CRANBERRY-ALMOND COOKIES
Studded with dried cranberries and toasted almond slices and flavored with almond extract, these tasty drop cookies are a snap to make. They go from the mixing bowl to your plate in just 20 minutes-perfect for satisfying sudden homemade dessert cravings or last-minute bake sale requests. Because they are made with everyday pantry ingredients, Cranberry-Almond Cookies are a great year-round cookie jar staple, but we especially love them around the holidays because the cranberries add a festive splash of red to any Christmas cookie tin. Plus, the recipe makes three and a half dozen cookies, so you'll have plenty for cookie exchanges, parties, and gift-giving, and more than a few leftover for yourself! While the recipe is delicious as-is, it's also very adaptable if you would like to change it up a bit. Add a little orange zest to the batter for a bright note that works well with the dried cranberries and almonds. Or lose the cranberries completely and replace them with raisins or chopped dried apricots. The slivered almonds can be replaced with chopped pecans, walnuts, or pistachios (for red-and-green Christmas cookies). To tone down the almond flavor, you can swap out the almond extract for vanilla extract. However you choose to make these delightfully easy cookies, we know you'll love them.

CRANBERRY RICE KRISPIES BARS
A great children's lunch box treat! There is no added white sugar into this recipe so it is a less-sweeter bar. I used Ocean Spray Craisins for this! These bars are really good!

CRANBERRY RICE KRISPIES SQUARES
I love Craisins, so adding them to the traditional Rice Krispies square seemed like a perfect combination! These are a great snack. I am sure any dried fruit would be a wonderful addition.

- Prepare a 9X13 pan by spreading softened butter all over the bottom and sides of the pan. I like to do this by placing a sandwich bag over my hand like a glove and then using my fingers to spread the butter all around. You can use cooking spray also, but you'll be able to taste it since you don't bake the rice krispie treats and I prefer the taste of butter!
- In a large stockpot, melt the butter over medium-low heat. Add 1 1/2 bags of marshmallows and stir over low heat just until barely melted and smooth.
- Remove from heat and add the cereal and cranberries. Mix to combine and then add the remaining marshmallows and white chocolate chips. Pour the mixture into the prepared pan and press with your hand until evenly distributed in the pan. (You can use that same sandwich bag that is coated with a little bit of butter to do this if the mixture is sticking to your fingers!)

- Sprinkle about 1/4 cup each of the cranberries and almonds in the bottom of the pan. Stir the rest into the agave along with all the remaining ingredients. Toss until everything's well coated.
- Press the mixture into the pan (press hard!), cover with waxed paper and freeze for at least an hour before slicing. And of course, bring them to room temperature before noshing. Store covered in the fridge or freezer.

- Preheat the oven to 350°. Spread the slivered almonds in a pie plate and toast for about 8 minutes, until fragrant. Let cool.
- In a medium bowl, whisk all three flours with the baking soda and salt. Add the white chocolate, cranberries and the cooled almonds and toss well.
- In a stand mixer fitted with the paddle, beat the butter with both sugars at medium speed until light and fluffy, about 3 minutes. Scrape down the side of the bowl. Beat in the whole eggs, egg yolks and vanilla until incorporated, about 2 minutes. At low speed, beat in the dry ingredients. Cover the mixing bowl with plastic wrap and refrigerate the dough until it is well chilled, at least 1 hour or overnight.
- Preheat the oven to 350° and line 2 baking sheets with parchment paper. Bake the cookies in two batches: Scoop 1/4-cup balls of the dough onto the baking sheets, spacing them 2 inches apart; lightly press them down with your palm. Bake in the upper and lower thirds of the oven for about 17 minutes, until the cookies are golden around the edges but slightly soft in the center; shift the baking sheets from top to bottom and front to back halfway through. Let the cookies cool slightly, then transfer them to a rack to cool completely. Repeat with the remaining dough.

- Cranberry dip. Dip is one food that typically doesn't require any cooking whatsoever. This cranberry-walnut one is dairy-free and great to enjoy either as an app with crackers or right along with the turkey at mealtime.
- Black-eyed pea hummus. Black-eyed pea hummus is another dip that will be right at home next to the sweet potatoes, dinner rolls, and green beans. It also takes all of five minutes to make.
- Tahini green beans. Slathering your green beans with cream of mushroom soup and crunchy French onions isn't the only way to serve them up. Instead of baking in the oven, this green beans dish is made on the stove.
- Deviled eggs. Deviled eggs are another Thanksgiving classic that cooks on the stove instead of the oven. In this recipe, mayonnaise is subbed out for Greek yogurt.
- Instant Pot sweet potato casserole. Thanksgiving is an all-hands-on-deck situation. That means you're going to be utilizing all your kitchen tools, including your Instant Pot.
- Cranberry sauce. Okay, so putting a can-shaped mold of cranberry sauce on a plate doesn't technically require any cooking either, but you can step your cran sauce game up a little using just your blender or food processor.
- Cauliflower mashed potatoes. If you're looking for a cauliflower mashed potato recipe that will win over even your most traditional extended family members, this is it.
- Sauteed Brussels sprouts. Most people roast Brussels sprouts in the oven, but guess what, they taste absolutely delicious sauteed. This recipe takes all of 20 minutes to follow and the only other ingredients besides the veg are common cooking staples.
- Instant Pot vegan mac-and-cheese. Hopefully you didn't stash your Instant Pot away yet because this is another perfect time to use it. The recipe calls for all vegan ingredients so a wider range of eaters can dig in.
- No-bake pumpkin pie. You can even make pumpkin pie, the quintessential Thanksgiving Day dessert, without disrupting your turkey in the oven. Every part of the pie in this recipe is homemade, including the crust and the coconut whipped cream.
