I've been giving these as Christmas gifts to my husband's co-workers. They love them and request it. I usually include a note to let them know to refrigerate them because of the cream cheese- I don't know if that is necessary, but I'd rather be safe than sorry!

Number Of Ingredients 5

2 (17 1/2 ounce) boxes fat-free orange cranberry muffin mix
2 cups water
8 ounces cream cheese (I use reduced fat)
2 egg whites
1/2 cup sugar

Steps:

  • Prepare muffin mix according to package stirring in water and included cranberries.
  • Fill mini-loaf pans with batter 1/2 full- I can get 5 loaves. Set aside.
  • Using an electric mixer, mix together cream cheese and sugar on low speed until smooth.
  • Add egg white and continue to mix on low speed until blended.
  • Spoon cream cheese mixture randomly onto loaf pans. Swirl with a knife for marbled effect.
  • Bake 20-25 minutes at 400°F or until toothpick inserted into center comes out clean.

1/4 cup butter, softened
1 cup sugar
1 egg
3/4 cup orange juice
2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon grated orange rind
1 1/2 cups cranberries
1/2 cup chopped pecans or 1/2 cup walnuts

Steps:

  • First bowl: Combine butter, sugar and egg. Beat until smooth. Stir in juice.
  • Second bowl: Measure dry ingredients. Stir in orange rind, cranberries and nuts. Add to batter stirring just until moistened. Put into a greased 9x5x3 inch loaf pan. Bake at 350 degrees for 1 hour.

1 orange
2 cups all-purpose flour
1 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped cranberries (fresh or frozen)
1 egg, beaten
1/4 cup butter, melted

Steps:

  • Grate rind from orange, squeeze juice into liquid measure, add enough water to make 3/4 cup.
  • Set aside.
  • In large bowl, whisk flour, sugar, baking powder, baking soda, salt and orange rind; stir in cranberries.
  • In small bowl, whisk together egg, butter and orange juice; stir into flour mixture just until blended.
  • Spread in greased 9x5 Loaf pan.
  • Bake in centre of 350F oven for 50 to 60 minutes or until cake tester inserted in centre comes out clean.
  • Let cool in pan for 10 minutes, turn out onto rack and let cool completely.
  • (Make-ahead, store at room temperature for up to 2 days or over-wrap with heavy-duty foil and freeze for up to 2 weeks.).

2 cups raw cranberries, coarsely chopped
1/2 cup sugar
3 1/2 cups all-purpose flour
1 1/2 cups sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 eggs
1 1/3 cups orange juice
1/4 cup oil (crisco or veggie)
1 tablespoon grated orange rind
2 cups miniature semisweet chocolate chips
1 cup chopped nuts (optional)

Steps:

  • Combine cranberries and sugar.
  • Set aside.
  • Combine flour, sugar, baking powder, baking soda and salt in mixing bowl.
  • Stir well to blend.
  • Beat eggs, orange juice, oil and orange rind together.
  • Add dry ingredients, stirring just until moistened.
  • Fold in cranberry mixture, chocolate chips and nuts.
  • Divide batter into 8 well greased 10 oz cans.
  • Bake at 350 degrees for 35 to 40 minutes, or until cake tester inserted in centre comes out clean Cool 10 minutes, then run thin bladed knife around sides of tin to loosen.
  • turn out on to rack to cool completely.
  • Wrap and store overnight before slicing or freeze for later use.
  • When ready to give as gifts, decorate can with tinfoil and christmas stickers, return cake to can, seal ends of can with tinfoil, tie with ribbons OR wrap cake in colourful saran wrap, decorate with ribbons and bows.

Many years ago I made a cranberry-orange bread from a magazine clipping. It got lost and I've never found a suitable replacement, but this year, with the help and encouragement of Zaar members, I created my own version -- and I love it! I used the mini loaf pans to make this, so I could have 4. If you use bigger loaf pans, you will need to bake the loaves longer.

2 cups all-purpose flour
1 cup white sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups fresh cranberries (if using frozen, no need to thaw)
2 eggs
3/4 cup 1% low-fat milk
3 tablespoons canola oil
1/4 teaspoon orange extract
1 tablespoon freshly grated orange zest
1 (10 ounce) can mandarin oranges in juice, 1/4 cup juice reserved

Steps:

  • Preheat oven to 350F; spray 4 mini loaf pans with Pam and set aside (you could also do this in two 8x4 loaf pans, if you can't find the smaller pans, but the baking time will likely be longer).
  • In a large bowl, combine dry ingredients (flour, sugar, baking powder and salt); add cranberries to flour mixture and stir so berries are somewhat coated in flour-- this helps prevent the cranberries from sinking to the bottom of the loaves when baking.
  • Set aside.
  • In a separate bowl, beat eggs and milk (I used lowfat milk) with a mixer on low, then beat in 1/4 cup juice reserved from tinned oranges, the oil, the extract and the orange zest.
  • Stir wet mixture into dry mixture, stirring just until dry ingredients are moistened; do not overmix.
  • Make sure tinned oranges are well drained, then stir into batter.
  • Divide batter between 4 mini loaf pans (you'll find they'll be about 3/4 full).
  • Bake in preheated oven for 35 to 40 minutes; a tester will come out clean.
  • Cool on rack in tins for about 15 minutes, then remove from tins and let sit on rack until completely cool.

3/4 cup water
3/4 cup unbleached flour
1/2 cup refrigerated orange juice
1 cup fresh cranberries, whole

1 cup white chocolate chips
3 whole eggs

Steps:

  • Preheat oven to 350. Prepare two 8"x4" loaf pans with cooking spray; set aside.
  • In a mixing bowl, combine cake mix, flour, cranberries, and orange peel.
  • Add eggs, water, orange juice, and oil.
  • Mix well. Fold in chocolate chips.
  • Spread batter evenly between prepared pans. Bake for one hour, or until toothpick inserted in center comes out clean.
