons baking powder
1/2 teaspoon salt
1 1/2 cups flour
1/4 cup shortening
1 cup milk
1 1/2 cups maple syrup
1 cup water

Steps:

  • Preparation of the grandfathers : Mix sugar, baking powder, salt and flour. Incorporate shortening. Add milk and mix until the dough is homogeneous.
  • Syrup preparation : In a big casserole, bring to boil the maple syrup and water. With an ice cream spoon, do balls with the dough and put in the casserole. Cover and let simmer for 15 minutes but don't remove the cover during the cooking time.
