Delicious, festive beef cocktail meatballs made with a can of cranberry sauce!

2 eggs, lightly beaten
1 cup fresh bread crumbs
1/3 cup ketchup
2 tablespoons dried minced onion
2 tablespoons soy sauce
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds extra-lean ground beef
1 can jellied cranberry sauce (14 ounces)
1 cup ketchup
3 tablespoons brown sugar
1 tablespoon lemon juice (freshly squeezed)

Steps:

  • Preheat oven to 350°.
  • Preheat oven to 350 degrees. Mix together all the meatball ingredients except for the beef, then add beef and mix gently until well combined. I use my hands.
  • Using a medium cookie disher, scoop out 1 tablespoon-sized meatballs. Roll into rounds and place on an oven-safe rack over a baking sheet.
  • Shape into 1-in. meatballs. Place on a greased rack in a 15x10x1-in. pan. Bake for about 30 minutes or until cooked through.
  • In a large saucepan, add the sauce ingredients and whisk to combine. Cook, stirring occasionally until mixture starts to simmer and is heated through. Add meatballs and gently cook to warm meatballs.
  • Serve hot. May place in a chafing dish or slow cooker to keep warm.

2 lbs ground round
1 cup corn flake crumbs
1/3 cup dried parsley flakes
2 eggs
2 tablespoons soy sauce
1/4 teaspoon ground pepper
1/2 teaspoon garlic powder
1/3 cup ketchup
2 tablespoons minced dried onion
1 (1 lb) can jellied cranberry sauce
1 (12 ounce) bottle chili sauce, i use heinz
2 tablespoons dark brown sugar
1 tablespoon lemon juice

Steps:

  • Combine meat ball ingredients blend well.
  • Form meatballs the size of walnuts.
  • Arrange in a single layer in baking dish.
  • Set aside Combine sauce ingredients in a saucepan.
  • Cook over medium heat until smooth, stir frequently.
  • Pour over meatballs.
  • Bake uncovered for 30 minutes.
  • Serve in a chafing dish, provide toothpicks.
  • CROCK POT VERSION: Cook meatballs in 350F oven for 15-20 minutes with out the sauce.
  • Drain.
  • Place in crock pot, pour on the sauce.
  • Cook on low for 6-8 hours.
  • I serve the meatballs and sauce over cooked egg noodles.

2 lbs lean ground beef
2 tablespoons soy sauce
2 tablespoons minced onions
2 eggs
2 tablespoons dried parsley flakes
2 garlic cloves, minced
1 cup breadcrumbs
2 teaspoons salt
1/4 teaspoon pepper
1 cup milk
1 lb jellied cranberry sauce
1/3 cup ketchup
2 tablespoons brown sugar
12 ounces chili sauce
1 tablespoon vinegar

Steps:

  • In a large bowl combine all the meatball ingredients. Divide the meat into 4 sections and make 15 meatballs from each section.
  • Place in a large, greased casserole dish.
  • Combine all the sauce ingredients and pour over the meatballs.
  • Bake at 350 degrees for 1 hour.

1 can (14 ounces) sauerkraut, rinsed and well drained
1 can (14 ounces) whole-berry cranberry sauce
1 bottle (12 ounces) chili sauce
1-1/4 cups water
1 cup packed brown sugar

Steps:

  • Preheat oven to 350°. In a large bowl, mix bread crumbs and soup mix. Add beef and beaten eggs; mix lightly but thoroughly. Shape into 1-in. balls. Arrange in a greased 13x9-in. baking dish., In a large saucepan, combine sauce ingredients; bring just to a boil over medium heat, stirring to dissolve sugar. Pour over uncooked meatballs., Bake, covered, 1 hour. Uncover; bake 20-30 minutes longer or until meatballs are cooked through and sauce is thickened.

1 egg
1/2 cup seasoned dry bread crumb
1/2 cup dried cranberries or 1/2 cup golden raisin, snipped
1/4 cup finely chopped onion
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon ground cloves or 1/2 teaspoon allspice
2 lbs uncooked ground turkey
1 (16 ounce) can jellied cranberry sauce
1 cup bottled barbecue sauce

Steps:

  • Lightly coat a 15x10x1-inch baking pan with nonstick cooking spray; set aside. For meatballs, in a very large bowl, beat egg with a fork. Stir in bread crumbs, dried cranberries or raisins, onion, salt, garlic powder, and cloves or allspice. Add ground chicken or turkey; mix well. Shape into 60 meatballs.
  • Place meatballs in prepared pan. Bake in a 350 degree F oven for 15 to 18 minutes or until done (165 degrees F).*.
  • Meanwhile, in a 3-1/2- to 4-quart slow cooker, stir together cranberry sauce and barbecue sauce.

2 (2 lb) bags cocktail meatballs, 1-inch in size
1 (16 ounce) can ocean spray jellied cranberry sauce
1 (12 ounce) bottle chili sauce
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper

  • Combine cranberry sauce, chili sauce, cumin and cayenne pepper in a large saucepan.

1/3 cup dry breadcrumbs
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder

1/2 teaspoon thyme
1 (16 ounce) can cranberry sauce
1 (12 ounce) jar chili sauce
1/4 cup orange marmalade
1/4 cup water
2 tablespoons soy sauce
2 tablespoons red wine vinegar
1 teaspoon dried red pepper flakes

Steps:

  • Combine first 8 ingredients in a large bowl. Shape mixture into about 54 (1-inch) balls.
  • Cook meatballs, in batches, in a large skillet over medium-high heat until browned (about 5 minutes); remove meatballs from pan, and drain well on paper towels.
  • Stir together cranberry and chili sauces and next 5 ingredients in a large Dutch oven over medium heat, and cook, whisking occasionally, 5 minutes or until smooth. Add meatballs; reduce heat to low, and cook, stirring occasionally, 15 to 20 minutes or until centers are no longer pink.

½ cup milk
1 small onion, minced
1 teaspoon salt
1 cup crushed French-fried onions (such as French's®)
1 (14 ounce) can jellied cranberry sauce (such as Ocean Spray®)
1 (12 ounce) bottle chili sauce (such as Heinz®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Beat eggs in a mixing bowl. Add beef, milk, onion, and salt; mix well. Sprinkle in crumbled fried onions and mix until evenly combined.
  • Form the mixture into 40 meatballs and place into a 9x13-inch and 9x9-inch baking dish; set aside.
  • Blend cranberry sauce and chili sauce together in a bowl with an electric hand mixer.
