One 14-ounce can whole-berry cranberry sauce, drained
14 ounces sweetened condensed milk
1/4 cup orange juice (no pulp if possible)
8 ounces whipped topping (in a tub!)
1 prepared graham cracker crust

Steps:

  • In a large bowl, completely mix the cranberries, condensed milk and orange juice. Fold in the whipped topping.
  • Pour the filling into the prepared graham cracker crust and refrigerate 4 hours to overnight. Serve chilled.

1 cup packed brown sugar
2/3 cup sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
1/4 teaspoon almond extract
3-1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup chopped walnuts
2 cups chopped fresh or frozen cranberries

Steps:

  • In a bowl, cream butter and sugars, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in extracts. Combine the flour, baking powder, salt and baking soda; gradually add to the creamed mixture. Stir in walnuts. Carefully stir in cranberries. Shape into three 7-in. rolls; wrap each roll in waxed paper and refrigerate for 4 hours or overnight. , Unwrap dough and cut into 1/4-in. slices. Place 1 in. apart on ungreased baking sheets. Bake at 375° for 10-12 minutes or until golden brown. Cool on wire racks.

10 graham crackers (2 1/2 by 5 inches)
1 cup sugar
5 tablespoons unsalted butter, melted
1/2 cup unsweetened cranberry juice
2 quarts strawberries, hulled and thinly sliced (a few whole berries reserved for garnish)
1/4 cup cornstarch
1/4 teaspoon salt
1/2 cup heavy cream

Steps:

  • Preheat oven to 350 degrees. In a food processor, blend graham crackers with 2 tablespoons sugar until finely ground; add butter and pulse until crumbs are moistened. Press mixture into the bottom and up the side of a 9-inch pie plate. Bake until crust is lightly browned, 12 to 14 minutes. Transfer to a wire rack and let cool completely.
  • Meanwhile, in a medium saucepan, combine 3/4 cup sugar, cranberry juice, 2 cups strawberries, cornstarch, and salt. Using a potato masher, gently mash strawberries. Bring to a boil; reduce to a simmer and cook, stirring frequently, until very thick, about 1 minute. Remove from heat and let cool slightly. Stir in remaining strawberries. Pour into cooled pie crust. Refrigerate until set, at least 4 hours (or up to 1 day).
  • In a large bowl, beat cream until soft peaks form. Sprinkle 2 tablespoons sugar over cream and continue to beat until soft peaks return (do not overbeat). Spread whipped cream over pie, leaving a 1 1/2-inch border around edge. Garnish with whole berries.

1 pint fresh raspberry (plus more for garnish)
1 cup cold heavy cream
2 tablespoons powdered sugar, sifted

Steps:

  • If using a store-bought crust, prebake it according to package directions and let it cool.
  • Refrigerate crust until needed.
  • In a bowl, beat the cream cheese and condensed milk together using an electric mixer on med-high speed until smooth and fluffy (about 2 minutes).
  • Add in the lemon juice and continue beating for 1 minute.
  • Blend in the vanilla; scrape mixture into the chilled pie crust; smooth the top with the back of a spoon.
  • Cover with loosely tented foil and refrigerate for at least 2 hours but preferably longer and up to overnight.

1/3 cup cornstarch
6 cups hulled coarsely chopped strawberries (about 1 1/2 lb., fresh or frozen)
1 cup sugar
1/8 teaspoon salt
2 teaspoons butter
1/2 teaspoon vanilla extract or 1/2 teaspoon almond extract
1 1/4 cups heavy cream
2 cups fresh strawberries, sliced (about 8 ounces)

Steps:

  • Bake pie crust as directed on package.
  • In a small bowl, combine the cornstarch and 1/3 cup cold water.
  • Stir with a spoon to combine them well, dissolving any lumps.
  • In a medium saucepan, combine the chopped strawberries, sugar, and salt.
  • Stir to combine the fruit and sugar, and then cook over medium heat until the mixture comes to a gentle boil.
  • Cook, stirring often, until the berries create a pool of sauce, about 5 minutes.
  • Stir up the cornstarch mixture, and add it to the pan.

  • Serve cold, and spoon a small pile of sliced strawberries alongside each piece of pie.
  • Refrigerate any remaining pie for up to 1 day.
